MOUTHWATERING BROWN SUGAR BACON
My grandpa was the biggest bacon lover I know... and this was his favorite bacon recipe! The brown sugar caramelizes onto the bacon, making a mouthwatering sweet and savory treat!

- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
- Arrange bacon on the baking sheet in a single layer; edges can touch or slightly overlap. Sprinkle brown sugar generously on top. Sprinkle pecans over the sugar.
- Bake in the preheated oven until browned and glazed, 10 to 15 minutes.

BROWN SUGAR BACON
Steps:
- Preheat the oven to 400 degrees F. Position racks in the top and bottom of the oven. Line 2 rimmed baking sheets with foil and set cooling racks into the baking sheets.
- Using your fingers, crumble together the brown sugar, smoked paprika and several grinds of black pepper on a plate. Dredge the bacon on both sides in the brown sugar mixture, rubbing so the sugar adheres. Arrange the slices on the racks without touching.
- Bake until the bacon is crisp and caramelized, flipping the slices and rotating the baking sheets from top to bottom halfway through, about 20 minutes total. Let the slices cool on the racks, turning once or twice so they don't stick.

Steps:
- Position a rack in the upper third of the oven and another rack in the lowest third.
- Preheat to 350 degrees. Line the bottom and sides of two rimmed baking sheets with foil.
- Arrange the bacon slices in a single layer on the prepared baking sheet.
- In a small bowl, toss together the seasonings. Sprinkle evenly over the bacon. Place one pan on the upper rack and the other pan on the lower rack. Bake, without turning, for 20 to 25 minutes.
- Switch the position of the pans, top to bottom and front to back. Continue to bake until dark brown but not quite crisp, 10 to 15 minutes longer.
- Using tongs, lift the bacon from the pans, gently shaking off excess drippings. Transfer to paper towels to drain briefly. Arrange the bacon on a warmed platter and serve at once.

- Preheat oven to 400 degrees F.
- In a large plastic zip-top bag, combine brown sugar and mustard.
- Add bacon and toss to coat.
- Alternatively, you could mix the dijon and brown sugar in a medium bowl then add the bacon and mix around.
- Line a baking sheet with aluminum foil or parchment paper.
- Place a cooling rack on the lined baking sheet.
- Put bacon on rack and use your fingers to spread on some of the sugar mixture left in the bowl, and roast in oven for 20-30 minutes.
- Let drain for a few minutes on the rack and serve.
