- Trim ends of potatoes. Slice potatoes into 1-in.-thick rounds. Brush with butter; sprinkle with salt and pepper. Place potatoes on grill rack, buttered side down. Grill, covered, over medium heat or broil 4 in. from heat until browned, 5-7 minutes. Brush with remaining butter; turn. Grill or broil until browned, 5-7 minutes longer., Top with sour cream, cheese, bacon and chives.

I was trying to create an appetizer that could be served at my teenaged daughters birthday party that the kids would love but that would appear elegant enough for the adults to be interested as well. These are made with simple ingredients yet yield a sophisticated result. Feel free to get creative with the flavors. - Preheat oven to 425°. Toss together first 6 ingredients. Place potato rounds on greased 15x10x1-in. pans. Roast until tender, 12-15 minutes. , Mix the first 5 topping ingredients; spoon onto potato slices. Top with crumbled bacon. Transfer to serving platters. Serve immediately.

BAKED POTATO ROUNDS RECIPE
Steps:
- Preheat oven to 350.
- Begin by washing potatoes and slicing into thin rounds (about ¼" thick).
- Place potatoes in a pot filled with water and bring to a boil. Cook for 3-4 minutes. Drain and pat dry potatoes.
- Place foil on a baking pan and spray with cooking spray. Place potatoes on pan. Brush lightly with melted butter.
- Sprinkle on garlic salt, cheeses and crumbled bacon pieces.
- Bake for 16-18 minutes and serve with sour cream. ENJOY!

- 1. PREP/PREPARE
- 2. Gather your ingredients.
- 3. Mix the sour cream and dijon mustard together in a small bowl, and reserve.
- 4. Place a rack in the middle position, and preheat the oven to 400f (205c).
- 5. Cut the potato into even 1/4-inch (.6cm) rounds.
- 6. Add the olive oil, salt and pepper to a small bowl.
- 7. Add the sliced potatoes, and toss to evenly coat.
- 8. Place on a parchment-lined baking sheet.
- 9. Bake in the preheated oven until cooked through and starting to brown, about 20 - 25 minutes.
- 10. Remove from the oven and reserve.
- 11. Chef's Note: Leave the potatoes on the baking sheet.
- 12. Add some provolone cheese.
- 13. Add some cheddar cheese.
- 14. Add some diced bacon.
- 15. Pop under a broiler until the cheese is bubbly, about 2 - 3 minutes.
- 16. PLATE/PRESENT
- 17. Garnish with some green onion, and top with some sour cream mix. Enjoy.
