PERFECT BACON CHEESEBURGERS

3 pounds 80/20 ground beef
1/3 cup heavy cream
6 to 8 dashes hot sauce, such as Tabasco
4 dashes Worcestershire sauce
1 teaspoon salt
1/2 teaspoon ground black pepper
6 kaiser rolls
Softened butter, for spreading, plus 2 tablespoons
6 slices Cheddar
6 slices cooked bacon, halved

Steps:

  • Place the beef into a medium mixing bowl. Add the cream, hot sauce, Worcestershire, salt and pepper. With clean hands, mix the meat well. Set aside.
  • Next, slice the rolls in half and spread each half with some softened butter. Place the rolls face-down on a skillet over medium heat. Lightly grill the rolls so they're nice and golden. Let the rolls cool on a plate until you need them.
  • Heat a skillet over medium-high heat and add the butter. Form the beef mixture into 6 patties and place in the skillet, in batches if needed. Allow each to cook about 4 minutes on the first side, flip them and place a slice of Cheddar on to melt.
  • When the patties are done in the middle, place them on the base of the halved buns. Top each with 2 pieces of the bacon and top with the other half of the rolls.

1 pound sliced bacon, diced
5 pounds ground beef chuck
1 large onion, chopped
¼ cup steak sauce
salt and pepper to taste
1 pound American cheese slices

Steps:

  • Preheat a grill for high heat.
  • Place bacon in a large skillet over medium heat. Fry, stirring occasionally. When the bacon is almost done, add the onion. Cook until the bacon is crisp, and the onion is tender. Remove onion and bacon from the pan with a slotted spoon, and transfer to a food processor. Pulse a couple of times to chop finely. Do not puree. Pour into a large bowl, and mix with steak sauce and ground chuck using your hands. Form into 16 patties.
  • Place patties on the grill, and cook for 5 minutes per side, or until well done. Place a slice of cheese on top of each one during the last minute.

2 tablespoons chopped scallions

1 cup shredded sharp cheddar cheese (yellow)
1 (13 7/8 ounce) can pizza dough
1 egg, beaten
2 tablespoons sesame seeds
2 cups shredded romaine lettuce, for serving

Steps:

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  • In a large saute pan over medium heat, cook bacon until crisp, about 3-5 minutes. Drain on a towel-lined plate. Drain all grease from pan except 1 tablespoon.
  • Return pan to medium heat and cook onions and garlic until softened, about 3-5 minutes. Stir in the ground beef and cook, stirring occasionally, until no longer pink, about 5 minutes. Stir in the worcestershire sauce, diced tomatoes, cream cheese, relish, scallions, crisp bacon, salt and pepper. Cook until cream cheese is melted, then remove from heat and let cool.
  • Unroll the pizza dough and cut into 18 squares. Working with one at a time, place about 2 teaspoons shredded cheddar cheese into the center of the dough, then top with about a tablespoon of the beef mixture. Top with a teaspoon of cheddar cheese. Pull the corners of the dough up to meet in the middle and pinch to close. Place the dough, seam side down, about 2 inches apart on prepared baking sheet. Repeat with remaining ingredients.
  • Brush the tops with beaten egg and sprinkle with sesame seeds. Bake for 25 minutes until golden. Serve on a bed of shredded lettuce with relish, mustard and ketchup on the side.

3 tablespoons dill pickle relish
3 tablespoons yellow mustard

1 teaspoon garlic powder
1 (16.3 ounce) package refrigerated biscuit dough (such as Pillsbury Grands!®)
5 ounces Cheddar cheese
2 teaspoons sesame seeds
⅓ cup ketchup

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Coat 16 cups of 2 muffin pans with cooking spray.
  • Heat a large skillet over medium heat. Add ground beef, bacon, onion, salt, and pepper and cook, stirring, until beef is browned, about 6 minutes. Drain fat, and stir in dill pickle relish, mustard, BBQ sauce, and garlic powder. Set filling aside to cool.
  • Separate each biscuit dough portion in half to get 16 biscuits, stretching and pulling each into a circle about 1/4 inch thick. Spoon about 2 tablespoons of the ground beef mixture into the center of each dough circle. Cut cheese into 16 cubes and insert each cube into the ground beef mixture. Wrap dough around the filling in the shape of a ball and pinch edges on the bottom together so biscuits are sealed around the filling.
  • Set each biscuit seam side down in a muffin cup. Lightly spray the biscuit tops with cooking spray and sprinkle with sesame seeds.

