Strawberry Torte image

Light and fluffy, easy and elegant. This recipe is from my Mom!

11 ounces cream cheese, softened
¾ cup white sugar
2 teaspoons vanilla extract
1 pint heavy whipping cream
2 (12 ounce) packages ladyfinger cookies
1 (16 ounce) package frozen strawberries
1 tablespoon cornstarch

Steps:

  • Strain strawberries and set aside, reserving juices. In a saucepan bring cornstarch and strawberry juice to a gentle boil. Remove from heat and let cool.
  • Whip cream cheese, sugar, and vanilla together.
  • In a separate bowl beat whipping cream until stiff peaks form. Fold whipped cream into cream cheese mixture.
  • Arrange ladyfingers around sides and bottom of the 8 or 9 inch springform pan, standing ladyfingers lengthwise around sides of pan. Pour 1/2 of the filling into the pan, then place a layer of ladyfingers on top of filling. Pour remaining filling over ladyfingers.
  • Spread strawberry sauce over top of cake and place the whole strawberries on top. Refrigerate and remove from pan once thoroughly chilled.

This recipe for an authentic Austrian Linzertorte is from my mother who grew up in Linz and still lives there. She always bakes the torte 3 days ahead because it develops its real flavor over a few days.

2 cups all-purpose flour
2 cups finely ground almonds
1 ¼ cups white sugar
1 teaspoon baking powder
½ teaspoon ground cinnamon
⅛ teaspoon ground cloves
1 ⅛ cups unsalted butter
4 egg yolks, divided
6 tablespoons red currant jam

Steps:

  • Place flour, ground almonds, sugar, baking powder, cinnamon, and cloves on a clean work surface. Add butter and 2 egg yolks; knead quickly to form a smooth dough. Wrap dough in plastic wrap and refrigerate for 1 hour.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 10-inch springform pan with remaining 1 tablespoon butter.
  • Press 2/3 of the dough evenly in the pan so that the entire bottom is covered. Spread red currant jam on top. Divide remaining dough into several pieces and roll into 1/3-inch strands between your fingertips. Arrange the strips over the jam in a neat lattice pattern. Place the last strip along the sides of the pan to form a rim.
  • Beat remaining 2 egg yolks and brush over the lattice and rim, taking care not to splash onto the jam.
  • Bake in the preheated oven until golden brown, about 45 minutes. Watch carefully towards the end of the baking time to make sure the torte does not turn too dark. Let cool and remove gently from the pan. Store for at least 3 days in a cool place before serving.

1 (3 ounce) package cream cheese, softened
3/4 cup sugar
2 teaspoons vanilla
1 pint all-purpose whipping cream
2 (7 ounce) packages ladyfingers
16 ounces frozen strawberries
1 tablespoon cornstarch

Steps:

  • Whip cream cheese, sugar, and vanilla together.
  • In seperate bowl, whip all-purpose cream until stiff peaks form.
  • Fold whipped cream into cream cheese mixture.
  • Arrange Lady Fingers around sides and bottom of springform pan, standing Lady Fingers lengthwise around sides of pan.
  • Pour 1/2 of filling into pan, then a layer of Lady Fingers.
  • Top with remaining filling.
  • Topping:.
  • Strain berries and set aside, reserving juice.
  • In saucepan, bring cornstarch and juice to a gentl boil; spread sauce on top of cake.
  • Spread strawberries on top.
  • Refrigerate and serve when throughly chilled, removing springform pan.

This elegant looking fruit torte is one of the recipes that a family member brought back after a stay in Germany, where strawberry season sees these cakes in all the bakeries and cafes. Thanks to her grandmother we enjoy this marvellous dessert that never fails to please. In the off season I drain canned peaches and arrange the slices making for a impressive looking dessert when fresh strawberries are not available. The original recipe calls for a package of Oetker glaze which I am not finding this past while - any of the clear fruit glaze mixes will work.

