Bacon and Horseradish Mac 'n' Cheese with Cauliflower

Number Of Ingredients 18

EVOO Extra Virgin Olive Oil
for drizzling
4 thick slices of smoky bacon
chopped into 1/4 inch dice
1 large head cauliflower
trimmed and cut into bite-size florets
Salt and pepper
4 tablespoons butter
3 tablespoons flour
3 cups milk
Freshly grated nutmeg
about 1/4 teaspoon
1 pound penne rigate or cavatappi
corkscrew shaped hollow pasta
3 cups shredded extra-sharp cheddar cheese
divided
3 rounded tablespoons prepared horseradish
1/4 cup chopped chives

Steps:

  • Bring a large pot of water to a boil
  • While the water comes up to a boil, heat a drizzle of oil in small skillet over medium high heat
  • Add bacon and crisp, 5 minutes
  • Drain on a paper towel-lined plate and reserve
  • Salt the boiling water and add cauliflower florets
  • Cook 4-5 minutes then remove with a spider or strainer and run under cold running water to stop cooking process
  • Reserve cooked cauliflower in colander
  • Place a medium-size pot over medium heat
  • Melt butter and whisk in flour
  • Cook 1 minute then whisk in milk and season with salt, pepper and nutmeg
  • Cook for a couple of minutes until thickened
  • Preheat broiler
  • Drop pasta in the same boiling water you cooked cauliflower in and cook just shy of al dente
  • While the pasta cooks, remove sauce from heat and add 2/3 of grated cheese, the horseradish, reserved bacon and chives
  • Stir to combine
  • Drain pasta over cauliflower to reheat the florets with hot boiling water
  • Place pasta and florets in hot pot and add the cheese sauce
  • Stir to combine
  • Transfer to a baking dish and top with remaining cheese
  • Place under broiler to brown the top
  • Serve with a spinach salad alongside

1 lb farfalle pasta
8 slices smoked bacon
3 tablespoons butter
2 tablespoons flour
2 1/2 cups milk
ground nutmeg
2 1/2 cups grated extra sharp white cheddar cheese
2 tablespoons prepared horseradish
1/3 cup finely chopped flat leaf parsley (a generous handful)
2 scallions, finely chopped

Steps:

  • Bring a large pot of water to a boil, salt it, add the pasta and cook until just shy of al dente.
  • Heat the oven to 350 degrees F. Bake the bacon on a broiler pan until crisp, 25 to 30 minutes (I just use the ready cooked bacon and microwave it until it is crispy). Chop the bacon Preheat the broiler.
  • Meanwhile, in a medium saucepan, melt the butter over medium heat. Whisk in the flour for 1 minute, then wisk in the milk; season with salt, pepper and nutmeg. Cook until reduced, about 5 minutes. Stir in 2 cups of cheese until melted, then remove the sauce from the heat and stir in the horseradish and teh bacon.
  • In a casserole dish, combine the pasta with the sauce and top with parsley, scallions and remaining 1/2 cup cheese Broil until browned, 3 to 4 minutes. Serve with a few pickles.

Just because you're on a keto diet doesn't mean you should forsake all comfort food. This super indulgent mac 'n' cheese manages to stay low-carb thanks to one magical ingredient: cauliflower. Add bacon to the mix and you get the perfect dinner.

4 strips bacon
4 cups water
1 large head cauliflower
2 teaspoons kosher salt, divided
4 oz cream cheese
⅓ cup heavy cream
¼ teaspoon cayenne pepper
1 teaspoon paprika
2 cups shredded cheddar cheese
fresh parsley, finely chopped, for garnish

Steps:

  • In a large pan over medium-high heat, cook the bacon for 6 minutes, or until crisp. Remove the bacon from the pan, pat off excess grease with a paper towel, then chop and set aside.
  • Add the water to a medium pot and bring to a boil.
  • While the water heats up, chop the cauliflower into small pieces.
  • Add 1 teaspoon of salt and the cauliflower to the boiling water, then cover and cook for 4 minutes, or until slightly tender. Drain the cauliflower and set aside.
  • In the same saucepan, combine the cream cheese, heavy cream, remaining teaspoon of salt, the cayenne, and paprika. Stir to combine, then cook for 4 minutes, until smooth and thick.
  • Fold in the cauliflower, then add the cheddar cheese. Stir until the cheese has melted, then fold in the bacon.
  • Scoop into serving bowls and garnish with parsley.
  • Enjoy!

Number Of Ingredients 12

16 oz cavatappi pasta
2 heads cauliflower
8 oz bacon
2 tablespoons flour
13.5 oz milk
1 cup chicken stock
2 cups shredded italian cheese blend
1 bunch scallions
2 teaspoons olive oil
1 tablespoon butter
salt, to taste
pepper, to taste

Steps:

  • Preheat the oven to 400°F. Bring a large pot of water to boil. Trim and thinly slice scallions, separating whites from greens. Toss cauliflower on a baking sheet with a large drizzle of olive oil and a pinch of salt and pepper. Roast in the oven until tender, about 25 minutes.
  • Meanwhile, heat a large pan over medium high heat. Add bacon and cook until just crispy. Remove from the pan and set aside to drain on paper towels. Remove pan from heat, reserving just 1 tbsp of bacon fat.
  • Once water is boiling, add pasta and cook until al dente. Drain.
  • Heat butter in a pan with reserved bacon fat until melted. Add scallion whites and cook for one minute. Add flour and cook, stirring, until lightly browned about 1 minute. Slowly whisk in milk. Stir in stock and simmer until thickened. Stir in cheese until thoroughly combined. Remove pan from heat. Season with salt and pepper.
  • Crumble bacon into pieces. Stir bacon, pasta, and ¾ of the cauliflower into sauce. Transfer into a lightly oiled baking dish. Scatter remaining cauliflower on top. Bake until bubbly, 5-7 minutes.
  • Garnish with scallion greens and serve. Enjoy!
