Ranch, for serving

Steps:

  • Preheat oven to 400°. Line a medium baking sheet with aluminum foil and fit with a metal cooling rack.
  • Cut onion into 1/2" rings, then separate every other ring, so that each ring contains two rounds of onion. Stir together brown sugar and cayenne pepper on a large shallow plate, then lay bacon on mixture to coat. Wrap doubled up rings with bacon, then set on baking sheet. Bake 30 to 35 minutes, or until bacon is crisp and golden. Serve with Ranch, if using.

Steps:

  • Preheat oven to 400°F. Prepare a medium baking sheet lined with aluminum foil and fit with a metal cooling rack.
  • Cut onion into 1/2" rings, then separate every other ring, so that each ring contains two rounds of onion.
  • Add brown sugar and cayenne pepper to a large shallow plate, mix to combine. Lay bacon on mixture to coat.

2 large sweet onions
dry rub seasonings (like McCormick Grill Mates)
2 lbs thinly-sliced bacon
prepared barbecue sauce
1/2 cup mayonnaise
2 tablespoons sriracha sauce
2 teaspoons lime juice
1/2 teaspoon paprika
salt, to taste
pepper, to taste

Steps:

  • Slice onions into 1/2 inch thick slices and separate into rings. Dust with dry spice rub of your choice.
  • Wrap each ring with a slice of bacon, smaller rings may need only 1/2 slice. Secure the bacon with a toothpick.
  • Sear the wrapped onion rings directly over hot coals for about 1 minute per side, then move to the cooler side of the grill and cook, covered, for about an hour or until the bacon is crispy.
  • Mix the Dipping Sauce ingredients and set aside.
  • When the bacon is crispy, brush with barbecue sauce and continue to cook for about 15 minutes, to set the sauce.

100g plain flour , plus 2 tbsp
125ml sparkling water
½ tsp fast-action dried yeast
3 thyme sprigs , leaves picked and chopped
1 large red onion
3 tbsp white wine vinegar
2 tbsp golden caster sugar
rapeseed, vegetable or sunflower oil , for frying
3 rashers crispy bacon (We used ready- cooked from the deli meats section in the supermarket)
1 tsp sweet paprika
4 tbsp mayonnaise

Steps:

  • Put the 100g flour, the sparkling water, yeast, thyme and a good pinch of salt in large bowl and whisk to a smooth batter. Cover the bowl and set aside to rest for 1 hr. Meanwhile, slice the onion into 0.5cm slices and pop out the layers into rings. Place in a bowl with the vinegar, sugar and a good pinch of salt, and toss until well coated. Cover and set aside for at least 1 hr. (If you want to prepare ahead, the batter and onions can be made up to 8 hrs before cooking, then chilled.)
  • To make the bacon mayo, break the crispy bacon into pieces and pound to a breadcrumb texture using a pestle and mortar. Add the paprika and mayonnaise, mix well, then transfer to a bowl and chill until ready to serve.
  • Pour enough oil into a large pan to come halfway up the sides - it should be at least 10cm deep (make sure you have a lid close to hand in case the oil catches fire). Heat the oil to 170C, using a cooking thermometer to keep the temperature consistent. Drain the onion rings, pat dry on kitchen paper, then toss in the 2 tbsp flour. When you're ready to fry, make sure you have a plate lined with kitchen paper to hand. Give the batter a whisk, adding a splash more water if it has become very thick. Dip each onion ring into the batter to coat, then drop into the hot oil. Cook the onion rings in batches of 6-10 (depending on the size of your pan) - make sure you don't overcrowd the pan or the onion rings will stick together. When crisp and golden, scoop the onion rings out and transfer to the plate to drain. Sprinkle each batch with a little salt as they come out of the frying pan. Serve straight away with the mayo for dunking.

1 large white onion
6 strips bacon, cooked, divided
2 store-bought macaroni and cheeses, 20 ounces (465 G)
2 qt vegetable oil, for frying
2 cups bread crumbs
1 ½ teaspoons kosher salt
1 teaspoon garlic powder
½ teaspoon freshly ground black pepper
2 cups all purpose flour
6 large eggs, beaten
warm marinara sauce, for serving
ranch dressing, for serving

Steps:

  • Line a rimmed baking sheet with parchment paper.
  • Slice the onion into ½-inch (1.24 cm) thick rounds. Separate the rings and arrange on the prepared baking sheet.
  • Roughly chop 4 slices of bacon and add to a medium bowl, along with the macaroni and cheese. Stir to combine.
  • Fill each onion ring with a generous spoonful of the bacon macaroni and cheese. Transfer to the freezer for at least 1 hour, or until fully hardened.
  • Heat the oil in a large pot over medium heat until it reaches 350°F (180°C). Set a wire rack inside another rimmed baking sheet.
  • Finely chop the remaining 2 slices of bacon and add to a medium bowl with the bread crumbs, salt, garlic powder, and pepper. Stir until well combined.
  • Add the flour and eggs to 2 separate bowls.
  • Coat a frozen onion ring in the flour, shaking off excess, then into the egg, then the bread crumbs, then back into the egg and bread crumbs once more. Set on the wire rack and repeat with the remaining onion rings.
  • Working in batches of 2-3 at a time, fry the onion rings in the hot oil for 3-4 minutes, until deep golden brown in color and the macaroni and cheese is warmed through.
  • Serve the onion rings warm with marinara sauce and ranch dressing for dipping, if desired.
