- Simmer 2 pounds small potatoes in salted water until tender, about 20 minutes; drain. Cool slightly, then peel. Heat 1 cup milk with 1/2 stick butter. Mash the potatoes with the hot milk and stir in 1 cup shredded cheddar. Top with crumbled cooked bacon and sliced scallions.
BACON SMASHED POTATOES
Taking a cue from German potato salad, these Yukon Golds are smashed with a hot bacon dressing and then tossed with fresh dill. Steaming rather than boiling the potatoes keeps them fluffy.

Steps:
- Steam potatoes in a large steamer rack set over boiling water, covered, until very tender, 20 to 25 minutes.
- Meanwhile, cook bacon in a 12-inch heavy skillet over medium heat until crisp. Transfer bacon with a slotted spoon to paper towels to drain, reserving fat in skillet. Add 2 tablespoons vinegar, sugar, and 3/4 teaspoon each of salt and pepper to hot bacon fat, scraping up brown bits.
- Transfer potatoes to a large bowl, reserving 1/2 cup steaming water. Add vinegar mixture to potatoes and smash with a potato masher to desired texture, adding reserved water if desired. Stir in dill, bacon, and vinegar, salt, and pepper to taste.

BACON AND CHEDDAR SMASHED POTATOES

- Boil red potatoes whole until cooked through. Cool to room temperature.
- Cook bacon until crispy. Drain and then crumble the bacon.
- Preheat oven to 400F.
- Evenly space the potatoes on a baking sheet lined with parchment paper. Flatten the potatoes using a metal spatula, potato masher or a fork.
- Brush the tops of the potatoes with melted butter. Season with salt and pepper.
- Top with grated cheddar cheese, sliced green onions and crumbled bacon.
- Bake in the oven for 15-20 minutes or until the cheese is melted and the potatoes are starting to brown and crisp on the edges.

GARLICKY CHEESE AND BACON MASHED POTATOES
I created this to accompany some grilled pork chops one night. The garlic is simmered with and then mashed right in with the potatoes ... add bacon bits (or real bacon, if you prefer) and oregano, chili powder and lots of sharp cheddar cheese, then bake with even more cheese on top; you've got a great dish to go with simple grilled chicken, pork, or steak and a salad. Or, I like it as a vegetarian main dish with some avocado on the side! And, depending on the saltiness of the cheese used, I like to wait to season with salt and pepper until it's on my plate.

- In a large saucepan, combine potatoes and garlic and add enough water to cover.
- Add salt if you wish, and bring to a boil; reduce heat slightly and simmer potatoes and garlic together for 20 minutes; drain then return to saucepan and mash together, adding butter and half and half.
- (And I do like my mashed potatoes a little on the"chunky" side, as opposed to totally smooth).
- Preheat oven to 325 degrees F.
- Stir in the oregano, chili powder, bacon bits and grated sharp cheddar cheese.
- Transfer mixture to a greased 8x8 baking dish; top with sharp cheddar cheese slices to cover entire mixture, then heat in a 325 degree F oven until nice and hot and cheese topping is melted, about 20 to 25 minutes.
- Serve, seasoning to taste with salt and/or pepper.

- Preheat the oven to 450 degrees F (230 degrees C).
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain.