2 slices uncured bacon
1 medium yellow onion, halved and thinly sliced (about 5 ounces)
Fine sea salt and freshly ground black pepper
1 pound ground beef
1 romaine heart, chopped (about 4 cups)
1 cup cherry or grape tomatoes, halved
1 medium avocado, diced
1 small half-sour pickle, chopped (about 1/2 cup)
1 ounce sharp Cheddar cheese, shredded (1/4 cup)

Steps:

  • For the dressing: Whisk the mayonnaise, ketchup, horseradish, coconut aminos, hot sauce and paprika together in a small bowl.
  • For the salad: Place the bacon in a medium skillet over medium-low heat. Cook, turning occasionally with tongs, until the bacon is golden, 10 to 12 minutes. Transfer to a plate.
  • Add the onions to the same skillet with the bacon fat, sprinkle with 1/4 teaspoon salt and cook, stirring occasionally, until the onions are golden brown, watching carefully and stirring more often toward the end of cooking time to prevent burning, 12 to 15 minutes. Using tongs, transfer the onions to a bowl and cover to keep warm.
  • Add the beef to the same skillet with the remaining fat, sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper, raise the heat to medium-high and cook, stirring and breaking up the meat, until it is cooked through and browned, 6 to 8 minutes.

1 envelope onion soup mix
1 pound ground beef
2 tablespoons all-purpose flour
2 tablespoons 2% milk
1 cup shredded cheddar cheese
4 bacon strips, cooked and crumbled
COATING:
2 large eggs
1 cup crushed saltines (about 30 crackers)
5 tablespoons canola oil

Steps:

  • In a large bowl, combine egg and soup mix. Crumble beef over mixture and mix well. Divide into 36 portions; set aside. In another large bowl, combine the flour and milk until smooth. Add cheese and bacon; mix well. , Shape cheese mixture into 36 balls. Shape one beef portion around each cheese ball. In a shallow bowl, beat eggs for coating. Place cracker crumbs in another bowl. Dip meatballs into eggs, then coat with crumbs. , Heat oil in a large cast-iron or other heavy skillet over medium heat. 1 (16 1/3 ounce) can pillsbury grands original biscuits or 1 (16 1/3 ounce) can buttermilk biscuits
1 lb lean ground beef, cooked or 16 meatballs
8 ounces cheddar cheese, cut into 16 cubes
16 slices bacon
long toothpicks or skewer
canola oil (for frying)

Steps:

  • Separate dough into 8 biscuits. Cut each biscuit in half; press with hands into circle about 3 inches in diameter.
  • In center of each biscuit round, place 2 tablespoons cooked ground beef (or 1 meatball) and 1 cube of cheese. Wrap dough to completely enclose beef and cheese; pinch seams to seal.
  • For the Fried Version: Wrap each stuffed "bomb" with 1 bacon slice; gently secure loose bacon with toothpick by inserting it through bacon and halfway into "bomb." In 3-quart heavy saucepan or deep fryer, heat oil to 350°F Fry stuffed "bombs" 4 to 5 minutes or until dough is golden brown on all sides. Place on paper towels to cool.   • For the Baked Version: Heat oven to 400°F Place bacon on foil-lined cookie sheet with sides. Bake about 8 minutes to partially cook bacon. Wrap each stuffed "bomb" with 1 slice partially cooked bacon slice. Place bacon wrapped dough 2-inches apart on two foil-lined cookie sheets with dough seam side down. Bake 13 to 15 minutes or until golden brown. Serve warm with ketchup and mustard, if desired.

1 lb pizza dough, left out at room temperature for 15-20 minutes
7 slices american cheese, cut in half
14 frozen mini meatballs, thawed
¼ cup baking soda
5 cups water
1 egg, beaten
coarse sea salt
yellow mustard, for serving (optional)

Steps:

  • Preheat the oven to 425˚F (220˚C). Line a baking sheet with parchment paper.
  • Cut the pizza dough into 14 evenly sized pieces. Working one at a time, stretch out a piece of dough into a long strip, about 8 inches (20 centimeters) long.
  • Place a piece of cheese at the top, followed by a meatball, and roll up the cheese and meatball in the dough. Rotate halfway through rolling to ensure you are completely encasing the cheese and meet in the dough. Pull tightly and use any remaining slack to cover any possible gaps/holes. Press the dough into itself to seal and place on the prepared baking sheet. Repeat with the remaining dough, cheese, and meatballs.
  • In a medium saucepan over high heat, bring the 5 cups of water to a boil. Once boiling, add the baking soda and stir to dissolve. Return the pot to a boil.
  • In batches (about 3-5 at a time), add the rolled dough balls to the pot and boil for 20-30 seconds, stirring gently. Remove and dab on paper towels before placing back on the baking sheet. Repeat with remaining dough balls.
  • Brush each boiled ball with beaten egg, then sprinkle with coarse sea salt.
  • Bake for 15-20 minutes, until the outsides have browned. Serve warm with mustard, if desired.
