Number Of Ingredients 12

2 slices day old white bread, torn into small pieces or 1/2 cup plain breadcrumbs, preferably homemade
2 yellow onions, finely chopped (11/2 cups)
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
3 tablespoons Worcestershire sauce
1/4 cup low-sodium chicken broth
3/4 cup ketchup
1 tablespoon brown sugar
2 pounds coarsely ground chuck, preferably 85 percent lean
1 large egg, lightly beaten
1 1/2 cups grated cheddar
8 slices (6 ounces) bacon

Steps:

  • Preheat oven to 350 degrees. Tear bread into pieces; pulse in a food processor to make fine crumbs (or use plain breadcrumbs) set aside.P
  • Cook the Onions: Pulse onion in food processor until finely chopped (or do so by hand). Heat 2 tablespoons olive oil in a large skillet over medium-high. Add onion and 1 teaspoon kosher salt to skillet; cook, stirring occasionally, until onion is softened, about 8 minutes. Stir in Worcestershire sauce, broth, and 1/4 cup ketchup. Remove from heat; let cool completely.
  • Prep the Meat and Glaze: In a small bowl, stir together 1/2 cup ketchup and brown sugar for glaze; set aside. In a large bowl, combine onions with ground chuck, 1 egg, 1/2 cup reserved breadcrumbs, 2 teaspoons salt, and 1/2 teaspoon freshly ground pepper. Mix with your hands until well combined. Gently fold in cheddar.
  • Bake and Let Cool: On a rimmed baking sheet, form meat mixture into a loaf that's 10 inches long, 4 inches wide, and 2 inches high, packing firmly to prevent cracking. Coat top and sides with 1/2 of glaze, then top with bacon, overlapping slices slightly. Brush remaining glaze over bacon. Bake until top is caramelized and a thermometer inserted into thickest part registers 165 degrees, 55 to 65 minutes. (If top is browning too quickly, tent with foil.) Let cool at least 25 minutes.

5 slices bacon
1 stalk celery, diced
1 cup fine bread crumbs
1 cup milk
3 eggs
1 teaspoon Worcestershire sauce
1 teaspoon ground black pepper
½ teaspoon onion powder
1 pound ground beef
1 pound ground pork
⅓ cup ketchup
3 tablespoons brown sugar
1 tablespoon dry mustard
½ teaspoon Worcestershire sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
  • Heat remaining bacon grease over medium-high heat. Saute celery in hot grease until soft but not browned, about 5 minutes. Set aside.
  • Combine bread crumbs, milk, eggs, 1 teaspoon Worcestershire sauce, black pepper, onion powder, and sauteed celery in a large bowl. Mix well.
  • Crumble beef and pork into egg mixture and mix together using your hands, making sure not to overmix. Form into a loaf and place into the prepared loaf pan. Place the bacon slices along the top of the loaf long-ways.
  • Bake in the preheated oven on the middle rack for 30 minutes.
  • While the meat is cooking, combine ketchup, brown sugar, dry mustard, and Worcestershire for glaze in a small bowl; mix well.
  • Remove loaf from the oven and drain any fat bubbling around edges and on top. Return to the oven and continue to bake for 25 minutes more. Remove once more, drain fat again, and spoon or brush glaze mixture evenly over the top. Increase oven temperature to 400 degrees F (200 degrees C).
  • Return loaf to the preheated oven and continue to bake until no longer pink in the center, about 20 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let sit for at least 10 minutes before cutting and serving.

2 eggs
2 tablespoons ketchup
1 cup dry bread crumbs

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Combine ground beef, eggs and 2 tablespoons of ketchup in a large bowl. Mix well, then add bread crumbs, Parmesan cheese, garlic powder, salt, oregano, basil, pepper, and onion. Set mixture aside. Line the bottom of a 9x13 inch pan with bacon, widthwise. Place half of the meat mixture across the top of the bacon. Lay 3 of the 4 pieces of Cheddar cheese across the center of the meat, lengthwise. Cover the cheese with the second half of the meat mixture and mold the meat into a loaf shape. Pull the ends of the bacon up and around the loaf. Spread 1 tablespoon of ketchup thinly over the loaf.
  • Bake in the preheated oven until no longer pink in the center, about 60 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Remove from the oven.
  • Cut the final piece of Cheddar cheese into slices and place on top of the meat loaf. Return the meat loaf to the oven and continue baking until the cheese is melted, about 5 minutes. Remove from the oven and allow the meat loaf to rest for 5 minutes before serving.

1 tablespoon Dijon mustard
1/2 teaspoon hot sauce

8 ounces ground pork

Steps:

  • Preheat oven to 400 degrees F.
  • Cook bacon in a medium nonstick skillet over medium-low heat, until crispy and fat renders, about 10 minutes. Remove bacon with a slotted spoon to a paper towel-lined plate, reserving renderings in the skillet. Cook the onions and garlic in the pan drippings until brown, about 15 minutes. Let cool.

This is my dad's meatloaf recipe, that we've spent years "perfecting." This meatloaf is a huge crowd pleaser-- popular with anyone who loves cheese and bacon! My Dad did this meatloaf on the grill in a cast iron pan, but it's just as good in the oven!

