Baked Banana (Plantain) With Bacon and Cheese image

The sweetness of the ripe plantains is the perfect foil for smoked bacon and the fresh flavor of chimichurri. For this dish you need to use very ripe plantains. These beauties can be served hot from the oven, warm, or at room temperature. Serve it with fresh chimichurri or cilantro pesto.

4 bananas, ripe (or plantains)
2 tablespoons butter, melted
4 slices mozzarella cheese (or queso blanco)
4 slices bacon

Steps:

  • Preheat the oven to 400°, cut the ends of the plantains and peel.
  • Place them in a baking dish and brush with the butter, bake for 30 to 40 minutes.
  • Remove from the oven and slice the plantains lengthwise but not all the way through, stuff them with cheese slices and wrap with bacon.
  • Return to the oven and bake 10 more minutes until the cheese melts and the bacon is cooked.
  • Chimichurri or cilantro pesto to serve.

This recipe for baked plantains shines for its simplicity. This is also a great dish to make on the grill. Place the unpeeled bananas on the cooler side of the grill.

6 heirloom bananas or small plantains, ripe but not black, unpeeled
1 cup (230 g) crema or crème fraîche
1 cup (120 g) crumbled queso fresco

Steps:

  • Preheat the oven to 400°F.
  • Place the whole bananas or plantains on a baking sheet and bake, turning them every 10 minutes, until the peel starts to split and the inside is tender when tested with a skewer, about 40 minutes. Remove from the oven but keep on the baking sheet. Carefully slice the peel lengthwise to just reveal the flesh and drizzle with some crema and sprinkle with cheese. Transfer to plates to serve individually, on a platter, or directly on the baking sheet on the table. Either way, people should carve out their own banana. Serve the remaining crema and cheese in bowls on the side, in case anyone wants more.

2 ripe plantains
½ cup butter, melted
3 slices bacon
1 cup mozzarella cheese, grated

Steps:

  • Pre-heat the oven to 200°C (400°F).
  • Remove the peel from the plantains.
  • Cover in melted butter.
  • Bake for around 20 minutes then flip the plantains, cooking for another 20 minutes until golden brown on both sides.
  • Chop the bacon into bits and fry until crispy.
  • Cut the cooked plantains down the middle.
  • Stuff with the mozzarella, bacon and extra mozzarella.
  • Bake for another 5 minutes until the cheese has melted.
  • Enjoy!

  • Preheat oven to 375 degrees F. Line a baking sheet with foil. Slice both plantains into 1/2 inch slices. Cut your strips of bacon in half.
  • Take one plantain slice and wrap ½ piece of bacon around the flat side of the round. Repeat this step until each plantain slice is wrapped in ½ slice of bacon.
  • Place all bacon-wrapped plantains on your baking sheet seam side down. Brush each with a little maple syrup. Sprinkle cayenne pepper on each plantain (use more if you like spicy flavors, and omit or only use a small pinch if you do not like spicy flavors).
  • Bake in the oven for 30-40 minutes until the bacon is crispy. Stick a toothpick in each bacon-wrapped plantain, place on a serving tray and enjoy! Serves 6.
