BAKED BEANS, CHEDDAR AND PICKLE SANDWICH
My own invention -- an unusual combination! But, the sweetness of the beans, the sharpness of the cheddar and the pungency of the pickles work Really well together.

Steps:
- Toast the bread, as desired.
- Smash the beans down onto one slice, top with the pickle and cheese, cover and enjoy!
- NOTES:.
- MUST use a seriously sharp cheese!
- I use Heinz Vegetarian Baked Beans, but the flavor of any sort of sweet baked beans should work with the sharp cheddar and pickles.
- I eat this with cold or warm beans, but always solid cheese.

CHEESE AND PICKLE SANDWICHES
So good with a big mug of steaming hot, sweet tea! I sometimes like to serve these with pickled onions on the side, too. My favorite pickles to use for this are the wonderfully crisp and fresh-tasting bread & butter pickles sold at Trader Joe's.

Steps:
- Spread mayonnaise and mustard on bread. Trim cheese slices to fit bread and place on one slice. Lay pickles over cheese and top with second slice of bread.
- This is a little easier to eat if cut in half, since the pickle slices tend to want to escape.

- 1. Butter two slices of rye bread or bread of your choice.
- 2. Spoon on warm baked beans.
- 3. Top with sliced onion and drizzle yellow mustard over all.
- 4. Place second slice of bread on top, cut in half and serve with pickles and a hand full of chips.
- 5. (As Grandpa would say "come on and dig in, it's good")
- 6. *even if the baked beans had onion in it, Grandpa would always add slices of onion "for a little more bite" he would say.
BEST EVER OZARK BAKED BEANS
This recipe comes from a lot of testing for just the right flavor. Contains sweet pickle relish! It really adds to the taste. It's an old family favorite.

Steps:
- Preheat oven to 325 degrees F.
- Spray casserole dish lightly with cooking oil.
- In mixing bowl, combine beans, 1/2 cup catsup, mustard, bouillon, relish, onion, green pepper and brown sugar/molasses.
- Mix well.
- Add black pepper and Tabasco sauce to taste.
- Pour into casserole and top with remaining ketchup and bacon slices.
- Cover and bake for 50 minutes to 1 hour.
- Remove foil and increase oven to 350 degrees F.
- Bake an additional 30 minutes.

- Beans: In a medium sized pan over medium heat add your bacon. Fry until crispy with the fat full rendered, then pour in the beans. Gently simmer for 5 or so mins until the juice reduces down and the beans are fairly thick. Remove from pan to cool slightly.
- Sandwich: Spread one side of each of the slices of bread with butter, then flip 3 of them so they're butter-side-down and sprinkle with cheddar. Top with beans, add a few dashes of Worcestershire sauce (optional), then top with more cheddar. Add another slice of bread butter-side-up.
- Fry: Add to a pan over medium heat (you'll probably need to do this in batches). Fry both sides until golden with the cheese just starting to ooze out. Repeat then serve up and enjoy!
