Categories     Main Course

Time 30m

Number Of Ingredients 8

4 boneless (skinless chicken breasts)
1½ cups Ranch dressing
½ cup sour cream
1-1½ cup grated Parmesan cheese (divided)
Kosher salt
Freshly grated black pepper
1/4 cup cooked bacon crumbles
Garnish: diced fresh parsley

Steps:

  • Heat oven to 375°F and spray an 8 x 11-inch baking dish with cooking spray.
  • If the breasts are uneven in thickness, pound them to an even 1" thickness using a meat pounder.
  • Sprinkle both sides of meat with half the grated Parmesan cheese, salt and freshly ground black pepper. Place the chicken in the prepared baking dish.
  • In a medium bowl, whisk together Ranch dressing and sour cream. Pour the mixture over the chicken breasts and sprinkle with remaining Parmesan cheese.
  • Bake at 375°F for 20-30 minutes or until a meat thermometer inserted in the thickest part of the breast reads 150°F.
  • Set oven to broil and broil the breast an additional 2-4 minutes or until the chicken turns golden. It will burn quickly so watch closely.
  • The chicken is cooked through when the thermometer reads 160°F when inserted in the thickest part of the middle breast.
  • Remove from the oven and sprinkle with cooked bacon crumbles. Allow the chicken to rest a few minutes before serving.
  • Garnish with diced parsley, if desired.
  • Enjoy!

Chicken Bacon Ranch Casserole image

Tastes just like chicken bacon ranch pizza. Serve with salad, garlic bread, or French fries. Might be good with onions.

Provided by Luke M.

Categories     Meat and Poultry Recipes     Chicken     Chicken Breast Recipes     Pasta

Time 2h3m

Yield 12

Number Of Ingredients 9

2 pounds skinless, boneless chicken breasts
1 (1 ounce) package dry ranch dressing mix (such as Hidden Valley Ranch®)
1 pound bacon
1 green bell pepper, chopped
2 (15 ounce) jars Alfredo sauce, divided
⅓ cup milk
2 cloves garlic, minced
1 (16 ounce) package penne pasta
4 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper. Arrange chicken on the baking sheet.
  • Bake chicken in the preheated oven until no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Dice chicken and place in a bowl; add ranch mix and stir until coated.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserving bacon grease in the skillet. Crumble bacon into small pieces.
  • Heat reserved bacon grease in the skillet; cook and stir bell pepper until slightly tender, 2 to 3 minutes. Add chicken, 1 jar Alfredo sauce, milk, and garlic; cook and stir until heated through, about 5 minutes.
  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Pour 1/2 the jar of remaining Alfredo sauce into a casserole dish; top with 1/2 of the penne, 1/2 of the chicken mixture, 1 1/2 cup mozzarella cheese, and 1/2 of the bacon. Repeat layering with remaining ingredients in the same order ending with 1 cup mozzarella cheese and bacon on top.
  • Bake in the preheated oven until casserole is bubbling and cheese is lightly browned, about 30 minutes.

BACON-RANCH CHICKEN ENCHILADAS

Bacon-Ranch Chicken Enchiladas image

Not authentically Mexican in the slightest, but holy buckets are they good! Great way to use up leftover rotisserie chicken.

Provided by krimille

Categories     World Cuisine Recipes     Latin American     Mexican

Time 40m

Yield 6

Number Of Ingredients 15

cooking spray
2 tablespoons olive oil
¼ cup chopped yellow onion
½ leftover rotisserie chicken, chopped
¼ cup crumbled cooked bacon
2 tablespoons roasted garlic
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
1 bunch green onions, chopped
2 tablespoons ranch dressing
2 tablespoons sour cream
15 (6 inch) corn tortillas, or more to taste
2 cups shredded Cheddar-Monterey Jack cheese blend
1 cup mild enchilada sauce

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Spray a 9x12-inch brownie pan with cooking spray.
  • Heat olive oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes. Stir in chicken, bacon, and roasted garlic. Season with salt, pepper, and garlic powder. Stir in green onions.
  • Mix ranch dressing and sour cream together in a small bowl. Remove chicken mixture from heat and stir just enough ranch mixture into the skillet to barely coat chicken.
  • Hold 1 tortilla and spoon 2 tablespoons chicken mixture across the middle. Sprinkle 1 tablespoon Cheddar-Monterey Jack cheese blend over chicken and roll tortilla up. Place filled tortilla, seam-side down, against the short end of the pan so it does not unroll. Repeat with remaining tortillas and filling until pan is jammed full of enchiladas.
  • Pour enchilada sauce on top of filled tortillas to cover without drowning them. Sprinkle remaining Cheddar-Monterey Jack cheese blend generously on top of everything.
  • Bake in the preheated oven until bubbly on top, about 15 minutes.

CHICKEN-BACON NUGGETS

Chicken-Bacon Nuggets image

My hubby found this in a copy of Southern Living at work. These are super easy and great tasting little appetizers. If you want, you can use reduced-sodium bacon and lite soy sauce to cut back on the sodium. I don't think they need any dipping sauce as the marinade provides a tangy/sour/sweet flavor. Cooking time includes marinade time.

