ITALIAN FENNEL COLESLAW

1/3 cup mayonnaise
1/3 cup white wine vinegar
1/4 cup olive oil
1 tablespoon prepared horseradish
1/2 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper

1/2 teaspoon Italian Seasoning, recipe follows
10 cups very thinly sliced green cabbage (about 1/2 large head)
4 scallions, thinly sliced
3 medium carrots, grated
1 large bulb fennel, trimmed, halved and sliced paper thin on a mandoline
3 tablespoons chopped fresh flat-leaf parsley
3 tablespoons dried basil
3 tablespoons dried marjoram
3 tablespoons dried oregano
3 tablespoons dried parsley
1 tablespoon granulated garlic
1 teaspoon dried rosemary
1 teaspoon dried thyme
1/4 teaspoon red pepper flakes

Steps:

  • In a large bowl, whisk together the mayonnaise, vinegar, olive oil, horseradish, red pepper flakes, Italian seasoning, 1 teaspoon salt and 1/4 teaspoon pepper. Add the cabbage, scallions, carrots, fennel and parsley; toss to coat. Season to taste with salt and pepper. Let stand in the refrigerator for 15 minutes before serving.
  • In a small bowl, mix together the basil, marjoram, oregano, parsley, granulated garlic, rosemary, thyme and red pepper flakes. Store in a jar with a tight-fitting lid.

2 large fennel bulbs
1 small red onion, sliced paper-thin
1 tablespoon grated horseradish, preferably fresh
1 cup plain yogurt
2 tablespoons white wine vinegar
1 tablespoon minced flat-leaf parsley
Salt and freshly ground black pepper

Steps:

  • Trim stalks and any brown areas from fennel. Mince enough fronds to make 1 tablespoon.
  • Slice fennel very thin, and place in bowl. Mix with onion.
  • Mix horseradish, yogurt and vinegar together. Fold into fennel mixture. Fold in parsley and minced fennel fronds. Season to taste with salt and pepper, and serve.

1/2 small red cabbage, about 2 cups shredded
2 large fennel bulbs, about 4 cups shredded
1/2 cup vegetable oil
2 tablespoons sugar
1/4 cup white vinegar
2 teaspoons stone-ground mustard
1 teaspoon celery seeds
1 1/2 tablespoons grated horseradish, preferably fresh
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Cut cabbage in quarters, lengthwise. Remove and discard core and slice as finely as possible across width. Place in large bowl.
  • Remove wispy fennel leaves. Chop and reserve for garnish. Cut bulbs in half and slice as finely as possible across width, discarding hard cores. Place in bowl with cabbage.
  • Combine remaining ingredients in another bowl. Add, half a cup at a time, to cabbage and fennel just until well moistened. You don't want a pool of dressing at bottom of bowl. Toss well and store in refrigerator.

1 Navel orange, juiced
2 to 3 tablespoons hot water
2 bulbs fresh fennel, trimmed of tops and fronds, cored and thinly sliced lengthwise
1 medium head raddichio, shredded
4 scallions, thinly sliced on an angle
1 handful flat-leaf parsley leaves, chopped
1 handful (3 tablespoons) pine nuts, toasted
2 tablespoons balsamic vinegar
3 tablespoons (3 turns around the bowl in a slow stream) extra-virgin olive oil, to coat

Steps:

  • Place raisins in a small dish cover with the juice of the orange and 2 to 3 tablespoons hot water. Plump and soften the raisins for 5 minutes.
  • Combine fennel, raddichio, scallions, and parsley in a bowl. Add plumped raisins in juice and the pine nuts to the salad and toss with balsamic vinegar and extra-virgin olive oil to lightly coat the slaw. Season salad with coarse salt and pepper, to your taste.

1 large carrot, coarsely grated (1 cup)
1 small red onion, halved lengthwise, then thinly sliced lengthwise (1 cup)

Steps:

  • Make dressing:
  • Toast fennel and anise seeds in a dry heavy skillet over moderate heat, shaking occasionally, until lightly browned, then cool. Coarsely grind fennel and anise seeds in grinder. Whisk together ground seeds and remaining dressing ingredients in a small bowl.
  • Make slaw:
  • Halve fennel bulbs lengthwise, then cut out and discard cores. Thinly slice fennel crosswise and toss with lemon juice in a very large bowl. Finely chop enough fennel fronds to measure 1/4 cup and add to sliced fennel.
  • Quarter cabbage and cut out and discard core. Thinly slice cabbage crosswise and add to fennel along with carrot, onion, parsley, and dressing and toss well. Chill, covered, at least 1 hour to allow flavors to develop.

3 fennel bulbs (finely shaved)
1 red onion, small (finely shaved)
1 tablespoon fresh dill
1 -2 garlic clove
1/4 cup rice wine vinegar (or white balsamic vinegar)
2 teaspoons honey
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil

Steps:

  • Cut the fennel (Anise) bulbs in half and remove the core. Shave on a mandoline or in a food processor. Cut the red onion in half, tip to root, and shave half moons the same way.
  • Combine the vegetables in a bowl and add the chopped, fresh dill.
  • With a mortar and pestle, smash the garlic with salt and pepper, adding the honey, vinegar and oil slowly. I like the pear-infused white balsamic vinegar. The rice wine vinegar is sweeter, so you might add more honey with the balsamic.
  • When well combined, drizzle over vegetables, toss well and chill for at least 1 hour (if you have the time), to wilt onions slightly.
  • Check seasoning.
  • I serve this in a bowl with warm lentils in the bottom, crispy fish (Salmon or Rockfish) on the lentils and the slaw on top. Comfort food at its best.

4 pork chops , trimmed of fat
zest and juice 1 lemon
1 tsp fennel seeds
0.5 tbsp olive oil
1 large fennel bulb , finely sliced
1 red apple , cored and sliced
1 small red onion , finely sliced
2 tbsp mayonnaise and 1 tbsp natural yogurt, mixed together
50g chopped walnut

Steps:

  • Rub the pork with the lemon zest and fennel seeds, then heat the oil in a non-stick frying pan. Brown the chops for 3 mins on each side, then remove from the heat. Splash over half the lemon juice, season, then leave to rest while you make the salad.
  • Mix together the sliced fennel, apple, onion, mayo mix and nuts. Season with black pepper and squeeze in the remaining lemon juice to taste. Serve the pork with the pan juices spooned over, and the fennel slaw on the side. Great with jacket potatoes.

2 large fennel bulbs
2 tablespoons extra-virgin olive oil
4 ounces country-style slab bacon, diced
3 tablespoons white wine vinegar
1 tablespoon Dijon mustard
Freshly ground black pepper
1 tablespoon minced fresh chives

Steps:

  • Trim the stems and leaves from the fennel bulbs. Chop and reserve two tablespoons of the leaves. Discard the stems. Quarter and shred the fennel bulbs by hand or on the fine slicing disk of a food processor. Put the fennel in a bowl.
  • Heat one tablespoon of the oil in a heavy skillet, add the bacon and saute over medium heat until the bacon is golden. Pour the contents of the skillet through a strainer into a heatproof bowl. Spread the pieces of bacon on absorbent paper.
  • Add the vinegar to the skillet and heat briefly, then stir in the mustard. Return the reserved bacon fat to the pan and add the remaining olive oil. Season to taste with pepper.
  • Pour the dressing over the fennel, add the chopped leaves and the chives and serve at once. For convenience, the dressing and fennel can be prepared in advance. Wait until just before serving to reheat the dressing, then toss it with the fennel.
