This baked French toast recipe blends French toast and bananas foster into one casserole-style dish, and it is positively amazing! This is great for breakfast or brunch. You could even serve this for dessert with a bit of vanilla bean ice cream on the side!

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with cooking spray.
- Slice bread rolls horizontally without separating into individual rolls, creating 2 even halves.
- Whisk eggs in a large, shallow bowl until smooth. Stir in milk, vanilla extract, and cinnamon to make a smooth batter.
- Dip bottom half of bread rolls into batter, coating both sides, and place in baking dish. Cover bread with sliced bananas. Sprinkle brown sugar and pecans on top. Dot with cubes of butter. Dip top half of bread rolls in batter, coating both sides, and place on top.
- Bake in the preheated oven until middle is set and top is golden brown, about 25 minutes.

- Place butter in a microwave-safe bowl; microwave, covered, until melted, 30-45 seconds. Stir in brown sugar, cream, cinnamon, allspice and, if desired, pecans. - Spray a 9x13-inch baking pan with cooking spray. Arrange bread slices in baking pan in a single layer. Whisk half-and-half, eggs, vanilla extract, cinnamon, and salt together in a bowl; pour over bread slices. Cover with plastic wrap and refrigerate, 8 hours to overnight.

- Spray bottom of 13x9-inch (3-quart) baking dish with cooking spray. Arrange bread cubes in baking dish. In large bowl, beat eggs, milk and 1/2 cup of the maple syrup with wire whisk. Pour over bread in baking dish. Cover and refrigerate 8 hours or overnight.
- Heat oven to 350°F. Uncover; bake 35 to 40 minutes or until golden brown along edges. Let stand 7 to 10 minutes before serving.

BAKED BANANAS FOSTER FRENCH TOAST

- Spray a 9x13 baking dish with cooking spray. In a medium bowl, combine the brown sugar, butter, and pecans. Spread mixture into the bottom of the pan. Place the sliced bananas on top of the mixture in an even layer.
- Arrange the French bread slices in an even layer on top. You might have to trim some of the pieces to fit. Fit as many pieces as you can in a single layer.
- In a medium bowl, whisk together the eggs, milk, vanilla, and cinnamon. Pour over the French bread slices. Refrigerate for 4-12 hours (see Note).
- After the French toast has chilled, preheat the oven to 350 degrees. While oven is preheating, take the French toast out of the fridge and let it sit on the counter to come closer to room temperature.
- Bake on the center rack of the oven for 30-35 minutes or until golden brown. Remove from oven and let sit for a couple of minutes before inverting on a serving plate. Slice and serve!
EASY BANANAS FOSTER FRENCH TOAST
This Easy Bananas Foster French Toast is one of our favorite breakfast recipes! Crispy slices of buttery brioche are topped with a delicious homemade bananas foster sauce made from dark rum, butter, brown sugar, heavy cream, and crunchy pecans. Delicious on it's on, but devilishly good with whipped cream or vanilla ice cream!

- Melt a few Tablespoons of the butter in a large skillet over medium-heat.
- In a large shallow bowl or pie plate, whisk the eggs and egg yolks until well combined.
- Add in the cinnamon, nutmeg, and both sugars, and whisk until well combined. Finally, whisk in the milk, heavy cream, vanilla extract, and rum.
- Dip each slice of brioche into the egg mixture, making sure both sides are well coated.
- Place brioche slices into skillet and cook until the undersides are golden brown, about 2 to 3 minutes.
- Flip, and continue cooking on the other side until equally golden brown, about another 2 to 3 minutes.
- Continue with all french toast, adding more butter to the pan as needed.
- In a large skillet over medium-low heat, melt the butter. Add in the brown sugar and cook, stirring with a whisk, until the sugar has melted and mixture is bubbling, about 2 minutes.
- Add in the cinnamon, heavy cream, and salt and whisk to combine. Add in the pecans and bananas and, using a rubber spatula, fold them into the liquid mixture until they're completely coated. Cook for 1 minute. Then remove from heat and stir in the vanilla and rum.
- Pour on top of the french toast and serve at once!

- Preheat the oven to 350 degrees F.
- For the custard: Break the eggs into a bowl and whisk together. Add the sugar, cream, milk, salt, cinnamon and nutmeg. Whisk until the sugar is dissolved.
- Trim the crust from the brioche, then cut it into a 4-by-6-inch cylinder. Place the brioche in a baking dish and cover with the custard. Let stand until the custard has soaked through all of the bread, at least 15 minutes; turn the bread occasionally with tongs to make sure it soaks evenly.
- For the bananas: While the bread is soaking, peel and slice the bananas 1/2-inch thick. In a bowl, toss the bananas with the melted butter, pecans, brown sugar, lemon juice, cinnamon and 1/2 cup water and pour into a roasting pan.
- For the French toast roast: When the bread has finished soaking, melt the 2 tablespoons butter in a 10-inch nonstick pan over medium-high heat. Sprinkle the soaked brioche with sugar and carefully place it, sugar side down, in the melted butter. Sprinkle the top with more sugar and sear the bread on all sides until golden brown, 1 to 2 minutes per side. Carefully place the bread over the bananas and transfer to the oven for 15 minutes, or until the bread is caramelized. Remove from the oven, dust with powdered sugar, cut into 1-inch slices and serve with the banana mixture.
