AUTUMN SALAD WITH AGED SHERRY VINAIGRETTE

Autumn Salad with Aged Sherry Vinaigrette image

Ingredients

1/3 ounce olive oil
1 ounce Spanish Sherry Vinegar
1 shallot, minced
1 bunch chives, minced
Pinch sugar
Salt and pepper
4 to 5 ounce of mesclun greens
2 ounces mashed walnut pieces
4 ounces crumbles Stilton Cheese (or bleu cheese)
1 Bartlett Pear, halved then sliced thins

Steps:

Combine the olive oil. sherry vinegar, shallot, chives, sugar and salt and pepper in a small bowl and whisk together. Let stand for a few minutes to combine flavors. In a large bowl, toss greens, walnuts, Stilton cheese, and pear together. Pack the dressing and greens in separate containers. Before serving, drizzle just enough dressing to cover greens before serving.

2 bananas, sliced
1 medium apple, cut into chunks
2 tablespoons orange juice
1 can (11 ounces) mandarin oranges, drained
1/2 cup raisins
1/4 cup chopped walnuts
4 tablespoons frozen whipped topping
2 tablespoons mayonnaise

Steps:

Toss banana and apple pieces with orange juice to prevent discoloration. Drain any excess juice. Toss with all remaining ingredients. Chill.

I got this recipe off the Pampered Chef site. I think it's a great way to enjoy fruit in the cooler months. I skip the nuts if I'm going to serve it to my toddler, but she goes crazy for this salad.

1 1/2 cups miniature marshmallows
1 (8 ounce) container low-fat vanilla yogurt
2 tablespoons chopped nuts
1 lime, zest of

Steps:

Core and wedge apples.
Combine apples, grapes, and mandarin oranges in medium bowl.
Add marshmallows, yogurt and lime zest; mix gently.
Sprinkle nuts over top.
Cover; refrigerate until ready to serve.
