Butter, for greasing
1 loaf crusty sourdough or French bread
8 whole eggs
2 cups whole milk
1/2 cup whipping (heavy) cream
1/2 cup granulated sugar
1/2 cup brown sugar
2 tablespoons vanilla extract
1/2 cup all-purpose flour
1/2 cup firmly packed brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon salt
Freshly grated nutmeg
1 stick cold butter, cut into pieces, plus more for serving
Warm pancake syrup, for serving
1 cup fresh blueberries, for serving

Steps:

  • For the French toast: Grease the baking pan with butter. Tear the bread into chunks, or cut into cubes, and evenly distribute in the pan. Crack the eggs in a big bowl. Whisk together the eggs, milk, cream, granulated sugar, brown sugar and vanilla. Pour evenly over the bread. Cover the pan tightly and store in the fridge until needed (overnight preferably).
  • For the topping: Mix the flour, brown sugar, cinnamon, salt and some nutmeg in a separate bowl. Stir together using a fork. Add the butter and with a pastry cutter, and mix it all together until the mixture resembles fine pebbles. Store in a re-sealable plastic bag in the fridge.
  • When you're ready to bake the casserole, preheat the oven to 350 degrees F. Remove the casserole from the fridge and sprinkle the topping over the top. Bake for 45 minutes for a softer, more bread pudding texture or for 1 hour or more for a firmer, crisper texture.
  • Scoop out individual portions. Top with butter and drizzle with warm pancake syrup and sprinkle with blueberries.

3 large apples, peeled and sliced thinly (I use Cortland or Empire)
3/4 cup brown sugar, packed
2 tablespoons water
1 teaspoon cinnamon
8 slices Italian bread, 1 inch thick
4 large eggs
1 1/4 cups milk
2 teaspoons vanilla extract

Steps:

  • Melt the butter in a large skillet and add apples.
  • Cook and stir for 5 minutes.
  • Add brown sugar, water, and cinnamon and continue to cook and stir for 10 minutes until apples are tender.
  • Spoon mixture into 13x9 baking dish.
  • Cover apples with bread slices, making sure to cover the entire surface.
  • Trim the bread to fit if you must.
  • Beat eggs until foamy, then beat in milk and vanilla.
  • Pour egg mixture over the bread slices.
  • Cover the dish with plastic wrap and refrigerate overnight.
  • In the morning, remove the dish from the refrigerator and let it stand while oven is preheated to 375 F.
  • Bake uncovered for 35 minutes, or until bread is golden and firm.
  • Let sit 10 minutes before serving.
  • To serve on a platter, run a knife around the edges of the casserole, place platter on top of casserole, and carefully flip.
  • To serve individually, use a spatula to remove serving, place serving plate on top of serving and carefully flip so apple side is up.

1 loaf French bread (sliced into one inch thick slices)

1 cup heavy whipping cream
2 teaspoons vanilla
2 cups whipped cream - optional topping

Steps:

  • Melt butter in a large skillet over medium-high heat and add apples.
  • Cook, stirring constantly, for 5 minutes.
  • Add brown sugar, water and cinnamon and cook and stir for 10 minutes or until apples are tender.
  • Spoon apple mixture into a 9 x 13 inch baking dish sprayed with nonstick cooking spray.
  • Place bread slices over apples.
  • In a mixing bowl, whisk together eggs, heavy whipping cream and vanilla until well combined.

1 cup milk
1/2 teaspoon vanilla extract
Ground cinnamon
6 slices bread
2 tablespoons butter, plus more for serving
3 apples, peeled and sliced
2 tablespoons water
1/2 cup maple syrup

Steps:

  • Whisk the eggs, milk, vanilla, and a pinch of ground cinnamon in a 9-by-13-inch baking dish. Add the bread in a single layer, turning until all the egg is absorbed.
  • Meanwhile, heat a large skillet over medium heat, melt 1 tablespoon butter, and add apples, stirring to coat until starting to caramelize. Add the water, cooking until water has evaporated and apples are tender, about 4 minutes.
  • Pour in the maple syrup and a dash of ground cinnamon; simmer for a minute to combine.

One 1-lb challah or raisin challah
5 large eggs
1½ cups half & half
3 tablespoons maple syrup
2 tablespoons bourbon (optional; replace with apple cider or half-&-half if desired)
1 teaspoon vanilla extract
Heaping ¼ teaspoon salt
4 tablespoons unsalted butter
4 large Granny Smith apples, peeled and thinly sliced
¼ cup + 2 tablespoons packed dark brown sugar
6 tablespoons maple syrup
1 teaspoon ground cinnamon
Confectioners' sugar and/or maple syrup

Steps:

  • Butter a 9 x 13-inch or 3-QT baking dish. Slice the bread into ¾-inch-thick slices.
  • In a large bowl, whisk together the eggs, half & half, maple syrup, bourbon, vanilla, and salt.
  • Dip each slice of challah into the custard mixture for about 5 seconds, then arrange in an overlapping pattern in the prepared baking dish. Be sure the entire bottom of the dish is covered with the bread. Pour any remaining custard over the bread. Set aside.
  • In a large sauté pan, melt the butter over medium-high heat. Add the apples, brown sugar, maple syrup, and cinnamon. Cook, stirring frequently, until the apples are softened and the sugar-syrup is thickened, about 8 minutes. Spoon the apples and sugar-syrup evenly over the bread, making sure not to leave any of the syrup behind. If not baking immediately, cover the dish with plastic wrap and refrigerate overnight. Otherwise, proceed with the recipe.
  • Preheat the oven to 350°F and set an oven rack in the middle position.
  • Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and continue baking until puffed and golden, about 20 minutes more. Remove from the oven and, using a fine sieve, dust with the confectioners' sugar. Serve with maple syrup.

  • Combine milk, vanilla, eggs, salt and 1 tsp cinnamon with a whisk and pour over the bread slices, trying to coat the bread evenly. Cover with plastic wrap and refrigerate at least 2 hours or overnight.
  • Meanwhile, make the streusel. Cut together cold butter, sugars, 1 tsp cinnamon, flour and oats with a pastry cutter or your hands until crumbly. Store in an air tight container until ready to bake.

  • Add bread cubes to the baking pan - enough to generously cover the bottom and up about 1.5 inches. You don't want to see any bare spots on the pan, but you also don't want there to be bread overflowing out of the dish.
  • In a mixing bowl whisk the eggs, milk, and 2/3 of the cinnamon (1/2 tsp as original recipe is written). Pour over the bread and use your hands or the back of a wooden spoon to push the bread down to soak up the liquid. If you end up having too much bread after pouring on the liquid, just pick a few out. Alternatively, if you have too much liquid, add more bread cubes. (see photo)
  • To a large skillet over medium-low heat, add the apples and butter. Sprinkle with remaining 1/3 of the cinnamon (1/4 tsp as original recipe is written), stir and cover to steam for a bit. When they start to get tender - about 4-5 minutes - remove cover and sprinkle with 2-3 Tbsp brown sugar (this will depend on preference and whether you used sweet or tart apples // amounts as original recipe is written // adjust if altering batch size). Continue cooking with cover off until tender and slightly caramelized. You don't want them to get mushy so be careful not to keep the cover on for too long. Remove from heat to cool slightly.