3/4 cup sugar
2 eggs
1/3 cup butter
1/2 teaspoon vanilla
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/4 cups flour
2/3 cup milk
1/2 cup icing (approximately I/2 cup white icing, enough to lightly cover base)
1 1/2 lbs strawberries (enough to generously cover cake)
glaze (clear glaze, mix as directed on package)

Steps:

  • Preheat oven to 350, grease flan pan, flour to keep from sticking - I use cooking spray to grease pan.
  • Beat sugar and eggs until fluffy, add butter, salt, baking powder, and vanilla - mix well.
  • Alternately add flour and milk.
  • Spread into a flan pan, bake for 35 - 40 minutes or until edges begin to pull away from the sides of the pan and centre is firm to the touch.
  • Carefully remove from pan, cool on cake rack,when cool place cake on your special serving platter, ice bottom lightly using just enough to seal the cake, give it a few minutes to dry before adding the fruit.
  • Arrange strawberries ( I cut the strawberries in half arranging concentrically starting at the edge - for variation make a 'strawberry flower' in the centre using about five strawberry halves then arrange the rest of the berries around to the edge) you may go with halving, slicing or whole berries when arranging your fruit - whatever works best for you .
  • Prepare glaze according to directions cooling slightly and pour over.

Steps:

  • In a large bowl, beat egg yolks and sugar until light lemon-colored. Stir in the chopped hazelnuts, bread crumbs and orange juice. , In another bowl, beat egg whites and salt until stiff peaks form; fold into hazelnut mixture. , Spoon into a greased 9-in. springform pan. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. 1 cup boiling water
2 quarts fresh strawberries, sliced
1/2 pint heavy whipping cream, whipped
1 sponge cake, cut into cubes
Additional whipped cream
Whole strawberries for garnish

Steps:

  • In a bowl, dissolve gelatin in water. Add berries; allow to thicken partially. Fold in whipped cream. Fold in cake cubes; stir until well coated. Spread into a greased springform pan; cover and chill overnight. Remove from pan and place on a torte plate. Frost with whipped cream and garnish with berries.

1/2 cup butter
1/2 cup sugar
4 egg yolks
1 cup flour, all-purpose
1/3 cup milk
1/8 teaspoon salt
2 teaspoons baking powder
1 teaspoon vanilla
4 egg whites
1 cup sugar
walnuts
2 cups whipping cream, sweeten to taste
1 quart strawberry, cleaned and hulled

Steps:

  • Preheat the oven to 325°F.
  • *Prepare an 8" or 9" cake pan lining it with parchment paper (or grease the pan).
  • Cream the butter and the 1/2 cup of sugar.
  • Add the egg yolks and vanilla, mixing well.
  • In a seperate bowl, mix together the flour, salt and baking powder.
  • Blend the dry ingredients and milk alternately into the butter mixture.
  • Pour the batter into the prepared pan and set aside.
  • With clean beaters, whip the egg whites, adding the 1 cup of sugar a little at a time, until stiff peaks form.
  • Spoon the egg whites over the top of the unbaked batter and sprinkle with walnuts (whole or pieces).
  • Bake at 325F about 40 minutes or until cake tests done (cooking time will depend on your oven and pan size).
  • *Using the parchment paper will allow you to easily lift the torte from the pan to test for doneness by piercing through the bottom of the cake with a toothpick.
  • Cool the torte completely.
  • Whip the cream and sweeten to taste.
  • *You can substitute the cream with Cool Whip (or other) to lessen the calories and fat.
  • Top off the torte with the whipped cream just before serving, adding whole (or cut) strawberries as your final layer.
  • This torte should be made and enjoyed on the same day as the cream will soften the crispy meringue layer - still good but not the same!

