POTATO SKINS BAR

Steps:
- Preheat the oven to 400 degrees F.
- Wash the potatoes and rub the skins liberally with vegetable oil. Put the potatoes on a baking sheet and bake until fork-tender, 45 minutes to 1 hour.
- Slice the baked potatoes in half lengthwise, then scrape out the inner flesh with a cookie scoop or spoon, leaving a small margin of potato in the skins. Brush both sides of the potato skins with vegetable oil. Salt both sides liberally. Place the skins cut-side down on the baking sheet and return to the oven. Bake for 7 minutes, then flip the skins to the other side. Bake until the skins are crispy, about 7 minutes more.
- Meanwhile, fry the bacon in a skillet until crisp, then remove to a paper towel-lined plate to cool.
- When ready to serve, chop the bacon into bits and transfer to a small bowl. Put the cheese, ham, salsa, sour cream, ranch and chives in separate bowls. Lay out the fixings, put the skins on a platter and have everyone help themselves at the skins bar.

- Place potatoes in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Drain; cool for 10 minutes., In a small bowl, combine the flour, eggs, sour cream, 1 tablespoon butter and salt. Spoon over potatoes and toss to coat. Place half of the potato mixture in a greased 13x9-in. baking dish; top with half of the cheese. Repeat layers., Toss bread crumbs with remaining butter; sprinkle over the top. Bake, uncovered, at 350° for 1 hour or until a thermometer reads 160° and potatoes are tender. Sprinkle with bacon.

- Heat oven to 350°F. Lightly spray 9- or 8-inch square pan with cooking spray.
- In large bowl, stir together cookie mix, oil, syrup and egg until soft dough forms. Reserve 1/4 cup bacon for garnish. Stir remaining bacon and peanuts into dough. Press evenly in pan.

- Grease a 9x9 inch square pan.
- Melt butter in large saucepan over medium heat. Stir in brown sugar and vanilla. Mix in the oats. Cook over low heat 2 to 3 minutes, or until ingredients are well blended. Press half of mixture into the bottom of the prepared pan. Reserve the other half for topping.
- Meanwhile, melt chocolate chips and peanut butter in a small heavy saucepan over low heat, stirring frequently until smooth. Pour the chocolate mixture over the crust in the pan, and spread evenly with a knife or the back of a spoon.
- Crumble the remaining oat mixture over the chocolate layer, pressing in gently. Cover, and refrigerate 2 to 3 hours or overnight. Bring to room temperature before cutting into bars.

- Preheat oven to 400 degrees F (200 degrees C). Place a baking rack on top of a large baking sheet.
- Thread each slice of bacon onto a skewer; place skewered bacon on the baking rack.
- Bake bacon in the preheated oven until crisp; 20 to 25 minutes. Remove from oven and cool completely.

- Preheat oven to 375 degrees. In a medium bowl, whisk together flour, baking soda, and salt. Beat together butter and sugars with a mixer on medium-high until fluffy, about 2 minutes. Add vanilla and egg, and beat on medium until combined.

Add the pretzels to a food processor or blender and process until you have fine crumbs. Stir in the melted butter and sugar until combined. Line a 9x9-inch baking dish with foil and press the pretzel crumbs into the pan to form a loose crust on the bottom. Top the pretzels with the chopped bacon and chocolate chips. Add the potato chips to a bag and use a rolling pin to crush them into small pieces. Sprinkle over the chocolate chips. Drizzle the can of sweetened condensed milk over everything and place the pan in a preheated 350 degree oven for 20 minutes. Let cool on the counter for 20 minutes before chilling completely in the fridge. Once the bars are cooled completely, melt the peanut butter in a microwave safe bowl. Drizzle the melted peanut butter over the pan. Remove from the pan by lifting the edges of the foil out. Cut into 12 bars and serve.
