HOMEMADE GREEK PORK GYROS SOUVLAKI RECIPE

Homemade Greek Pork Gyros Souvlaki recipe image

Make your own traditional Greek pork souvlaki with gyros with this easy to follow recipe and discover what makes this souvlaki the most popular Greek street food!

Provided by Eli K. Giannopoulos

Categories     Main

Time 20m

Number Of Ingredients 20

1 pork tenderloin, cut into strips
1 clove of garlic, chopped
1/2 red onion, sliced
3-4 tbsps of olive oil
1-2 tbsps red wine vinegar
1 tbsp dried oregano
1 tbsp dried thyme
1 tbsp dried rosemary
1/2 tbsp of honey
1 cucumber
2 cloves of garlic
1/4 of a cup extra virgin olive oil
500g of yogurt (18 ounces)
1-2 tbsps of red wine vinegar
salt and freshly ground pepper to taste
4 pita breads
1 red onion, sliced
1 tomato, sliced
fried potatoes (optional)
some lettuce

Steps:

  • To prepare this souvlaki recipe start by preparing the pork gyros. Mix into a large bowl the tenderloin (cut into strips), the garlic, the red onion, 3-4 tbsp of olive oil, 1-2 tbsp of red wine vinegar, some thyme, some rosemary, and mix with your hands. Squeeze the ingredients together, so that all the flavours blend and add 1/2 tbsp of honey. Wrap the bowl and put it into the fridge. Leave the marinade in the fridge for at least 2 hours, before using it (ideally leave it over night).
  • In a (very hot) large non-sticking pan, add the tenderloin along with the ingredients of the marinade, and sauté for 1 minute on each side, without stirring, until the meat is nicely coloured, crispy and tender inside.
  • To prepare the tzatziki sauce for the pork gyros, pour in a food processor the olive oil and garlic and blend until the garlic is diluted (don't leave any large pieces of garlic). Into a large bowl, grate the cucumber, season with salt and pepper and leave it aside for 10 minutes. Wrap the grated cucumber into a towel and squeeze, in order to get rid of most of the water. Into a bowl, add the cucumber, the blended garlic and oil, the yogurt, 1-2 of red wine vinegar, salt and pepper and mix. (This recipe is for 5-6 servings. Store in the fridge and always serve cold.)
  • Use a cooking brush to oil the pita breads on both sides and season with salt, pepper and oregano. Place a large pan (upside down) at the bottom of the oven, place the pita breads on top, and bake in preheated oven at 250C for about 1 minute.
  • Pork gyros is usually served wrapped, like a sandwich. To serve, spread some tzatziki sauce on the pita breads and top with the pork gyros, some slices of red onion, some sliced tomato and wrap.
  • For an easier version, you can substitute the tzatziki sauce with some fresh yogurt or some mustard and mayonnaise sauce.

olive oil
dried oregano
10 wooden skewers
2 tablespoons Greek yogurt

1 large garlic clove

AUTHENTIC GREEK SOUVLAKI

Authentic Greek souvlaki image

Souvlaki gyro with tender pork, Greek pita bread, tzatziki sauce and lots of aromatics.

Provided by by Jenny | The Greek Foodie

Categories     Main Course

Time 2h

Number Of Ingredients 17

1 lbs butterflied boneless porkloin chops (sliced in 1/2 inch strips)
½ onion (thinly sliced)
2-3 Fresh herb sprigs (like rosemary, thyme or oregano.)
2 garlic cloves
1/2 cup of olive oil
1 tablespoon honey
2/3 cup white wine vinegar
sea salt
freshly ground pepper
2 ripe tomatoes
1/2 cup Greek feta cheese (cut in small cubes or crumbled)
1/2 onion (sliced thinly)
2 tablespoons extra virgin olive oil
1 teaspoon white wine vinegar
dried oregano
sea salt
½ cup tzatziki sauce

Steps:

