GRILLED AVOCADO AND SCALLOP SALAD

1 1/2 tablespoons achiote paste*, crumbled or 1 tablespoon smoked paprika
1 orange, juiced
2 limes, juiced
1 medium garlic clove, peeled and minced
3/4 cup extra-virgin olive oil
Pinch sea salt and freshly ground black pepper
12 large sea scallops
Extra-virgin olive oil
Extra-virgin olive oil, for greasing pan
2 Hass avocados, halved, pitted and flesh cut into quarters
2 tablespoons sugar
Sea salt and freshly ground black pepper
6 cups mixed baby lettuces
1 red grapefruit, peeled and segmented

Steps:

  • Marinade: Put all the ingredients in a medium bowl and whisk until smooth. Reserve 1/4 cup of the marinade in a small bowl.
  • Scallops: Add the scallops to the bowl with the marinade. Cover and refrigerate for up to 30 minutes. Remove the scallops from the marinade and pat dry with paper towels. Discard the marinade. Coat a large heavy saute pan with extra-virgin olive oil and put over medium-high heat. Add the scallops in a single layer. Cook until golden on 1 side, about 2 minutes, depending on size. Turn and brown on the other side, another 2 minutes. Drain on paper towels and set aside to cool slightly.
  • Caramelized Avocados: Coat the bottom of a small, nonstick skillet over medium heat, with extra-virgin olive oil. Sprinkle 1 side of the avocado slices with sugar, and salt and pepper, to taste. Add them to the skillet and cook until the sugar is caramelized and golden, about 2 minutes. Turn gently and cook for another 30 seconds. Remove to a plate and set aside.
  • Salad: Put the baby lettuces in a bowl with half of the grapefruit segments. Add the reserved 1/4 cup of marinade and toss until coated.
  • To serve: Put the dressed lettuces on a serving platter. Top with the caramelized avocados, remaining grapefruit segments, and scallops. Serve additional vinaigrette on the side.

8 large bay scallops
1 tablespoon extra-virgin olive oil
1 pinch salt to taste
12 sprigs fresh cilantro
2 mangoes - peeled, seeded, and diced
1 red bell pepper - stemmed, seeded, and diced
12 dark Italian olives, pitted and sliced into rings
2 avocados - peeled, pitted, and thinly sliced
1 lemon, juiced

Steps:

  • Fill a skillet with water to about 1/2-inch depth and bring to a boil; cook scallops until tender and cooked through, 5 to 10 minutes. Drain water and allow scallops to cool to room temperature. Place scallops in a bowl and coat with olive oil and season with salt.
  • Break leaves off cilantro and chop the stalks into about 1-inch pieces. Mix leaves and stalks together in a bowl. Sprinkle 1/2 of the cilantro mixture onto a serving plate.
  • Combine mangos, red bell pepper, and olives in a bowl; spread over the cilantro on the serving platter.
  • Mix remaining cilantro with scallops and arrange on top of the mango mixture. Fan the avocado slices around the outside of the serving plate. Spoon lemon juice over avocado slices.

2 cups canola oil, plus 3 tablespoons divided
10 wonton wrappers
Salt, as needed
1/2 pound (U20) sea scallops, patted dry
Freshly cracked black pepper, as needed
1/2 mango, small diced
1/2 avocado, small diced
2 tablespoons coconut milk
1/2 teaspoon hot sauce (recommended: Sriracha)
1/2 lime, juiced

Steps:

  • In a medium pot, bring 2 cups canola oil to 350 degrees F.
  • Using a 2 1/2-inch biscuit cutter, cut out the center of each wonton wrapper. Fry the wontons in small batches until they are brown and crispy, about 2 minutes. Drain on a plate lined with a paper towel and season each with a bit of salt.
  • Heat the remaining 3 tablespoons canola oil in a large heavy-bottomed skillet over high heat. Pat the scallops dry with a paper towel and season both sides with salt and pepper, to taste. Sear the scallops in the skillet for 3 minutes per side.
  • In a medium bowl, combine the diced mango and avocado. In another smaller bowl, whisk together the coconut milk, hot sauce, and lime juice, and adjust the seasoning with salt and black pepper, to taste. Pour half of the coconut milk mixture over the mango and avocado and gently toss to coat.
  • To assemble, put 1 tablespoon of the mango and avocado mixture onto a fried wonton. Top with a seared scallop and finish with a drizzle of the coconut sauce. Repeat with the remaining ingredients and transfer to a serving platter.