Provided by Troop Angel

Categories     Chicken Breast

Time 2h27m

Yield 6 serving(s)

Number Of Ingredients 9

2 large boneless skinless chicken breasts
8 bacon, slices cut into thirds
1/2 cup orange marmalade
1/4 cup soy sauce
2 tablespoons sesame oil
1 teaspoon ground ginger

vegetable oil cooking spray
wooden toothpick

Steps:

  • Cut chicken breasts into 24 1-inch cubes.
  • Wrap each chicken cube with bacon and secure with a wooden toothpick.
  • Stir together orange marmalade, soy sauce, sesame oil, ground ginger and minced garlic in a shallow dish or large zip-top freezer bag; add chicken nuggets.
  • Cover or seal, and chill 2 hours, turning occasionally.
  • Coat a rack and broiler pan with cooking spray.
  • Place chicken nuggets on rack in broiler pan.
  • Bake at 450°F for 10 minutes; turn nuggets and bake 10 more minutes.

CHICKEN NUGGET BACON RANCH CLUB

Chicken Nugget Bacon Ranch Club image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 35m

Yield 6 sandwiches

Number Of Ingredients 16

2 large eggs
2 cups panko breadcrumbs
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1 cup all-purpose flour
1 tablespoon seasoned salt
1/4 teaspoon lemon pepper
2 boneless, skinless chicken breasts, cut into 1 1/2-inch pieces
Vegetable oil, for frying
6 crusty rolls, such as kaiser rolls, split
1/2 cup ranch dressing
6 leaves butter lettuce
12 slices applewood-smoked bacon, cooked crisp, then cut in half
30 dill pickle slices
3 tomatoes, sliced thick
1/4 cup ketchup

Steps:

  • For the chicken nuggets: Whisk the eggs together with 2 tablespoons water in a shallow bowl or dish.
  • Put the panko in a separate shallow bowl or dish and season with 1 teaspoon kosher salt and 1/2 teaspoon pepper. Mix together with a fork to evenly combine.
  • Put the flour in a gallon-sized resealable plastic bag along with the seasoned salt, lemon pepper and remaining 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper. Seal the bag and shake to combine.
  • Open the bag and add the chicken. Seal and shake to coat the chicken well.
  • Open the bag and begin to coat the nuggets in batches. First, dip a few pieces in the egg wash until coated, then roll in the seasoned panko, pressing the panko evenly into the chicken to make sure it adheres. Work in batches until all the nuggets are coated, placing coated nuggets on a plate.
  • Heat 2 inches oil over medium-high heat in a large, heavy-bottomed Dutch oven until it reaches 325 degrees F. Line a plate with paper towels.
  • Fry the nuggets in 2 batches, flipping once halfway through, until golden brown and completely cooked through, about 3 1/2 minutes per batch.
  • Remove each batch with a slotted spoon or a fish spatula to the lined plate and allow the nuggets to drain.
  • For the sandwiches: Spread the roll bottoms with 1 tablespoon ranch dressing each. Lay 1 piece of butter lettuce on the dressing. Lay 4 pieces of bacon (2 full slices) on the lettuce. Place 4 to 6 chicken nuggets on the bacon. Top with a layer of pickles, then drizzle with a touch more ranch dressing. Top with 2 slices of tomato. Squeeze ketchup on the lids of the sandwiches and close them.

BACON RANCH CHICKEN NUGGETS

Bacon Ranch Chicken Nuggets image

My first recipe post. A simple appetizer that can be prepared in under 15 minutes. The first batch is ready to eat in 20 minutes. They might taste great cold, but I've never seen one cool off.

Provided by catnhatnh

Categories     Chicken

Time 20m

Yield 24-32 Nuggets, 8-10 serving(s)

Number Of Ingredients 3

1 1/2-2 lbs boneless chicken breasts
1 (1 ounce) envelope hidden valley ranch dressing mix (or equivalent)
2 (1 lb) packages thick sliced hickory smoked bacon

Steps:

  • Preheat deep fryer to 350 degrees.
  • Cut breasts to 1" to 1 1/4 inch pieces as close to cubes as possible. The important thing is that all weigh as close as possible and do not exceed an ounce by too much.
  • If nuggets are very wet, pat with a paper towel. Place nuggets in plastic ziploc bag and add ranch dressing mix. Seal bag and shake to coat.
  • Cut raw bacon in half. Wrap nugget tucking in any loose ends to make then as near a ball shape as possible. Crosspin the bacon in place with a toothpick.
  • Depending on fryer capacity you should add 5-8 nuggets at a time and fry 3 1/2 to 5 minutes until nuggets just begin to float.
  • Drain on paper towels and cut the largest nugget in half to test doneness or check with thermometer probe (quick response type) and adjust cooking time.
  • A properly cooked nugget will show bacon done medium and herbed white meat with browned highlights.
  • If they need to be served by the full batch they can hold in a 150-175 degree oven covered with a moistened (not dripping) paper towel.
  • These can be served plain or with any dipping sauce (sweet and sour, bbq, salsa, etc.).
