Baked Tortellini with Bacon image

Cheese tortellini get brown and bubbly under the broiler with the help of a simple white sauce and Parmesan cheese. Crisp bacon pieces add even more flavor.

4 slices bacon, sliced crosswise into 1/2-inch pieces
1 small white onion, diced medium
1 garlic clove, minced
Coarse salt and ground pepper
1 tablespoon all-purpose flour
2 cups whole milk
2 packages (8.8 ounces each) cheese tortellini
1/2 cup grated Parmesan (1 ounce)

Steps:

  • Heat broiler, with rack in top position. In a medium saucepan, cook bacon over medium until browned and crisp, about 10 minutes. With a slotted spoon, transfer to a paper towel to drain. Add onion and garlic to pan and season with salt and pepper. Cook, stirring occasionally, until onion is soft, about 8 minutes. Add flour and cook, stirring, 30 seconds.
  • Slowly add milk, whisking constantly. Add tortellini and bring to a boil over medium-high, stirring occasionally. Reduce to a simmer; cook, stirring often, until liquid has thickened, about 4 minutes. Remove from heat; stir in bacon and 1/4 cup Parmesan. Transfer to a 2-quart broilerproof baking dish and top with another 1/4 cup Parmesan. Broil until top is golden brown, 3 to 5 minutes.

1 package, 20 ounces refrigerated cheese tortellini
2 cups small fresh broccoli florets
6 strips bacon, cut into 1-inch pieces
2 garlic cloves, minced
1 tablespoon all-purpose flour
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon coarsely ground pepper
2 cups milk
3/4 cup shredded part-skim mozzarella cheese, divided
3/4 cup grated Parmesan cheese, divided

Steps:

  • Preheat oven to 350F.
  • Cook tortellini according to package instructions. Add broccoli for last 2 minutes of cooking. Drain and set aside.
  • In a large skillet, cook bacon over medium heat until crisp. Remove bacon to a paper-towel lined plate to drain. Drain all but 1 tablespoon of the bacon fat. Reduce heat to medium low and add garlic; cook until fragrant, about 30 seconds. Stir in flour, Italian seasoning, salt and pepper and whisk until the mixture is smooth. Gradually whisk in milk. Bring to a boil, stirring constantly. Once boiling, cook and stir 3 - 5 minutes or until the mixture thickens slightly. Remove heat and stir in 1/2 cup mozzarella and 1/2 cup Parmesan.
  • Add the tortellini, broccoli, and bacon to the sauce and stir to combine. Pour into a large casserole dish and top with remaining 1/4 cup mozzarella and 1/4 cup Parmesan. Bake for about 15 minutes or until bubbly.

3 cups small fresh broccoli florets

1 (24 ounce) jar marinara sauce
1 (16 ounce) jar Alfredo sauce

¼ cup freshly grated Parmesan cheese

1 medium onion, chopped
2 teaspoons chopped garlic
1/2 teaspoon red pepper flakes
1 (14.5-ounce) can less sodium beef broth
3 cups water
1 (14.5-ounce) can diced tomatoes
1 (16-ounce) bag frozen Italian vegetable blend
1 (15-ounce) can cannellini beans, drained and rinsed
1 tablespoon Italian seasoning
Salt and freshly ground black pepper
1 (16-ounce) bag frozen cheese tortellini

Steps:

  • In a large skillet, cook bacon until crisp about 5 minutes. Remove to a towel to absorb excess bacon fat. Add the onion to the same skillet used to fry the bacon and cook until it turns light brown in color, about 10 to 12 minutes. Add the tortellini to the pan cook until heated through. Add the cooked bacon, parsley and season with salt and pepper, to taste. Transfer to serving bowl and top with Parmesan cheese.
  • Preheat the oven to 375 degrees F.
  • In a large pot, heat the oil over medium heat and add the onion, garlic, and red pepper flakes. Saute for 2 minutes, then add the beef broth and 3 cups of water. Add all of the remaining ingredients, except the tortellini. Bring to a boil, then reduce the heat and let simmer for 5 minutes. Add the tortellini and simmer until the tortellini are cooked, another 5 minutes. Season with salt and pepper, to taste. Ladle into serving bowls and serve with Herb Focaccia, if desired.

4 slices bacon

1/2 cup peas or 4 ounces frozen peas

  • Boil tortellini.
  • While pasta is cooking, fry bacon till crispy.
  • Remove bacon and drain bacon grease from pan except for one tablespoon.
