6 slices bacon, cut into bite-size pieces
½ onion, diced
1 (12 ounce) package fresh Brussels sprouts, trimmed and sliced
2 tablespoons white sugar, or to taste

Steps:

  • Place bacon pieces in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels, leaving grease in the skillet.
  • Cook onion in the bacon grease in the skillet until translucent, about 5 minutes. Add Brussels sprouts and toss to coat in the bacon grease. Cook and stir until browned and tender, about 5 minutes. Stir in sugar, salt, and black pepper; sprinkle in bacon pieces.

450 g brussels sprouts ((1 lb))
85 g bacon lardons ((1/2 cup))
2 cloves of garlic, chopped
2 tbsp grated parmesan
1 tbsp vegetable oil
2/3 cup boiling water

Steps:

  • Wash the brussels sprouts and cut them in half.
  • In a pan, add the bacon lardons and fry until brown.
  • Remove from the pan and set aside.
  • In the same pan, add the oil and brussels sprouts and leave to cook for 2-3 minutes, shaking the pan now and then.
  • Add the garlic and half of the water, place a lid on and leave to cook on a medium heat until the water evaporates, that should take 1-2 minutes.
  • If the brussels sprouts are not tender enough at this point, add the remaining water, and cook again with the lid on; once the vater evaporates, the sprouts are tender, and slightly caramelised on the edges.
  • Add the cooked bacon, and parmesan, and remove from the heat.

1/2 cup water
1 tsp salt

1/3 cup crisp fried onions (French's or other brand or homemade)

Steps:

  • Cook the bacon in a skillet over medium heat until browned and crispy. Scoop out the bacon onto a plate lined with paper towel to drain.
  • Drain most of the bacon grease, leaving about 3-4 tablespoons in the skillet.
  • Add the brussels sprouts halves, water, salt and pepper to the skillet. Cover skillet with lid and let them cook for about 6-8 minutes. Check every few minutes and stir, ensuring that the brussels sprouts do not stick to the bottom of the skillet.
  • Remove the lid, lower heat and continue to cook until the brussels sprouts are tender and nicely browned. This should take another 5 minutes or so and all the water should be evaporated.
  • Remove from the heat and place the brussels sprouts in a serving bowl. Toss with the cooked bacon and crisp fried onions.

1 tbsp vegetable oil or neutral oil
4 slices of Gifford's Bacon
½ lb brussels sprouts
2 tbsp sesame oil
1 thumb sized ginger root
3 cups of cooked, day old, white rice
1½ tbsp soy sauce
1 tsp chili sauce (such as sambal oelek)
juice of half a lemon
1 large egg
1 tsp sesame seeds
kosher salt to taste
2 green onions

Steps:

  • Slice your bacon pieces into ¼ inch strips crosswise. Trim and slice the brussels sprouts lengthwise. Peel and mince the ginger. Slice your green onions crosswise and discard the white parts.
  • In a large nonstick skillet, add the vegetable oil over medium high heat. Add your bacon, stirring every 30 seconds until browned, about 4 minutes. Once browned, remove the bacon to a paper towel lined plate with a slotted spoon. Pour out all but 1 tbsp of bacon fat from the pan. Save the bacon fat in a jar for later.
  • Keep the pan over medium high heat. Place your brussels sprouts, cut side down in the fat, and cook without disturbing them for 3-4 minutes until the bottoms are browned. Stir them up a bit and cook for another minute. Remove them to the plate with the bacon.
  • In the same pan, add 2 tbsp of sesame oil over medium high heat. Add the ginger and cook for one minute. Add the rice and flatten into an even layer in the pan. Let this cook without disturbing for 30 seconds. Mix up the rice and flatten again, repeating for 3-4 minutes until rice has some crispy bits. Add the soy sauce and chili paste, and stir in the bacon and brussels sprouts. Squeeze in the lemon and stir the rice. Cook for one minute.
  • Push all the rice to one side of the pan. In the cleared part of the pan, add a little oil. Crack your egg and let it set for just 30 seconds. Then scramble it with a spatula or wooden spoon. Once the egg is cooked through, stir it into the rice. Add the sesame seeds and taste the rice for salt. Add salt if needed. Top with sliced green onions to garnish.