A traditional Austrian torte. The original Sacher-Torte has been famous since 1832 and the original recipe a well-kept secret. I have not yet tried this recipe made with gluten free flour. Best made with good quality dark chocolate

100 g dark chocolate, chopped coarsely
1 cup water
125 g butter, chopped
250 g brown sugar
3 eggs
25 g cocoa powder
1 cup self-raising flour, sifted (150g)
1/2 cup almond meal (60g)
1/3 cup apricot jam (110 g)
200 g dark chocolate, chopped coarsely
2/3 cup cream (single cream)

Steps:

  • Preheat oven to moderately 160°C (325F.).
  • Grease a deep 23 cm round cake pan. Line the base with a good baking paper.
  • Combine the chocolate and water in a small saucepan. stir over a low heat until the chocolate is melted. Cool. (you can use the microwave for this step. Be very careful not to overcook the chocolate).
  • Using an electric mixer, beat the butter and sugar until well combined. Beat in the eggs, one at a time, beating well between addition.
  • Stir in sifted flour, almond meal and cocoa.
  • Stir in the chocolate mixture.
  • Pour the mixture into the prepared pan and bake for about 70 minutes.
  • When cooked allow the cake to stand in the tin for 5 minutes before turning out onto a wire rack to cool.
  • When the cake has cooled, split the cake in half. Sandwich together with the apricot jam.
  • Return the cake to the wire rack and cover the entire cake wiith a thin layer of ganache. Work the ganache over the cake quickly before it has time to set.
  • To make the ganache: heat the chocolate and cream in a double saucepan or in a heatproof bowl over a saucepan of simmering water. Stir until the chocolate has melted. Strain the ganache before spreading over the cake.
  • Decorate: the torte is traditionally decorated by writing, in chocolate, the word "Sacher" a top of the cake.

  • In large mixing bowl cream together 1 1/4 cups of the sugar and the butter till very light and fluffy.
  • Add egg yolks, one at a time, beating well after each; continue beating till very fluffy, about 5 minutes.
  • Sift together flour, baking powder, and 1/2 teaspoon salt; stir into creamed mixture.
  • Beat egg whites till soft peaks form; gradually add remaining 1/2 cup sugar, beating to stiff peaks.
  • Fold into creamed mixture.
  • Pour into 3 lightly greased and floured 9 x 1 1/2-inch round baking pans.
  • Bake at 350 till done, about 20 minutes.
  • Cool 10 minutes; remove from pans.
  • Cool on rack.
  • Whip cream and vanilla just to soft peaks.
  • Place a cake layer on serving plate.
  • Spread with currant jelly and then with 1 cup of the whipped cream.
  • Sprinkle with 2 tablespoons pecans.
  • Spread second layer with 1/3 cup of the strawberry preserves, then with 1 cup of the whipped cream; sprinkle with 2 tablespoons pecans.
  • Gently place atop first layer.
  • Carefully top with third layer.
  • Frost top and sides with remaining whipped cream; coat sides with remaining pecans.
  • Using tip of a small spoon, dot top with remaining strawberry preserves.

Spread the batter in the prepared pan and bake for about 20 minutes, until cake is golden brown and firm to the touch. Cool in the pan on a wire rack.
  • Beat whipping cream into stiff peaks and set aside. In a large mixing bowl, beat topfen, lemon zest and juice, sugar and vanilla sugar until smooth. In a small saucepan, stir together agar-agar gelling powder and cold water and bring to a boil. Add 4-5 tablespoons of the topfen mixture and bring to a boil again. Remove from heat and allow the mixture to cool for 5 minutes. (In the meantime, get everything ready to assemble your cake because the filling will set quickly.) Whisk the agar-agar mixture into the remaining Topfen mixture. Fold in the whipped cream.
  • Remove the cake from the pan and peel off parchment paper. Split the cake it half horizontally. Place the bottom cake layer on a cake platter and tighten the cake ring around it snugly. Spread the Topfen filling on the cake. Lay the top half of the cake over the topfen filling and press it down gently. Cover torte with plastic wrap and chill for at least four hours or overnight.
  • Wash strawberries and pat dry. Spread cake thinly with jam. Trim the strawberries and halve or quarter them, depending on their size, and arrange on top of the cake, cut side down. Prepare glaze according to package directions and spoon over the strawberries. Allow to set before cutting cake into slices.
