Steps:
- Put a pizza stone or inverted baking sheet on the lowest oven rack and preheat to 475 degrees F for at least 15 minutes. Meanwhile, roll out the dough into a 9-inch round on a lightly floured surface. Lightly dust a pizza peel or another inverted baking sheet with flour; lay the round of dough on top and set aside. Cook the bacon in a large skillet over medium heat, stirring, until crisp, about 6 minutes. Remove with a slotted spoon and drain on paper towels. Combine the tomato sauce, olive oil, garlic and oregano in a medium bowl; season with salt and pepper. Slide the dough directly onto the hot stone or baking sheet and bake until lightly golden and puffy, about 7 minutes. Remove from the oven and let cool slightly, then carefully slice the crust in half horizontally with a serrated knife to make 2 thin crusts. Turn the crusts cut-side up. Spread with the sauce mixture, then top evenly with the mozzarella, cheddar and bacon. Slide the pizzas back onto the hot stone or baking sheet; bake until the cheese melts and the crust is golden, about 8 more minutes. Sprinkle with the parmesan.

- Grab a 9 x 13 cookie sheet and drizzle olive oil on the pan. Smear the olive oil evenly on the pan to coat the bottom. Evenly sprinkle the flour over the oiled pan, concentrating more flour on the 4 corners of the cookie sheet. With the remaining olive oil still on your hands, use your hands to stretch the pizza dough as close to the size of the pan, without ripping it. Tip: It helps to rotate the dough 45 degrees between each pull so that it stretches more evenly.
- Press the stretched out dough into the cookie sheet using your fingertips. If the dough is slipping back from the stretched position, add a sprinkle of flour beneath that area and stretch/press again.
- In a bowl toss the mushrooms with oregano, a pinch of salt and pepper, red pepper flakes and a drizzle of olive oil.

Add 15 of the garlic cloves to your Ooni Skillet with the olive oil.
- Warm the oil in the pan in the oven for 15-20 minutes, or until the oil is fragrant and the cloves have turned a light brown color. Stir occasionally to prevent the garlic from burning.Remove from the oven, cool and blend with the remaining garlic cloves, lemon juice, salt, black pepper, crushed red pepper and oregano for 2 minutes or until all garlic pieces are finely chopped. Transfer into a bottle for easy pouring and store in the fridge. This will make enough garlic olive oil to use on six 12” pizzas.Next, prepare the candied bacon. Put the bacon lardons into a bowl along with the molasses, sugar, and salt and mix thoroughly. In a frying pan on your stovetop (hob), cook the bacon on low-medium heat for 5 minutes or until the fa has rendered from the bacon and it's beginning to turn crispy.Increase the heat of your pizza oven, aiming for 932˚F (500˚C) on the stone baking board inside.Using a small amount of flour, dust your Ooni pizza peel.
