Craving fresh but need something easy to make? Toss together this simply perfect pasta salad packed with freshness: fresh mozzarella, basil, tomatoes, arugula and avocados.

1 box Betty Crocker™ Suddenly Pasta Salad™ Caesar
1/4 cup olive or vegetable oil
1 tablespoon water
1 tablespoon balsamic vinegar
2 tablespoons chopped fresh basil leaves
1 cup cherry tomatoes, halved
1 cup drained fresh mozzarella cheese pearls
1 cup fresh baby arugula leaves
8 slices bacon, crisply cooked, coarsely chopped
1 medium avocado, peeled, pitted, cut into 1/2-inch cubes

Steps:

  • Cook pasta as directed on box. Meanwhile, in large bowl, stir together seasoning mix (from salad box), oil, water and balsamic vinegar.
  • Drain pasta; rinse with cold water. Shake to drain well.
  • Add drained pasta, basil, tomatoes, mozzarella pearls, arugula, bacon and avocado to balsamic vinegar mixture; toss to coat. Serve immediately.

Grab some bacon, tomatoes, cheese and basil and you are all set to make the wonder that is this summertime bacon caprese salad recipe!

8 slices bacon, cut into pieces
2-3 heirloom tomatoes, sliced
8 ounces burrata or mozzarella cheese
1/2 cup basil leaves
2 tablespoons red wine vinegar
2 tablespoons olive oil
Salt and pepper

Steps:

  • Cook bacon in a skillet over medium high heat until crisp. Drain on paper towels, leaving drippings in pan.
  • Arrange the sliced tomatoes on a platter or individual plates. Tear the cheese into bite sized pieces, tucking the pieces in and around the tomatoes. Scatter the cooked bacon and basil leaves on top (if your basil leaves are large, give them a quick chop).
  • Pour the bacon drippings into a small jar and add the oil and vinegar. Close the lid tightly and shake.
  • Drizzle the dressing over the salad, sprinkle with a little salt and pepper and serve!

This best bacon caprese sandwich with basil garlic aioli combines two of my favorite lunches: the classic BLT and the caprese salad. It's a winner!

¼ cup mayonnaise
2 tablespoons chopped fresh basil
1 tablespoon fresh lemon juice
1 teaspoon minced garlic
½ teaspoon garlic powder
½ teaspoon freshly grated lemon zest
1 pinch salt and ground black pepper to taste
7 slices bacon, halved
2 ciabatta rolls, split and toasted
1 (4 ounce) ball fresh mozzarella, sliced
1 heirloom tomato, sliced

Steps:

  • Mix mayonnaise, basil, lemon juice, garlic, garlic powder, and lemon zest together in a bowl. Season with salt and pepper. Cover with plastic wrap and refrigerate aioli until ready to use.
  • Preheat oven to 375 degrees F (190 degrees C). Place a wire rack inside a baking sheet to catch grease.
  • Place 3 bacon halves side by side on the wire rack. Weave another 3 to 4 bacon halves over and under those halves to form a square lattice. Repeat with remaining bacon halves.
  • Bake in the preheated oven until browned and crispy, 15 to 20 minutes. Lift bacon lattices off the pan with a spatula onto paper towels.
  • Spread basil garlic aioli on each ciabatta roll; layer mozzarella slices, tomato, and bacon lattices on top.

1 pound fresh mozzarella cheese, cut into 1/4-inch slices
3 plum tomatoes, cut into 1/4-inch slices
1-1/2 cups fresh baby spinach
8 bacon strips, cooked and crumbled
1/2 cup minced fresh basil
2 green onions, chopped
1/4 cup balsamic vinaigrette
1/2 teaspoon salt
1/4 teaspoon coarsely ground pepper

Steps:

  • Arrange cheese, tomatoes and spinach on a large serving platter; top with bacon, basil and green onions. Just before serving, drizzle with vinaigrette; sprinkle with salt and pepper.

  • Whisk together all of the Balsamic Marinade ingredients in a medium bowl. Remove 1 tablespoon and add to a large bowl along with tomatoes and asparagus. Toss evenly to coat. Refrigerate.
  • Add remaining marinade to a large Ziploc bag along with chicken. Marinate 30 minutes up to 4 hours.
  • When ready to grill, let chicken sit at room temperature for 15-30 minutes (time permitting). Meanwhile, grease and preheat the grill to medium heat, 375-450°F. Grill chicken undisturbed for 5-7 minutes per side, or until chicken is cooked through. (An inserted thermometer should read 165 degrees F.) Remove chicken from grill and let rest 5 minutes before slicing.
  • Grease grill and turn to high heat. Grill asparagus for 2 minutes per side or to desired tenderness. Let cool then cut on diagonal into 1-2-inch pieces.