4 tablespoons olive oil
1 1/2 teaspoons grated lime zest
3/4-1 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon fresh ground black pepper
1 pinch crushed red pepper flakes (or more) (optional)
32 sea scallops
4 (8 inch) flour tortillas, cut into eighths (32 wedges)
2 firm ripe avocados
1/2 cup finely chopped red onion
1/4 cup plain low-fat yogurt or 1/4 cup plain fat-free yogurt
2 cups shredded iceberg lettuce
3/4 cup newman's own tequila lime salsa

Steps:

  • In a medium ceramic or glass bowl, whisk together 2 tablespoons of oil, 2 tablespoons of lime juice, ½ teaspoons of grated zest, ¼ teaspoons of salt, cumin, pepper and crushed red pepper flakes (if using.)
  • Add the scallops and marinate, covered, in the refrigerator for 1 hour(remember the lime juice can cook the scallops if kept there too long and they may become rubbery.)
  • In a large nonstick skillet, heat the remaining 2 tablespoons of oil over medium-high heat until hot.
  • Add the tortilla wedges in batches and cook until golden brown on both sides, 1 to 2 minutes.
  • Drain the wedges on paper towels.
  • Peel, pit, and coarsely mash the avocados in another medium bowl.
  • Stir in the onion, yogurt, and remaining lime juice, zest, and salt.
  • When ready to serve, preheat the grill or broiler. In a broiler pan, cook the scallops about 3 inches from the heat until cooked through, about 4 to 5 minutes.
  • To serve, spread 2 teaspoons of avocado cream on each tortilla wedge.
  • Top with 1 tablespoons of lettuce and 1 scallop, and finish with about 1 tablespoons of salsa.
  • Repeat with the remaining ingredients.

Each component is wonderful- it's almost a three-for-one deal- one recipe with 3 things that you can make just on their own. I hope you enjoy this as much as we did. 1/4 cup basil leaves, finely shredded
2 tablespoons fresh lime juice
1 tablespoon extra virgin olive oil
1 small onion, minced
1 jalapeno, halved, seeded and thinly sliced
1 small garlic clove, minced
2 avocados, peeled, pitted and diced
salt
fresh ground black pepper
2 tablespoons vegetable oil
2 lbs sea scallops
1/4 cup water
4 plum tomatoes, diced
1 tablespoon balsamic vinegar

Steps:

  • In a large bowl, combine basil, lime juice, olive oil, onion, jalapeno and garlic.
  • With rubber spatula, gently fold in the avocados.
  • Season with salt and pepper.
  • In a large skillet, heat the vegetable oil until shimmering. Season the scallops with salt and pepper and cook over high heat until browned outside, but still rare in the center- about 2 minutes per side.
  • Transfer scallops to warmed platter- keep them warm.
  • Add water and tomatoes to the same skillet and cook over med-high heat, scraping up any browned bits from the bottom until the water has reduced- this happens in about 2 minutes.
  • Remove from heat and stir in the balsamic vinegar.
  • Season with salt and pepper.
  • Pour the tomato sauce over the scallops and serve with avocado salsa on the side.
  • *Use the salsa and the sauce on steak, shrimp, with chips, in a sandwich -- the possibilities are endless!

Chilled Avocado Soup with Scallops image

Avocado gives this dairy-free soup its creamy texture. For a super-sophisticated presentation, serve it in chilled martini glasses and garnish each one with a drizzle of Mexican crema or crème fraîche. If you prefer a soup with a thinner consistency, add water until it's exactly the way you like it.

Number Of Ingredients 12

3 tablespoons olive oil
1 cup diced white onion
1 serrano chile, stemmed, seeded, and diced
3 garlic cloves, minced
Salt
4 firm but ripe avocados, halved, pitted, and peeled
2 cups chicken broth
5 tablespoons fresh lemon juice
1/4 cup chopped fresh cilantro
Freshly ground black pepper
6 to 8 jumbo scallops
1/2 cup Mexican crema (see page 70) or crème fraîche, whisked to soften

Steps:

  • Heat 2 tablespoons of the olive oil in a medium skillet over medium heat. Add the onion and serrano chile and sauté for 10 minutes, or until tender. Add the garlic and cook for 2 minutes. Season with salt. Remove from the heat and set aside to cool.
  • Put the avocados in a blender. Add the chicken broth, lemon juice, cilantro, and onion mixture. Puree until smooth. Blend in 2 cups water. Strain the soup into a large bowl, and season it to taste with salt and pepper. Cover and refrigerate until well chilled, about 3 hours.
  • Sprinkle the scallops all over with salt and pepper. Heat the remaining 1 tablespoon olive oil in a skillet over medium-high heat. Working in 2 batches, sear the scallops for 1 minute per side, or until just cooked through.
  • Pour the chilled soup into individual bowls. Top each serving with a scallop, and drizzle with the crema.

