Seriously Good French Toast image

Few breakfasts are better than thick-cut bread slices soaked in vanilla-scented egg and milk custard and toasted until golden brown. French toast is perfect for weekends - it only takes 30 minutes and a few ingredients to make. One or two-day-old bread is best for making French toast. If it's fresh, it will crumble or fall apart when added to the egg mixture or during cooking. French, Italian, brioche or Challah bread are all great for this.

4 large eggs
1/2 cup (120 ml) milk
1/4 cup (60 ml) heavy cream
1 teaspoon vanilla extract
Pinch of salt
8 slices day-old bread, 3/4-inch-thick
3 tablespoons butter, plus more for serving
Optional toppings: Powdered sugar, maple syrup, berries, whipped cream, cinnamon sugar (recipe below)

Steps:

  • Heat oven to 200 degrees F. Line a baking sheet with aluminum foil. Slide the baking sheet into the oven. (It is best to make French toast in batches. The warm oven helps keep cooked batches warm while the rest finish cooking).
  • Whisk eggs, milk, cream, vanilla extract and a pinch of salt together until well blended.
  • Line bread slices up in a large baking dish (it is okay if they overlap). Pour egg mixture over bread slices then flip and move them around the egg mixture. Continue to move the slices around the egg mixture until the bread has soaked it all up.
  • Melt a tablespoon of butter in a heavy, large pan or griddle over medium-low heat. Working in batches, transfer a few slices of the soaked bread to the pan and cook until golden brown and cooked through, 2 to 3 minutes on each side. Transfer cooked French toast to warm oven while you cook the remaining bread slices. Add additional butter as needed for each batch.

CHAMOMILE FRENCH TOAST

1 1/2 cups heavy cream
4 chamomile tea bags
1 teaspoon lemon zest plus 1 tablespoon lemon juice
1/3 cup plus 1 tablespoon honey
1 1/2 cups milk
2 teaspoons vanilla extract
8 large eggs
Kosher salt
8 thick (1-inch) slices brioche
4 tablespoons butter
1/2 cup mascarpone cheese
2 cups fresh berries (any in season)

Steps:

  • Preheat the oven to 300 degrees F.
  • In a small pot, combine the heavy cream and tea bags. Bring to a simmer, then take off the heat immediately. Let sit and cool, then remove the tea bags.
  • In a small bowl, combine the lemon zest and juice and 1/3 cup of the honey and whisk. Set aside.
  • In a medium bowl, combine the chamomile cream, milk, vanilla, eggs, remaining 1 tablespoon honey and a pinch of salt. Whisk until completely combined.
  • Heat a nonstick pan over medium heat. Add 1 tablespoon of the butter and let melt. Put 2 slices of bread into the cream mixture and let it soak through. Put the soaked bread in the pan and cook until golden brown on both sides, 2 to 3 minutes on each side. Transfer to a baking sheet and hold in the oven. Add another tablespoon of butter to the pan, soak 2 more slices of bread in the cream mixture and cook. Repeat with the remaining butter, bread and cream mixture.
  • Top the French toast with a dollop of mascarpone, some fresh berries and a drizzle of the lemon honey.

2 cups milk
Pinch salt
1/2 cup sugar
2 eggs
2 large, very thick slices eggy bread, like brioche or challah, preferably stale, cut in half, or 4 smaller slices
Cinnamon sugar
Warmed maple syrup or honey, optional

Steps:

  • Pour olive oil to a depth of 1/2 inch in a broad, deep skillet over medium-high heat; bring it to a temperature of about 350 degrees. When ready, a small cube of bread dropped into oil will sink to bottom, then immediately rise to top.
  • Meanwhile, whisk together the milk, salt and sugar in a broad bowl. In a separate bowl, beat eggs. When oil is ready, soak a piece of bread in milk, then dip in egg. Shake off excess liquid, then transfer to oil. Stand back, as it will spatter. Repeat with remaining bread.
  • Cook about a minute on each side, turning carefully; bread should be very crisp on edges. When done, transfer to a plate, sprinkle with cinnamon sugar and serve immediately, with honey or maple syrup if you like.

1 loaf king's Hawaiian bread, sliced into 1 inch thick pieces
2 eggs
2 tablespoons melted butter
2 cups milk
1 tablespoon sugar (cane sugar, if you have it)
1 dash cinnamon
1 dash nutmeg, if you like (optional)
chopped macadamia nuts
coconut syrup

Steps:

  • Blend eggs. milk, butter, sugar and spices in bowl.
  • Dip bread slices in milk mixture and lay on cookie sheet lined with foil.
  • If you have any milk mixture left over, just pour it on top of the bread slices.
  • Broil under your broiler, about 3 inches from heat source, about 2 -4 minutes each side, until browned to your liking.
  • Sprinkle with chopped macadamia nuts, and serve with coconut syrup and/or maple syrup.

The key is to fully soak the bread, then cook the slices gently, so the insides cook through without the outsides burning. If the bread starts to brown too quickly, turn down the heat. You can double, triple or quadruple the amounts below to make enough for friends. Serve them in batches straight from the pan, or keep warm in a 200-degree oven on a plate or baking sheet.