  • In a bowl mix fresh herbs, onion slices, olive oil, vinegar, honey, and a pinch or two of salt and pepper. Place meat in a large pan and add the marinade. I like to massage the meat a little with the marinade mixture. Cover with aluminum foil and let it marinate from 3-4 hours to overnight in the fridge.
  • Take it out of the refrigerator 1/2 hour ahead of cooking so it can get to room temperature.
  • Cut the tomatoes into thin slices, add them to a medium bowl. Add the sliced onion, and the crumbled feta cheese. Season with sea salt to taste. Sprinkle some dried oregano. Drizzle olive oil and a tsp or so of red wine vinegar.
  • Mix well but gently and let it sit for at least half an hour ahead of the souvlaki assembly.
  • Add 2-3 tbs of olive oil to a cast-iron grilling pan or the pan of your choice. Let it heat up almost to the point of smoke. add the meat 2-3 slices at a time. You don't want to add more because the temperature will go down and the meat will boil instead of the grill.
  • Cook meat for 2-3 minutes for each side. I always do a test drive; cooking time changes depending on how thin my meat slices are.
  • On the same pan, you cooked your meat, clean it lightly with a paper towel, drizzle a little olive oil and grill the pitas to warm them up. This will allow them to get some of that charred, smoked flavor.
  • Take a pita bread, add two-three slices of meat, 2-3 full tablespoons of tomato & onion filling, and 2 tbs of tzatziki. Wrap it up in parchment paper just like they do in Greece and enjoy!

  • To prepare this chicken souvlaki recipe, start by preparing the marinade. Cut the chicken breasts into 2-3 cm pieces and place them in a large bowl, along with all the marinade ingredients. Use your hands to mix really well, cover with plastic wrap and put in the fridge for 30-60 minutes.
  • In the meantime prepare the tzatziki sauce for the chicken souvlaki. Pour in a blender the olive oil and grated garlic and blend until combined. Remove the skin and the seeds of the cucumber and grate it into a large bowl. Season with salt and pepper and leave aside for 10 minutes. Wrap the grated cucumber in a towel and squeeze, in order to get rid of the excess water. In a bowl, add the cucumber, the blended garlic and oil, the yogurt, 1-2 tbsps of red wine vinegar, a pinch of salt and blend, until the ingredients are combined. Store the tzatziki sauce in the fridge and always serve cold.
  • To assemble the chicken souvlaki (skewers), cut the wooden skewers to fit your griddle pan and soak them in water. (This will prevent them from burning.) Thread the chicken pieces, comfortably, on the skewers.
  • Preheat a grill or griddle pan on a high heat. Cook the chicken souvlaki (skewers) for about 8 to 10 minutes, turning occasionally, until nicely coloured on all sides and cooked through.

GREEK PORK SOUVLAKI - AN OLD TRADITIONAL RECIPE | AMBERQ

From amberq.gr
  • Before lighting the charcoals on your grill, skewer the meat in the wooden sticks. Start and finish skewering with a piece that has fat on the outer side, making sure to allocate the fat evenly throughout your souvlaki.
  • Pile up the charcoals inside your grill’s charcoal box. Put the kindling on top in various spots and light it. The charcoals will be ready to use in 25-30 minutes, depending on the type of charcoals. Spread the fully lit charcoals inside the charcoal box and grill the souvlaki on a cold stainless steel grilling grate. Place each souvlaki right next to each other on the grilling grate by leaving no gaps in-between them. This is the proper way to grill souvlaki so it remains juicy. Turn the souvlaki for the first time by flipping them on the opposite side (180°). Then turn them on their side (90°) and again on the opposite side (180°). Continue turning them this way until you have turned to each side twice. Remove when they’ve gained a nice color. Season lightly with smoked paprika on each side on the first turning.
  • After removing the souvlaki from the grill, we recommend two serving ways. On top of slices of bread with lemon or sandwiched in grilled pita bread with tzatziki sauce, onion, parsley, and tomato. Enjoy this Greek traditional souvlaki recipe with your company!Happy Grilling, everyone!
