SWISS CHEESE QUICHE (JULIA CHILD)
Posted here for safekeeping. You can also use all milk instead of cream and omit the butter pieces on top. NOTE: As suggested by one reviewer (Dec. 13, 2010), I am revising the recipe to correct a typo. (Sorry for the inconvenience!)

Steps:
- To partly bake the pastry shell:.
- Bake in middle of oven at 400 degrees F. for 8-9 minutes.
- For filling:.
- Preheat oven to 375 degrees F. Place oven rack in upper third of oven.
- Beat eggs.
- Add enough cream (or milk or cream-milk combination) so that eggs and cream measure 1 1/2 cups total.
- Add salt, nutmeg and pepper; mix through.
- Stir in cheese. Check seasoning.
- Pour into pastry shell and distribute butter pieces on top. Place on baking sheet.
- Bake 25-30 minutes or til puffed and browned.
- Slide quiche onto a hot platter and serve.
MINI SWISS QUICHES
Nutmeg subtly rounds out the flavor in these tiny green onion and cheese quiches.

Steps:
- Heat oven to 375°F. Spray 24 mini muffin cups with cooking spray.
- Remove pie crusts from pouches; place flat on cutting board or pastry cloth. With 2 1/2-inch round cutter, cut 12 rounds from each crust. Press 1 pie crust round into bottom and up sides of each muffin cup.
- Place 1 tablespoon cheese in each cup. Top each with a few onion slices and pimiento pieces. In 2-cup measuring cup, beat eggs, milk, salt and nutmeg with fork until well blended. Pour mixture into crusts, filling to within 1/4 inch of top.
- Bake 25 to 30 minutes or until golden brown. Cool 2 minutes. With tip of knife, lift quiches from cups. Serve warm.

- Combine cracker crumbs and butter; press onto the bottom and up the sides of an ungreased 9-in. pie plate. Set aside., In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 2 tablespoons drippings. Saute onion in drippings until tender. Remove from the heat. In a small bowl, combine the eggs, Swiss cheese, sour cream, pepper, onion and bacon; pour into prepared crust. Sprinkle with cheddar cheese., Bake at 375° for 20-25 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.

BACON AND SWISS QUICHE

- In medium bowl, mix flour and 1/2 teaspoon salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).
- Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap flattened round of pastry in plastic wrap and refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
- Heat oven to 425°F. Roll pastry on lightly floured surface, using floured rolling pin, into circle 2 inches larger than upside-down 9-inch quiche dish or glass pie plate. Fold pastry into fourths; place in quiche dish or pie plate. Unfold and ease into dish, pressing firmly against bottom and side.
- Sprinkle bacon, cheese and onion in pastry-lined quiche dish. In large bowl, beat eggs slightly with fork or wire whisk. Beat in remaining ingredients. Pour into quiche dish.
- Bake 15 minutes. Reduce oven temperature to 300°F. Bake about 30 minutes longer or until knife inserted in center comes out clean. Sprinkle with additional bacon. Let stand 10 minutes before serving.

- Preheat oven to 375 degrees F (190 degrees C). Arrange tart shells in 2 muffin tins; line shell each with a layer of pie weights or dried beans.

Steps:
- Spray 24 miniature muffin cups with non-stick cooking spray.
- Roll out half of pie crust.
- With a floured 2 1/2-inch cookie cutter, cut out 12 rounds.
- Press the rounds into the muffin cups, fluting the edges of the pastry.
- Repeat with remaining crust for the other pan.
- Place 1 tbsp cheese in each cup.
- Sprinkle with onion and pimiento.
- Beat eggs with milk, salt, and nutmeg.
- Pour mixture into muffin cups, leaving 1/4-inch from the top in each cup.
- Bake at 375F for 25-30 minutes or until set.
- Cool for 5 minutes.
- Remove quiches by sliding knife blade between quiche and pan and lifting.
- Serve warm.
