This is a different twist on asparagus, sure to please and have them coming back for more!

3 slices bacon, chopped
1 ½ teaspoons butter
1 pound fresh asparagus, trimmed
1 shallot, thinly sliced
1 pinch salt, or to taste
1 pinch ground black pepper, or to taste
1 tablespoon grated Parmesan cheese

Steps:

  • Cook and stir bacon in a skillet over medium heat until crisp, about 5 minutes. Discard grease.
  • Melt butter in the same skillet.
  • Cook and stir asparagus and shallot with salt and black pepper in melted butter and bacon. Cover skillet and cook, stirring occasionally, until asparagus are tender, about 5 minutes.
  • Transfer asparagus mixture to a platter. Sprinkle with Parmesan cheese.

Sweet and Savory Cheesy Bacon Wrapped Puff Pastry Twists image

The holiday appetizer everyone asks for...year after year...quick, easy, and delicious!

Number Of Ingredients 8

1/2 cup light or dark brown sugar
1-2 tablespoons chopped fresh rosemary, using to your taste
kosher salt and black pepper.
2 sheets (1 box) frozen puff pastry, thawed
1 egg, beaten
1 cup shredded sharp cheddar cheese ((or a mix of your favorite cheeses))
1-2 teaspoons cayenne pepper ((optional))
24 strips thin cut bacon, or 12 sticks of thicker bacon, halved

Steps:

  • 1. Preheat oven to 375° F. Line 2 baking sheets with foil and place a wire rack on top. Lightly rub each rack with olive oil. 2. In a shallow bowl, combine the brown sugar, rosemary, and a pinch each of salt and pepper. 3. Place both sheets of pastry on a lightly floured counter. Brush the surface of each with a beaten egg. Evenly sprinkle about 1/2 cup of cheese over each sheet, then sprinkle with cayenne. Dust a rolling pin lightly with flour and roll the rolling pin over the cheese, gently pressing the cheese into the pastry. Fold the pastry in half, then cut each into 12 (1/2 inch) wide strips. Pinch the ends to seal, then gently twist each strip several times to enclose the cheese. It's ok if some of the cheese falls out. 4. Take a piece of bacon and wrap it around the twisted pastry. Repeat with the remaining twists. Dredge the twist through the brown sugar mix, tossing to coat, placing the twist on the prepared baking sheet as you go. 5. Bake 30 to 50 minutes, rotating the pans halfway through. My bacon took 50 minutes to cook, start checking the twists at around 30 minutes. Serve warm or at room temperature...though I love them warm!

1/4 teaspoon crushed red pepper flakes
1 lb fresh asparagus spears, trimmed
8 slices bacon
1 lemon, cut in wedges

Steps:

  • Heat oven to 425°F. Line 18x13-inch rimmed pan with foil. Place large rack in pan; spray rack and foil with cooking spray.
  • In large shallow bowl or pie plate, mix melted butter and pepper flakes. Add asparagus; toss thoroughly to coat. Divide asparagus evenly into 8 bundles. Wrap each bundle in one slice of bacon. Do not overlap the bacon. If desired, secure each bundle with 2 toothpicks; place toothpick-side down on rack. Drizzle with any remaining butter mixture.
  • Bake 30 to 36 minutes, turning once, until asparagus is tender and bacon is cooked through. Serve with lemon wedges.

6 to 8 slices bacon
12-15 asparagus spears
1 egg, beaten

Steps:

  • Preheat oven to 400°F/200°C. Slice the puff pastry into 1-centimeter strips.Slice the bacon in half lengthwise into thin strips. Wrap a strip of bacon around an asparagus spear in a spiral. Wrap a strip of puff pastry around the asparagus, looping it in between the bacon spiral. Repeat with the rest of the asparagus. Place the wrapped spears on a baking tray lined with parchment paper. Brush them with egg wash, then sprinkle a pinch of salt & pepper on top. Bake for 18 minutes, until golden brown and puffed. Serve!

