Autumn Salad with Orange Vinaigrette image

A light orange dressing nicely accents sweet dried cranberries and crunchy almonds. It you prefer, you can use your favorite salad greens in place of the ready-to-serve package.

3 tablespoons olive oil
1 tablespoon sugar
1 tablespoon red wine vinegar
2 teaspoons orange juice concentrate
1/8 teaspoon salt
Pinch coarsely ground pepper
4 cups ready-to-serve salad greens
1/2 cup sliced almonds, toasted
1/4 cup dried cranberries
1/4 cup thinly sliced red onion

Steps:

  • In a jar with a tight-fitting lid, combine the first six ingredients; shake well. In a large bowl, combine the salad greens, almonds, cranberries and onion. Add vinaigrette; toss to coat.

I'm posting this recipe as written in Cooking light, Oct. 2007. However, when I made it I wasn't in the mood for so much fruit, or even the tart/sweet fruit. So I used 4 bosc pears. We loved this salad.

2 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
1/2 teaspoon sugar
1/2 teaspoon minced garlic
1/4 teaspoon paprika
1/4 teaspoon dry mustard
1/8 teaspoon salt
1 pinch dried basil
1 pinch ground red pepper
5 cups mixed salad greens
4 cups torn romaine lettuce
2 1/2 cups cubed Asian pears (about 1 large)
2 cups chopped granny smith apples (about 1 large)
1/2 cup thinly sliced red onion
1/4 cup crumbled goat cheese

Steps:

  • Combine first 9 ingredients in a bowl, stirring with a whisk.
  • Combine salad greens, romaine lettuce, Asian pear, apple, and red onion in a large bowl. Drizzle with vinaigrette, and toss well to coat. Sprinkle with crumbled goat cheese.
  • Serve immediately.

3 cups romaine lettuce, torn
2 cups mixed salad greens or 2 cups mesclun, torn
1 cup red cabbage, shredded
1 1/2 cups cucumbers, sliced (1 medium)
2 medium tomatoes, cut into thin wedges
1 cup red onion, sliced

1 cup white mushroom, trimmed and sliced
1 red bell pepper, julienned
1 cup crumbled feta cheese
1/2 cup kalamata olive, pitted and sliced

Steps:

  • For the Red Wine Vinaigrette: In a large jar with tight fitting lid, combine the oil, vinegar, lemon juice, mint, salt and pepper.
  • Cover and shake well and set aside For the salad: In a large salad bowl, toss together the romaine, lettuce mix and cabbage.
  • Add all the remaining ingredients and toss gently To serve the salad, shake the dressing, drizzle ove the salad and toss well Serve immediately.
