Hey you Paula Deen fans, she has a new magazine, "Cooking with Paula Deen"--this recipe is from the premier issue. It was so yummy looking, I couldn't wait to try it. I added another 15 minutes to the cooking time suggested (30-35 minutes) and It was just right, but oven temperatures vary, so check on it during the last few minutes of cooking time. I'm also going to add a few dashes of cayenne pepper next time for something hot and sweet!

1 1/2 lbs boneless skinless chicken breasts
1 (1 lb) package sliced bacon
3/4 cup firmly packed brown sugar
2 tablespoons chili powder

Steps:

  • Preheat oven to 350°F.
  • Cut chicken breasts into 1-inch cubes.
  • Cut each bacon slice into thirds. Wrap each chicken cube with bacon and secure with a wooden pick inserted on the diagonal starting where bacon seam overlaps.
  • Stir together brown sugar and chili powder. Dredge wrapped chicken in mixture.
  • Coat a rack and broiler pan with non-stick cooking spray. Place chicken on rack in broiler pan.
  • Bake at 350°F for 30 to 35 minutes, or until bacon is crisp.

6-8 slices of bacon
1 tablespoon chili powder
1 teaspoon paprika
½ teaspoon garlic powder
salt and pepper
1/2 cup brown sugar
optional garnish: chopped parsley

Steps:

  • Preheat oven to 400 degrees. Combine chili powder, paprika, and garlic powder in a bowl. Roll each chicken piece into the spices and wrap in bacon. Place in a 10 inch skillet or a 9x13 inch baking dish. Sprinkle the tops with brown sugar.
  • Bake for 30-35 minutes or until chicken reads 165 degrees and is no longer pink. I like to broil the tops of my chicken for 1-2 minutes to crisp the bacon at the end.

4 chicken breasts, cut in thirds (12 pieces)
12 slices of bacon
2 teaspoons salt
2 teaspoons pepper
2 teaspoons Garlic Powder
2 teaspoons Chili Powder
2/3 cup brown sugar
2 Tablespoons Olive Oil

Steps:

  • Preheat oven to 400 degrees.
  • Cut each chicken breast into thirds, leaving you with 12 pieces.
  • Lay chicken pieces in a 9x13 baking dish, coat with 2 Tablespoons of Olive Oil. (can use non-stick cooking spray also) Sprinkle chicken with spices, flip over and sprinkle the other side.
  • Wrap each piece of chicken with a slice of bacon. Roll in brown sugar.
  • Bake for 30-40 minutes, or until chicken is cooked through and bacon is nice and crispy.
  • Drizzle with glaze it made and serve.

Boneless skinless chicken breasts stay moist and flavorful when wrapped in bacon and roasted. Plus, a filling of cream cheese flavored with onions, garlic and Worcestershire sauce infuses the meat with even more flavor from the inside.

1 tablespoon olive oil
1/2 small yellow onion, minced
2 cloves garlic, minced
6 ounces cream cheese, at room temperature
2 tablespoons finely chopped chives
1 1/2 teaspoons Worcestershire sauce
Kosher salt and freshly ground black pepper
Four 6- to 8-ounce boneless skinless chicken breasts
12 slices bacon (not thick-cut)

Steps:

  • Preheat the oven to 375 degrees F. Heat the olive oil in a medium skillet over medium heat. Add the onion and cook, stirring, until golden brown, about 6 minutes. Stir in the garlic and cook 30 seconds more. Remove the pan from the heat and add the cream cheese, chives and Worcestershire sauce and stir until evenly combined. Season the filling with salt and pepper.
  • Halve each chicken breast horizontally, leaving it attached at one side so it opens like a book. Sprinkle the chicken with salt and pepper, then divide the filling among the breasts, spreading it evenly on the inside of each. Close the chicken breasts and sprinkle the outsides lightly with salt and pepper.
  • Lay 3 strips of bacon side-by-side on a cutting board and position a chicken breast right-side-up at the end of the strips. Tuck the thinner "tail" of the chicken breast underneath for even cooking, then roll the breast up in the bacon. Repeat with the remaining bacon strips and chicken breasts.
  • Set a cooling rack in a rimmed baking sheet and transfer the chicken breasts with the bacon seam-side down to the rack. Bake until the chicken is almost cooked through and an instant-read thermometer inserted in the middle of each breast reads 155 degrees F, about 35 minutes. Heat the broiler and broil the breasts until the bacon turns golden brown and crisp, about 5 minutes. Serve hot.

6 skinless, boneless chicken breast halves
1 (16 ounce) bottle French salad dressing
1 (12 ounce) jar sliced banana peppers, drained
1 (1 pound) package thick double smoked bacon
1 (16 ounce) package shredded mozzarella cheese

Steps:

  • Place chicken breasts between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to 1/8-inch thickness.
  • Transfer chicken to a large baking dish and add French dressing. Cover and marinate in the refrigerator for 2 hours or overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove chicken from the dressing and shake off excess. Reserve the remaining dressing.
  • Lay chicken breasts on a flat surface and spread several banana pepper slices down the center. Roll chicken around the peppers. Wrap chicken with 2 slices bacon and secure with toothpicks. Arrange bacon-wrapped chicken in a 9x13-inch baking dish. Pour reserved dressing over chicken.
  • Bake in the preheated oven for 30 minutes. Sprinkle mozzarella cheese over chicken and continue baking until chicken is no longer pink in the center and the juices run clear, 10 to 15 minutes more.

¼ cup brown sugar
2 teaspoons smoked paprika
½ teaspoon garlic powder
½ teaspoon black pepper
½ teaspoon salt
¼ teaspoon onion powder
4 (4 ounce) skinless, boneless chicken breast halves
1 (16 ounce) package bacon
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Mix brown sugar, paprika, garlic powder, pepper, salt, and onion powder together in a small bowl. Rub 1/2 of the spice mix over chicken breasts.
  • Wrap each breast with 2 to 4 slices of bacon, depending on size. Place in a baking dish and sprinkle remaining spice mix over top.
  • Bake in the preheated oven until bacon is crispy and chicken is no longer pink in the center and the juices run clear, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