1 1/2 cups cooked brown rice (preferably leftover from the day before)
6 slices thick-cut bacon (chopped)
1 1/2 cups brussels sprouts (stems removed and sliced)
4 garlic cloves (minced)
1 to 2 tablespoons low-sodium soy sauce
4 green onions (sliced)
2 teaspoons toasted sesame oil (plus extra for drizzling)
2 or 4! fried or poached eggs, depending on how many you want
chili garlic paste for serving

Steps:

  • Heat a large skillet or wok over low heat and add the bacon. Cook until the fat is almost all rendered and the bacon is crispy, then stir in the brussels sprouts. Toss well and cook until the brussels soften, stirring occasionally, about 5 to 6 minutes. Stir in the garlic.
  • Add in the rice, tossing to coat, then let it sit for 1 to 2 minutes to crisp up and get golden. Stir in the green onions, the soy sauce (start with only 1 tablespoon, since the bacon is salty!) and the sesame oil. Toss, breaking apart any pieces, and repeat for another 1 to 2 minutes. Repeat another 1 or 2 times until the rice is a bit crispy and golden.
  • At this point, taste the rice and if it needs seasoned a bit more, stir in the soy sauce. You can keep your rice over low heat and take a few minutes here to prepare your eggs, whether you fry them or poach them.
  • Spoon the rice into a bowl or a plate and top with the egg (or 2!), an extra drizzle of toasted sesame oil and some chili garlic paste. Eat up!

Fried Rice with Apple Brussels

1 lb. brussels sprouts
1 large granny smith apple ((or 2 small/medium))
1 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp salt
1 tbsp balsamic vinegar
3 cups cooked white rice (or brown rice)
1 cup chopped carrots
1/2 tsp garlic powder
1/2 tsp onion powder
1.5 tsp sesame oil
2 tbsp soy sauce
1/4 tsp ground ginger
salt & pepper (to taste)

Steps:

  • Cut the bottoms off of your brussels if needed, and then chop them into halves. Place them in a food processor and pulse a few times. You don't want to process them too much, maybe 20 seconds or so of total pulsing.
  • In a large pan heat 1 tbsp olive oil on medium heat. Add brussels to pan and cook for about 5 minutes, stirring occasionally.
  • While brussels are cooking, peel the granny smith apple, and dice it into small pieces.
  • Add diced apple, 1/4 tsp garlic powder, 1/2 tsp salt, 1 tbsp balsamic vinegar into the pan with your brussels and stir well. Cook for about 5 minutes on low/medium heat.
  • Heat 1.5 tsp sesame oil in a large pan on medium heat.
  • Cook your chopped carrots with the sesame oil for 3 minutes.
  • Add 1/2 tsp garlic powder, 1/2 tsp onion powder, and 1/4 tsp ground ginger. Stir frequently and cook for another 2 minutes.
  • Add a large scoop of cooked rice to the carrots, and add part of the soy sauce. Stir it up. Then add another scoop of cooked rice, and more soy sauce, and stir again. Do this until you've added all of the rice, and all 2 tablespoons of soy sauce.
  • Turn the heat to low, then add the apple brussels sprouts into the rice and stir well. Cook until heated through. Season with salt & pepper if needed.

  • Slice the bacon into bite-size pieces and cook in a large skillet until it's done. (I use my 12" cast iron skillet).

  • As the bacon is cooking, trim the ends of the Brussels sprouts and cut them in half from top to bottom.

Steps:

  • Wash and cup Brussels sprouts into bite size pieces. Season it with olive oil, garlic parsley salt and sprinkle with parmesan cheese. Toss everything together.
  • Place Brussels sprouts into an air fryer basket. Set air fryer to 390 °F and cook for 12 minutes. At a 6 minute mark, take out the basket and shake the Brussels sprouts to ensure all sides get crispy.
  • Add bacon to the Brussels sprouts and air fry them for another 5 minutes.
  • Serve Brussels sprouts right away.

  • Cut Brussels sprouts into equal halves. Transfer to a bowl, add salt, garlic powder and black pepper. Mix to coat.
  • Transfer seasoning sprouts to air fryer basket, Add the chopped bacon into the basket and toss with a silicon spoon to mix all the ingredients together.
