BACON-SPINACH TURKEY MEATLOAF WITH TOMATO JAM
Relish this turkey loaf made using spinach and bacon. Delicious dinner topped with jam that's made with Muir Glen™ tomatoes.

Steps:
- Heat oven to 350° F. In small bowl, place 1/2 cup of the onion and half of the garlic; reserve for jam. Spray 8-inch skillet with cooking spray; heat over medium-high heat. Add remaining onion to skillet; cook 3 minutes, stirring frequently, until tender. Reduce heat to low; add tomato paste. Cook 2 minutes, stirring occasionally. Remove from heat; stir in remaining garlic.
- Spray broiler pan with rack with cooking spray. In large bowl, mix onion mixture and all remaining meatloaf ingredients. Shape into 8 x 5-inch loaf on rack in broiler pan. Bake 1 hour or until meat thermometer inserted in center of loaf reads 160°F. Let stand 10 minutes.
- Meanwhile, make jam. Spray 10-inch skillet with cooking spray; heat over medium-high heat. Add reserved onion and garlic to skillet; cook 3 minutes, stirring frequently, until golden. Add brown sugar and lemon juice, stirring to loosen browned particles from bottom of skillet. Stir in remaining jam ingredients; break up tomatoes with spoon. Heat to boiling; reduce heat. Simmer uncovered 20 minutes, stirring occasionally, until mixture begins to thicken. Strain jam though fine strainer; discard liquid.
- To serve, cut loaf into 8 slices; top each slice with about 3 tablespoons warm jam.

- Preheat oven to 350.
- Squeeze out excess water out of spinach.
- Use a large egg.
- Mince Garlic.
- In a large bowl, combine all ingredients except bacon. Shape into a loaf and place in a shallow baking dish.
- Arrange bacon across top.
- Bake 1 1/4 hours or until a meat thermometer registers 160.

- In a small skillet, saute onion in oil until tender; set aside. In a small bowl, combine the eggs, milk, lemon juice, salt, basil, oregano and pepper. - In a large skillet, saute the onion, celery and green pepper in oil until tender. Add garlic; cook 1 minute longer. Transfer to a large bowl; cool slightly., Add the egg, horseradish, wine, mustard, Worcestershire sauce, bread crumbs, flour, brown sugar and seasonings. Crumble beef and sausage over mixture and mix well. Pat into an ungreased 9x5-in. loaf pan. Place bacon strips over meat loaf; tuck in ends., Bake, uncovered, at 350° for 55 minutes. A wonderful meat loaf that is fairly easy to make. Pairs well with a variety of side dishes. This can be a meal in itself or can be served with mashed potatoes and biscuits. Surprisingly good cold!

- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
- Mix tomato sauce, tomato paste, ketchup, sugar, onion powder, garlic powder, 1 teaspoon oregano, 1 teaspoon black pepper, and 1 teaspoon Worcestershire sauce in a bowl.
- Place stewed tomatoes in a large bowl; crush tomatoes using a fork. Add turkey, crushed crackers, onion, green bell pepper, eggs, 1 tablespoon oregano, thyme, 2 tablespoons Worcestershire sauce, garlic, and 2 teaspoons black pepper; mix until evenly combined. Spoon meatloaf mixture into the prepared baking dish. Form into a loaf, leaving about 1/2 inch between loaf and sides of dish.
- Spoon half the tomato topping over the loaf.
- Bake in the preheated oven for 45 minutes. Spoon the remaining tomato topping over loaf and top with mozzarella cheese. Bake until no longer pink in the center, 15 to 20 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

My family loves this meatloaf recipe; they beg me to make it. I needed to find a healthy recipe to serve my family because of high cholesterol and diabetes. It isn't dry, it's moist.

Steps:
- Preheat oven to 350°F (wash hands before touching the ingredients).
- In a medium bowl combine ground turkey, breadcrumbs, egg, onion (chopped into small pieces) and barbecue sauce.
- Mix well with hands.
- Spray the inside of a loaf pan with non-stick spray.
- Put mixture in loaf pan and mold it to form a loaf, then spread a light coating of barbecue sauce over the top of the meatloaf and lay the bacon strips on top and bake for 45 minutes.
- Serve.

- Cook the bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. Crumble bacon when cool.
- Stir tomatoes, sweet onion, sugar, apple cider vinegar, salt, black pepper, and hot sauce together in a saucepan and bring to a boil, stirring constantly to dissolve sugar. - Cool and spoon into a 1-pint glass jar with a lid; keeps refrigerated for 1 week or frozen for 2 months. If freezing, put spread into small jars and let jars thaw in refrigerator overnight before using.
