Steps:
- In a large skillet, heat the butter and olive oil over medium-low heat. Throw in the onions, garlic and thyme and cook, stirring occasionally, until the onions are golden brown and soft, 20 to 25 minutes. Stir in the brown sugar until melted. Continue cooking until very deep in color, 5 to 7 minutes more. Remove from the heat and let cool completely, about 20 minutes.
- In the bowl of a food processor, add the ricotta and sour cream and process until smooth. Season with salt and pepper, then add the chives, Worcestershire, 2 tablespoons of the parsley and three-quarters of the caramelized onions, reserving the rest for garnish. Pulse 5 or 6 times, until the onions are incorporated but still have some texture. Taste and adjust the seasoning as needed.
- Transfer the dip to a serving bowl. Top with the reserved caramelized onions and sprinkle over the remaining parsley. Serve with chips, carrots, radishes and sugar snap peas.

- In a small skillet, heat the 2 tablespoons of oil over medium-high heat. Add the onion & cook, continually stirring for about 5 minutes. Reduce heat to medium-low, add 1/2 teaspoon of each salt & pepper, cook, stirring, until the onion is golden and caramelized, roughly 15 more minutes.
- Once the onion is caramelized & crisp, remove from heat and let cool 10 minutes.Once the onions have completely cooled, add the sour cream, mayonnaise, garlic powder, chives, and remaining 1/2 teaspoon of each salt & pepper; stir to combine. Cover with lid & let chill for at least 1 hour to let the flavors mix.
- First, position the racks in the top & bottom thirds of the oven and pre-heat oven to 375º. Line two baking sheets with silicon baking sheets. Scrub potatoes & rinse under cold water; pat dry with a towel. Slice the potatoes with a mandoline; if you don't have a mandoline, make sure they are as thin as possible. *You don't want to cut a thick chip, as it will make it chewy & have to bake for a much longer time. Pat the slices dry in between two paper towels. Toss the dried potato slices into a large bowl; drizzle with olive oil, salt, and pepper. *Use your hands to rub the slices, coating oil, salt, pepper, on both sides of the potato slice.

BAKED CARAMELIZED ONION DIP - THE VIEW FROM GREAT ISLAND

- Peel the onions. I chop one of them. I halve the next, and thinly slice. I quarter the last one, and thinly slice. This gives me a nice variety of texture in the finished dip and avoids the 'stringly onion' syndrome that can happen with classic onion dip :)
- Melt the butter and oil over medium heat in a large Dutch oven and add the onions. Cook them until they start to soften, stirring often. About 5 minutes.
- Now you'll continue to cook the onions, uncovered, over medium heat, for as long as it takes to caramelize them: this will be about an hour. You'll want to stir every so often. The key here is that you don't want them to brown right away, you want them to soften and lose their moisture. The heat should be high enough to cook them, but not so high that they're browning on the bottom of the pan (this will happen at the very end of the caramelization process.) The onions will release moisture first, then SLOWLY turn from golden to brown. Your nose will tell you when it's close. (See tips in the post for more details.)

- On a cutting board, trim the root end, and tip of the onion off. Half each onion and remove the thick, papery outer skin layer. Thinly slice each half from top to bottom. My onions were about 1/4" thick- you can go thinner. I love onions so mine were on the thicker side.
- Over low heat, cook the onions with a cover, stirring every 5 minutes. They will start to break down and get soft, translucent, and take on a nice deep coloring as they cook. Once they have cooked for 15 minutes, add the salt, sugar, and vinegar to the pan. Cook onions for an additional 15 minutes. Note: These are lightly caramelized, if you want a deeper amber colored onion, caramelize for the full 45 minutes over low heat. For this recipe, they will be golden colored, and soft in texture at the 30-minute mark.