1/4 cup maple syrup
2 teaspoons red pepper flakes
1/2 orange, juiced
1 pound regular uncured bacon (not thick cut)
1/4 cup finely shredded Cheddar

Steps:

  • Preheat the oven to 375 degrees F and fit a baking sheet with a wire rack.
  • In a small saucepot, mix the maple syrup, red pepper flakes, orange juice and 1/4 cup water. Bring to a boil, then remove from the heat.
  • Line up the bacon slices on the wire rack and brush with the hot maple syrup mixture. Sprinkle some cheese on each piece of bacon. With a skewer in hand, fold the end of a piece of bacon in half lengthwise and press the skewer through the end. Do this to 4 pieces of bacon, spreading them out evenly across the skewer, and place the skewer on the baking sheet. Twist the bacon pieces into long spirals so as to create straws. Take another skewer and skewer the bottom of each piece of bacon to keep the bacon twisted. Do this to all the bacon.
  • Bake until the bacon browns, about 35 minutes. Let cool slightly on the rack; the bacon will get crunchy as it sits. Serve immediately.

1 cup mozzarella cheese
1/2 cup pepperoncinis
1/4 cup fresh basil
1/3 pound salami
1/3 pound ham
1/4 pound prosciutto
8 slices provolone, halved
Salt and pepper to taste
Olive oil and balsamic vinegar for the dip, optional

Steps:

  • Preheat oven to 375˚F (190˚C) Unroll cans of dough and separate into triangles. On a large cookie sheet, place a bowl in the center (about 5 inches in diameter). Arrange the triangles in a ring around the bowl, dough should overlap. Layer cheese, pepperoncinis, basil, salami, ham, prosciutto, and provolone on each triangle closest to the ring. Season with salt and pepper. Bring the top of the triangle over the filling, and tuck the edges under the bottom layer of dough. Repeat around the ring until the entire filling is enclosed. Bake for 30 minutes or until the dough is a golden brown. Cool 5 to 10 minutes before serving. Serve with olive oil and balsamic. Enjoy!

1 pound asparagus spears, trimmed
1 tablespoon olive oil
1 tablespoon butter
1 cup chopped onion
1 ⅓ cups uncooked Arborio or long-grain rice
4 cups chicken broth
¼ teaspoon black pepper
8 ounces bison bacon
½ cup freshly grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F. Place asparagus in single layer in a 15x10x1-inch baking pan. Drizzle with olive oil. Bake, uncovered, for 8 minutes or until crisp-tender. Cool slightly. Cut into bite-size pieces; set aside.
  • Melt butter over medium heat in a large saucepan. Cook onion in hot butter for 4 to 5 minutes or until tender. Add rice. Cook and stir for 2 minutes. Carefully stir in broth and pepper. Bring to boiling; reduce heat. Simmer, covered, for 20 minutes (do not lift lid).
  • Meanwhile, cook bison bacon, 1/2 at a time, over medium heat in a large skillet for 5 to 6 minutes per batch or until crisp, turning occasionally. If necessary, drain on paper towels. Transfer to a cutting board. Cool slightly; chop into bite-size pieces.
  • Remove saucepan from heat. Stir in asparagus. Let stand, covered, for 5 minutes. Stir in bison bacon pieces and Parmesan cheese.

I had some fresh asparagus lying around and wanted to use it up. I always do the same things with asparagus and wanted to be creative, so I tried this out to see if it worked and I was pleasantly surprised. It reminds me of a vegetarian crawfish pie. Great for brunch or a main course at dinner!

1 ½ cups whole wheat flour
½ cup vegetable oil
¼ cup milk
1 teaspoon white sugar
½ teaspoon salt
1 pound fresh asparagus, chopped
½ cup vegetable broth
½ teaspoon dried minced shallots
¼ cup butter
¼ cup all-purpose flour
½ teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon cayenne pepper
½ cup Greek yogurt
½ cup grated Parmesan cheese
¼ cup crumbled Gorgonzola cheese, or to taste
1 tablespoon grated Parmesan cheese, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix whole wheat flour, vegetable oil, milk, sugar, and 1/2 teaspoon salt together using a fork in a 9-inch pie plate; press mixture into the shape of a pie crust.
  • Combine asparagus, vegetable broth, and shallots in a pot; bring to a boil. Cook until asparagus is tender, 5 to 10 minutes. Pour mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree until smooth.
  • Melt butter in the same pot over medium heat; slowly whisk flour into the melted butter until paste-like consistency. Mix 1/2 teaspoon salt, black pepper, and cayenne pepper into the flour paste; slowly whisk in yogurt. Add asparagus mixture to yogurt mixture; fold in 1/2 cup Parmesan cheese and Gorgonzola cheese until smooth. Pour mixture into pie crust; top with 1 tablespoon Parmesan cheese.
  • Bake in the preheated oven until pie is set in the middle and crust is brown, 30 to 35 minutes.
