Fresh Avocado Burrata Salad image

Fresh avocado from Mexico is the star of this salad! Always delicious!

1 (5 ounce) package baby arugula
4 ounces prosciutto, torn into small pieces
¼ cup olive oil
1 tablespoon balsamic vinegar
1 (4 ounce) ball burrata cheese
1 large avocado - peeled, pitted, and sliced
1 small Roma tomato, diced
salt and ground black pepper to taste

Steps:

  • Toss baby arugula, prosciutto, olive oil, and balsamic vinegar together in a bowl. Transfer to a large serving plate using tongs. Place ball of burrata cheese in the center. Arrange avocado slices around plate and scatter tomato on top. Sprinkle with salt and ground black pepper.
  • Quarter burrata cheese and divide salad among four plates to serve.

drizzle basil olive oil (extra virgin, cold pressed)
1 avocado (sliced)
1/4 watermelon (sliced into triangles)
2 large heirloom tomatoes (thinkly sliced)
handful fresh basil
8 oz burrata cheese

Steps:

  • Arrange watermelon slices, heirloom tomato slices and avocado onto two plates.
  • Place one ball of burrata onto the the center of each plate.
  • Garnish with basil, basil olive oil and freshly cracked pepper and sea salt.
  • Enjoy!

¼ cup olive oil
1 tablespoon balsamic vinegar
1 (5 ounce) package baby arugula leaves
4 ounces prosciutto, torn into small pieces
1 (4 ounce) ball burrata cheese
1 large ripe avocado from Mexico, peeled, pitted and sliced
1 small Roma tomato, seeded and diced
Salt to taste
Ground black pepper to taste

Steps:

  • Whisk together the olive oil and balsamic vinegar. Mix together the baby arugula and prosciutto in a large bowl. Pour the balsamic-olive oil dressing over the greens and toss until well coated.
  • Pile mixture onto a large plate. Nestle burrata ball in the center. Arrange avocado slices over the salad and top with chopped tomatoes. Season with salt and pepper.
  • To serve, divide the burrata ball into 4 pieces and portion out the salad and burrata onto serving plates.
