1 sourdough or French bread baguette (about 10 ounces), cut diagonally into 3/4-inch slices
6 tablespoons unsalted butter, softened
2-1/4 cups thinly sliced radishes (about 18 medium)
Sea salt
Snipped fresh dill, optional

Steps:

  • Spread baguette slices with butter. Top with radishes. Sprinkle lightly with salt and, if desired, top with dill.

This compound butter packed with crunchy, peppery grated radishes is delicious spread on toasted baguette in this appetizer reminiscent of the classic French snack.

8 medium radishes (about 1 bunch), cleaned, root ends trimmed
6 tablespoons unsalted butter, room temperature
One 8-ounce baguette
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 375 degrees. Grate radishes on the large holes of a box grater; place on paper towels, and squeeze out excess liquid. Combine radishes and butter in a small bowl; mix well.
  • Slice baguette in half lengthwise, and place in oven; toast until crisp and browned. Remove from oven, and cool slightly. Spread radish mixture on toasted baguette; season with salt and pepper. Slice each half into four pieces, and serve.

2 scallions, finely chopped
3 tablespoons finely chopped fresh mint
4 ounces (1 stick) unsalted butter, softened
Freshly ground pepper
1 baguette, thinly sliced crosswise and toasted
4 red radishes

Steps:

  • Mix olives, scallions, mint, and butter in a bowl. Season with pepper. Spread olive butter onto each baguette slice. Thinly slice radishes. Layer 2 or 3 slices on top of each canape.

Additional chopped fresh chives (for garnish)

Steps:

  • Mix butter, 2 chopped anchovy fillets, and 2 tablespoons chives in small bowl, adding 1 more chopped anchovy fillet to taste, if desired. Season with salt and freshly ground black pepper. Spread anchovy butter over 1 side of each baguette slice. Top each baguette slice with radish slices, overlapping slightly to cover bread. Garnish with additional chopped chives and serve.
