BRIE, BACON AND BASIL PASTA



Brie, Bacon and Basil Pasta image

10 oz pasta
1/2 cup pasta water - reserved
4 pieces think sliced bacon
1/2 yellow onion (thinly sliced)
2 cloves garlic (minced)
1/2 lb brie (cut into cubes)
10-15 basil leaves (cut into a chiffonade)
Kosher salt and freshly cracked black pepper to taste
lemon juice to taste

Steps:

  • Bring a large pot of water to a boil and the cook the pasta according to the package directions. Reserve 1 cup of the pasta water before draining, then drain the pasta and set it aside.
  • Place the bacon in a large cast iron skillet over medium heat and cook the bacon on both sides until brown and crispy. Remove the bacon from the skillet and set it to cool on a paper towel lined plate. Once the bacon is cool, break it into bite sized pieces.
  • Add the thinly sliced onion into the cast iron skillet with the bacon grease and saute over medium high heat until the onions are caramelized, about 5 minutes. Add the garlic and toss for about 30 seconds until fragrant.
  • Add the cubed brie into the cast iron skillet along with ½ cup of the reserved pasta water and a few squeezes of lemon juice. Stir constantly until the cheese is melted and then add the cooked pasta to the mixture and toss to combine. Add the bacon and basil and season with salt and pepper as needed. Serve immediately.

1 (16 ounce) package uncooked spaghetti
¼ cup extra-virgin olive oil
¼ cup unsalted butter, melted
4 cloves garlic, minced
1 cup fresh basil, coarsely chopped
salt and pepper to taste
½ cup freshly grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Place spaghetti in the pot, cook for 8 to 10 minutes, until al dente, and drain.
  • In a large bowl, toss the spaghetti with the olive oil, butter, garlic, basil, salt, and pepper until evenly coated. Serve with Parmesan cheese.

1/2 cup pasta water - reserved
6 pieces applewood smoked bacon, diced
1/2 sweet onion, diced
3 cloves garlic, minced
1/3 cup white wine or vermouth
1/2 lb brie, cut into cubes
Small bunch of basil, cut chiffonade
Salt and freshly cracked black pepper to taste

Steps:

  • Cook the pasta according to the package directions and reserve 1/2 cup of the pasta cooking water before draining. Keep warm. Place the bacon in a large heavy skillet over medium/high heat and cook the bacon until crisp. Remove the bacon from the skillet and drain on paper towels. Drain the bacon fat, reserving 1 tablespoon Add the onion to the skillet with the bacon fat and saute over medium high heat until the onions are caramelized, about 8 minutes. Add the garlic and saute for about 1 minute more. Raise the heat to high and deglaze the pan with the wine. Reduce to about 2 Tablespoons. Add the cubed brie to the skillet along with the reserved pasta water. Stir constantly until the cheese is melted. Add the pasta to the mixture along with the basil and toss to combine.

1/2 pound bacon, chopped
1/2 cup half and half
1/2 cup canned low-salt chicken broth
1 cup (about 4 ounces) freshly grated Parmesan cheese
1 teaspoon cracked black pepper
3 ounces Brie cheese, rind removed, thinly sliced
16 ounces fettuccine

Steps:

  • Cook bacon in heavy large skillet over medium heat until fat is rendered and bacon begins to brown, about 6 minutes. Using slotted spoon, transfer bacon to plate. Discard fat from skillet. Add half and half and chicken broth to same skillet and bring to boil over medium heat. Gradually add Parmesan and stir until cheese melts. Add pepper and bacon. Reduce heat to low and gradually add Brie, stirring until cheese melts.
  • Meanwhile, cook fettuccine in large pot of boiling salted water until just tender but still firm to bite. Drain well. Add fettuccine to sauce in skillet. Toss until coated with sauce. Divide fettuccine among plates and serve.

Stir in the tomatoes, bacon, basil and pepper; cook and stir until tomatoes are softened. Rinse and drain pasta; stir into tomato mixture. 1 loaf Italian bread, cut lengthwise in 1/2
3 tablespoons butter
3 tablespoons olive oil
6 garlic cloves, minced
2 tablespoons fresh rosemary
2 slices cooked bacon, crumbled fine
1/2 lb brie cheese

Steps:

  • Preheat broiler.
  • Place bread on a cookie sheet pan cut side up.
  • Place butter, olive oil, garlic, and rosemary in a microwave and heat just to melt. Stir to blend.
  • Spread over the bread.
  • Sprinkle the bacon bites over the bread.
  • Place pieces of the brie over the bacon.
  • Brown under the broiler a couple minutes. Do not leave it for it will burn and you`ll miss out on a great Garlic bread.
  • Remove and slice into 2 in pieces.
