They say smell is the sense most closely linked to memory recall, and that was certainly the case while making these garlicky, buttery bay scallops on toast. As waves of the wonderful aromas wafted up from the pan, they brought back a flood of vivid memories of my first kitchen job.

4 thick slices Italian bread, toasted
2 tablespoons butter
1 ½ tablespoons olive oil
1 ½ pounds fresh or frozen bay scallops, thawed, rinsed and patted dry
4 cloves garlic, minced
½ cup white wine
2 tablespoons lemon juice
¼ cup chopped fresh flat-leaf parsley
4 tablespoons cold butter, cut into cubes
1 pinch cayenne pepper
1 pinch salt and ground black pepper to taste

Steps:

  • Spread 1/2 tablespoon butter on one side of each piece of toasted Italian bread. Set aside.
  • Heat olive oil in a skillet over high heat. When oil begins to smoke, pour scallops into pan. Cook for 30 seconds without stirring.
  • Toss scallops in pan and stir in garlic. Cook and stir until fragrant, about 30 seconds.
  • Stir wine and lemon juice into scallops, bring to a boil, and cook for about 30 seconds.
  • Stir parsley and cold butter into scallops and remove from heat. When butter melts, stir in salt, black pepper, and cayenne pepper.
  • Spoon scallops over buttered toast and serve immediately.

4 slices bacon, diced
1 lb scallops
kosher salt & freshly ground black pepper, to taste
1/2 cup unsalted butter
3 garlic cloves, minced
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon crushed red pepper flakes
2 tablespoons chopped fresh parsley leaves

Steps:

  • Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy about 6-8 minutes. Drain excess fat; reserving 1 tablespoon in the skillet. Transfer bacon to a paper towel-lined plate.
  • Remove the small side muscle from the scallops, rinse with cold water and thoroughly pat dry. Season scallops with salt and pepper, to taste. Working in batches, add scallops to the skillet in a single layer and cook, flipping once, until golden brown and translucent in the center, about 1-2 minutes per side. Set aside and keep warm.
  • Melt butter in the skillet. Add garlic, oregano, basil and red pepper flakes season with salt and pepper, to taste. Cook, stirring frequently, until fragrant, about 1-2 minutes. Stir in bacon and scallops.
  • Serve immediately, garnished with parsley, if desired.

Pan-seared scallops may seem like an intimidating and high-class dish, but it actually doesn't take much to get those savory, buttery flavors right at home in a cast iron skillet. A splash of lemon at the end adds a pleasant hint of acidity, and what better garnish is there than fried bacon?

2 garlic cloves (minced)
1 tbsp parsley (chopped)
4 strips of thick-cut bacon
5 sea scallops
1 tbsp kosher salt
1 tbsp cracked black pepper
2 tbsp unsalted butter
Juice of ½ a lemon

Steps:

  • Mince the 2 garlic cloves and chop around 1 tbsp of parsley, then set aside.
  • Preheat your grill to its highest heat setting, then place a cast iron skillet on the grill.
  • Place 4 strips of bacon on the cast iron and cook to your desired crispiness.
  • While your bacon cooks, season both sides of your scallops with the kosher salt and freshly cracked black pepper.
  • Once your bacon has finished cooking, remove it from the skillet.
  • Chop the bacon to use as garnish.
  • Place your seasoned scallops into the bacon-greased skillet.
  • Let the scallops cook for around 2 minutes on one side.
  • Turn each scallop over. They should be a nicely seared, brown color.
  • Add freshly chopped garlic and unsalted butter to the cast iron skillet.
  • After 2 more minutes of cooking on this side, give the scallops a quick flip so the other side can pick up a hit of butter and garlic.
  • Remove the scallops from the skillet and plate them.
  • Garnish with fresh parsley and chopped bacon.
  • Cut a lemon in half, then squeeze the juices from 1 half over the scallops. All that's left to do is enjoy!

1 tsp. olive oil
5 cloves garlic, minced, divided
18 large sea scallops (1-1/2 lb.), cleaned
9 slices OSCAR MAYER Bacon, cut in half
2 large onions, thinly sliced
1 tub (8 oz.) PHILADELPHIA Cream Cheese Spread
1 tsp. paprika
1 Tbsp. hot pepper sauce
2 Tbsp. milk

Steps:

  • Mix lime juice, dill weed, pepper, oil and 1 Tbsp. garlic until blended. Pour over scallops in shallow glass dish; stir gently to evenly coat scallops with lime juice mixture. Refrigerate 30 min.
  • Heat grill to medium heat. Wrap 1 bacon piece around each scallop; secure with wooden toothpick.
  • Cook onions in large skillet on medium heat 20 min. or until caramelized. Meanwhile grill scallops 15 min. or until scallops are opaque and bacon is crisp, turning frequently. Remove and discard toothpicks.
  • Cook and stir cream cheese spread, remaining garlic, paprika, milk and hot pepper sauce in saucepan on medium heat 3 to 5 min. or until heated through.
  • Spoon onions onto platter; top with scallops and cream cheese sauce.

1 1/2 lbs bay scallops, cut in halves
3 garlic cloves, mashed
1/4 cup butter, melted
10 firm white mushrooms, sliced
onion salt, to taste
freshly grated black pepper
1/3 cup seasoned bread crumbs
1 teaspoon finely minced fresh parsley

Steps:

  • Preheat oven to 375.
  • Wipe scallops with damp paper towel. Mash garlic cloves, add to butter, and stir well to blend. Keep warm.
  • Pour a little of the melted garlic sauce into the bottom of a baking dish, add the mushrooms and season with onion salt and black pepper. Place the scallops on top of the mushrooms. Reserve 1 tablespoon garlic sauce and drizzle the rest on scallops.
  • Sprinkle with bread crumbs, parsley and reserved garlic sauce.
  • Bake in preheated 375°F oven until the top is nicely browned and bubbly hot, for about 10 minutes.
