Found this on Pinterest and thought it was a great idea. Think of the possibilities. You can fill with salad, eggs and cheese, potatoes, meats, etc. I think grilled pineapple , nuts and a little brown sugar would be good. Or how about cream cheese and shrimp? So simple to make!

5 to 7 bacon strips per "cup"

Steps:

  • 1. Preheat the oven to 400ºF
  • 2. Turn a muffin pan upside down. To create the cups, you'll need to use the convex mounds of the base for molding.
  • 3. Lay foil over each of the muffin mounds, as many times as you need bacon cups. Cover and crimp the foil as you're laying it, so that it molds around the mound of each muffin space.
  • 4. Make the bacon cups. The secret to making sure that this works effectively is to weave the bacon slices into place--don't simply slap the bacon slices on.
  • 5. Bake the bacon for 10-15 minutes. You will need to monitor the bacon since the timings will differ on how crispy you want the cups to be.

8 slices cooked bacon, crumbled
1 medium tomatoes, seeded, chopped
1/2 small onion, chopped
3 ounces swiss cheese, shredded
1/2 cup mayonnaise
1 teaspoon basil
1 (10 ounce) can flakey biscuits (I can't get them over here so I just use shortcrust pastry)

Steps:

  • Combine bacon, tomato, onion,Swiss Cheese, mayonnaise and basil in a bowl and mix well.
  • Separate each dough round into 3 layers.
  • Press one layer into each greased miniature muffin cup.
  • (I line mine with rounds of pastry).
  • Spoon the filling into each cup.
  • Bake at 375*F for 10 to 12 minutes or until edges are brown.

Steps:

  • Heat oven to 350ºF.
  • Whisk first 3 ingredients in large bowl until blended. Add next 4 ingredients and 3/4 cup cheese; mix well.

1 (16 ounce) can flaky large refrigerated biscuits (like Grands, I had 2 biscuits left over which I just baked and served)
1/2 cup mayonnaise
1 cup shredded cheddar cheese or 1 cup mozzarella cheddar blend cheese
1 (10 ounce) can tomatoes and green chilies, drained well (like Ro-tel)
1 green onion, chopped
10 slices bacon, cooked and crumbled
1/4-1/2 teaspoon seasoning salt
fresh ground pepper

Steps:

  • Preheat the oven to 350 degrees.
  • Lightly grease the cups of a 12-cup muffin tin.
  • Separate each biscuit into two layers.
  • Place and press a biscuit layer evenly into each cup.