2 lbs ground beef
1 cup Italian seasoned breadcrumbs
1 small yellow onion, diced
8 ounces sharp cheddar cheese (cut into fourths)
6 slices bacon
2 eggs
3 tablespoons ketchup
1 tablespoon parmesan cheese
1 teaspoon garlic powder
1 teaspoon kosher salt
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon pepper

Steps:

  • Preheat oven to 375 degrees.
  • In a large bowl combine ground beef with eggs and 2 tablespoons ketchup.
  • Once beef mixture is well mixed, add dry ingredients: breadcrumbs, Parmesan cheese, garlic, salt, oregano, basil, and pepper. Followed by the diced onions.
  • Set mixture aside.
  • In 9x13 pan, line the bottom of the pan with the strips of bacon-- the width, not the length of the pan (you can use a loaf pan, but I warn you, the meatloaf is greasy, and the loaf pan can get very full).
  • Take half of the meat mixture and pat it across the top of the bacon. This should be the bottom part of your loaf. Take THREE of the four pieces of cheddar cheese and place them across the center of the meat mixture (this will be your cheesy center!).
  • Take the second half of the meat mixture and add it on top of your cheese. Mold the meat into a loaf shape. The cheese should be completely covered and in the center of the loaf.
  • Finally, pull the bacon and wrap it around the loaf. Take your final tablespoon of ketchup and thinly spread it across the top of meatloaf.
  • Put meatloaf in oven and cook for 60 minutes.
  • Take final quarter of cheddar cheese and cut in to slices.
  • Place these final cheese slices on top of the meatloaf, and put meatloaf back into oven until the cheese is melted (approximately 5 minutes.) Let meatloaf sit for a few minutes to cool before serving.

1 (27 g) packet onion soup mix
3 tablespoons chopped pickled jalapeno peppers

Steps:

  • Heat the oil in a fry pan, add the bacon, onion and garlic and cook over a moderate heat until the onion is softened.
  • Remove from the heat.
  • Mix the remaining ingredients and the onion, bacon mix together in a large bowl-I find this best done by hand.
  • Place in a 9inch long by 3 inch wide and deep loaf dish, patting down very firmly and shaping the top nicely.
  • Bake in a moderate oven for 1 1/2 hours, draining any accumulated fat about half way through.
  • Mix the topping ingredients together, spread over the meatloaf and return to the oven for the final 30 minutes of cooking.
  • Allow the meatloaf to stand about 10 minutes before slicing.

This is certainly not a sad, gray blob of ground meat. This Scotch egg-inspired meatloaf will elicit shock and awe - when you slice into it, you'll reveal perfectly cooked eggs. It's magic! In addition to classic ketchup, I added gochujang, a sweet-spicy Korean fermented chile paste, which creates the meatloaf's gorgeous glaze. It is also used in a bacon jam for an extra pop of flavor.

Nonstick cooking spray
4 large eggs
1/2 cup ketchup
1/2 cup gochujang
1/2 pound (8 ounces) ground beef
1/2 pound (8 ounces) ground pork
1 cup panko
1 cup shredded yellow Cheddar
1 large egg, beaten
1/2 cup thinly sliced scallions, plus more for garnish (4 to 5 scallions)
1/2 cup finely diced red bell pepper (about 1 small pepper)
Kosher salt and freshly ground black pepper
1 pound bacon, cut into 1/2-inch pieces (freezing for 20 minutes or cutting with shears will help)
1 large red onion, halved and thinly sliced (about 4 cups)
2 tablespoons gochujang
1/2 cup orange juice
1/4 cup maple syrup
2 tablespoons rice wine vinegar
Kosher salt and freshly ground black pepper

Steps:

  • For the meatloaf: Fill a medium sized saucepan 3/4 of the way with hot water and bring to a boil over high heat. Preheat the oven to 375 degrees F. Line an 8-by-4-inch loaf pan with 2 pieces of foil leaving an overhang on all sides, creating handles. Spray the foil-lined pan with nonstick cooking spray.
  • Fill a medium bowl with cold water and a cup of ice cubes and set aside. Turn the boiling water down to a simmer and place the eggs into the water, one at a time. Boil for exactly 7 minutes. Using a slotted spoon, remove each egg to the ice bath. When cool enough to handle, gently tap the egg against a countertop or cutting board to crack the shell. Carefully peel away the shell and discard. Set the peeled eggs aside
  • Whisk together the ketchup and gochujang in a small bowl. Set aside.
  • In a large bowl, combine the ground beef, pork, breadcrumbs, egg and 1/4 cup of the gochujang-ketchup mixture. Fold in the scallions, bell pepper and shredded Cheddar. Add a healthy crack of black pepper and a 4-finger pinch of salt (about 2 teaspoons).
  • Put 1/3 of the meatloaf mixture into the bottom of the prepared loaf pan. Line up the soft-boiled eggs upright in the pan, pressing them lightly into the meat and spacing 1/8 inch apart. Press the remaining meatloaf mixture between and around the eggs encasing them completely.
  • Brush 1/4 cup of gochujang-ketchup glaze over the meatloaf. Reserve the remaining glaze for serving.
  • Bake the meatloaf for 60 to 75 minutes. Meanwhile make the jam.
  • For the bacon-gochujang jam: Heat a large, heavy-bottomed pot or high-sided skillet, over medium-high heat. Add the bacon and cook, stirring often, until golden-brown and crispy, 8 to 10 minutes. Drain out some bacon fat, reserving about 1 tablespoon in the skillet.
  • Add the sliced onions, season with 1 teaspoon salt and plenty of freshly ground black pepper. Stir to combine and coat the onions in bacon fat. Cook over medium-high heat, stirring every few minutes, until slightly caramelized and starting to brown, about 10 minutes. Turn the heat to low and add the gochujang. Stir to coat the onion mixture and cook for 1 minute. Add the orange juice, maple syrup and vinegar. Simmer on low, stirring occasionally, until the onions are jammy and the liquid has reduced, about 30 minutes. Season to taste with salt.