I don't know about everyone else, but every now and then I love to eat a light salad for dinner, and this is perfect.

1 (7 ounce) bag baby arugula
1 tablespoon mandarin orange juice
3 tablespoons olive oil
1 teaspoon red wine vinegar

2 avocados, chopped
1/2 cup red onion, cut in half and thin sliced
1 (15 ounce) can mandarin oranges, drained (juice reserved for the dressing and seafood)
2 tablespoons lime juice
salt
pepper
3/4 lb large shrimp
3/4 lb sea scallops
1 tablespoon lime juice
1 tablespoon mandarin orange juice
3 tablespoons olive oil (2 for the marinade, 1 to saute)
1 tablespoon butter (to saute)
1/4 teaspoon red pepper

fresh cilantro, chopped fine

Steps:

  • Scallops and Shrimp -- Bring the shrimp and scallops to room temperature Mix the lime juice, mandarin juice, red pepper, and olive in a large bowl and add the seafood, mix well so everything is combined. Only marinate 20-30 minutes.
  • Dressing -- Make the dressing and set to the side. In a small bowl or measuring cup, add the mandarin orange juice, olive oil, red wine vinegar and garlic and mix well.
  • Salsa -- As the dressing hangs out -- the scallops and shrimp are marinating, lets make the salsa. In a small bowl add the avocados, onion, oranges (you can cut them in half if you want, but I like them whole), and add the lime juice, salt and pepper. Nothing more. Done! Cover and set to the side. You are almost done.
  • Seafood -- In a medium size pan -- I prefer NO NON STICK, Stainless or cast iron, but if non stick is all you have that is fine. Add the remaining 1 tablespoon of olive oil and the butter to the pan and bring to medium high heat. Pat your scallops dry and season with a little salt and the pepper and sear on each side just 1-2 minutes until golden brown. DO not move until golden brown. Then they will easily move. If they stick, they are not ready to be turned over. Once, golden brown on both sides, remove and set to the side while you cook the shrimp. Add the shrimp to the same pan and cook 1-2 minutes until pink and they begin to curl. They also take only a couple of minutes.
  • Serve -- Toss the dressing already made with the arugula in a bowl. Don't over dress. If there is any extra dressing it is great over the seafood. I like to dress my greens very lightly. Add a couple of cups of the dressed salad to each plate. Next, Top with the avocado orange salsa and then top with the warm scallops and shrimp. Just garnish with chopped cilantro and any extra dressing if you want.
  • Serve with some fresh grilled bread.

Steps:

  • For mayonnaise.
  • Combine all ingredients except oil in blender or processor; blend 1 minute.
  • With machine running, add oil in a thin, steady stream; continue processing until mixture is thick (can be prepared up to 3 days ahead).
  • Bring wine and ½ cup water to boil in large saucepan over medium-high heat.
  • Add mussels.
  • Cover and cook until mussels just open, about 4 minutes.
  • Remove mussels from pan.
  • Cool slightly.
  • Remove mussels from shells; chill.
  • Combine remaining 1 cup water, lemon juice and scallops in medium saucepan; bring to boil.
  • Remove from heat.
  • Cover and refrigerate until well-chilled.
  • Drain.
  • Combine mussels and scallops in bowl.
  • Stir in ¾ cup mayonnaise.
  • Cover and refrigerate at least 12 hours (can be prepared 1 day ahead).
  • Rub peeled avocado halves with 2 tbsp lemon juice to prevent discoloration.
  • Line 6 plates with lettuce leaves; place avocado, cut side up, on each.
  • Spoon scallop/mussel mixture into avocados, mounding slightly in center.
  • Or, slice avocados, fanning on top of lettuce; divide scallop mixture among plates.
  • Sprinkle with parsley.
