1 bunch celery, sliced (about 6 cups)
3/4 cup shredded cheddar cheese
1/2 teaspoon paprika
1/8 teaspoon pepper
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1 cup soft bread crumbs
1/2 cup slivered almonds

Steps:

  • Place the celery in a greased 2-qt. baking dish. Sprinkle with cheese, paprika and pepper. Top with the soup. Sprinkle with bread crumbs. , Cover and bake at 375° for 45 minutes. Uncover; sprinkle with the almonds. Bake 10-15 minutes longer or until golden brown.

1 bunch celery, thinly sliced (about 4 cups)
½ cup lightly toasted chopped blanced almonds
½ cup finely shredded sharp Cheddar cheese
½ teaspoon salt
1/8 teaspoon pepper
2 cans (10-½ ounces each) condensed cream of celery soup
½ cup buttered soft bread crumbs

Steps:

  • Put celery in buttered 9" square baking pan.
  • Cover with nuts, then with cheese.
  • Mix remaining ingredients, except crumbs, and pour over mixture in pan.
  • Sprinkle with crumbs and bake in pre-heated 375°F. oven about 45 minutes.
  • Makes 6 servings.

This is a wonderful recipe that my Aunt Stevie shared with me at my engagement party over 35 years ago! This is a super easy, rather elegant, slightly crunchy, kinda nutty side dish--and I really don't even care much for celery.

⅓ cup slivered almonds
4 cups sliced celery
1 tablespoon dried minced onion
1 cube chicken bouillon
½ teaspoon white sugar
⅛ teaspoon ground ginger

Steps:

  • Melt butter in a large skillet over medium heat; cook and stir almonds until golden, 2 to 3 minutes. Stir celery, onion, bouillon, sugar, and ginger into almonds. Continue to cook and stir until celery is tender, about 10 minutes.

Celery, hardly heard of as a baked dish, is surprisingly tasty in this side dish.

4 tablespoons butter
4 cups thinly sliced celery
3 tablespoons all-purpose flour
1 teaspoon salt
1 cup milk
1 (4.5 ounce) can chopped mushrooms, drained
2 tablespoons chopped green bell peppers
1 (2 ounce) jar chopped pimento peppers
1 cup shredded Cheddar cheese
1 cup soft bread crumbs
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a medium saucepan over medium heat, and cook celery until tender, about 5 minutes. Move celery aside, and mix in flour and salt. Pour in milk, and mix all ingredients, stirring constantly, until thickened.
  • Stir mushrooms, green bell peppers and pimento peppers into mixture. Mix in cheese, and stir until melted.
  • In a small bowl, blend bread crumbs and butter. Transfer the celery mixture to a medium baking dish, and sprinkle with the bread crumb mixture. Bake 20 minutes in the preheated oven, or until lightly browned.

By my recollection, this dish is very similar to one my Irish grandmother cooked. Cooked celery as a side-dish vegetable seems to be out of vogue now, but it really is quite good.

1 head celery
1 onion, sliced thinly
2 teaspoons minced fresh parsley
2 slices bacon
1 cup chicken stock
1/4 cup water
salt and pepper
2 tablespoons butter or 2 tablespoons margarine, cold

Steps:

  • Preheat oven to 350F degrees.
  • Separate celery into stalks, remove leaves (save for soup) and trim, wash well and cut into pieces about 3/4-inch thick.
  • Place celery in an ungreased casserole dish.
  • Dice bacon; add bacon and sliced onion to casserole, atop the celery.
  • Sprinkle all with fresh parsley.
  • Combine stock and water (or just use all stock) and pour over dish; don't stir.
  • Dot casserole with small bits of butter.
  • Cover dish and bake for 30 to 45 minutes, or until celery is cooked but not mushy.

1 head celery in one piece
1 teaspoon sesame oil
Juice 1/2 lemon (optional)
1 tablespoon tamari soy sauce (optional)
2 large leeks

Steps:

  • Carefully wash the celery, pulling back the leaves to remove the grit without breaking them off the stem. Put the sesame oil into, ideally, a Romertopf, a clay pot with a tight-fitting lid. Failing that, use a Dutch oven or oven-safe pot with a lid. Add the celery and squeeze with lemon juice and sprinkle with soy sauce. Put the celery in a cold oven and turn up to 425 degrees. Bake for half an hour.
  • Meanwhile carefully wash leeks, removing all the grit, and chop coarsely. Add to celery, bake for 15 minutes.

Growing up, we always had braised celery on our holiday table. However, the plainness of this dish did not appeal to my husband. Imagine my delight to find this "fancied-up" version of celery in BH&G. It pleases both of us! Another plus: it has a make-ahead feature and doubles easily.

1 bunch celery
2 cups boiling water
1/2 teaspoon salt
3 tablespoons butter
3 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/3 cups milk
1/2 cup reserved pot liquor
3 tablespoons toasted slivered almonds
1/4 cup fine dry breadcrumb
1 tablespoon butter, melted

Steps:

  • Wash and cut the celery into 1/2-inch slices including some tender tops. You should have 5 cups of slices. In a large saucepan, simmer the celery in boiling salted water until tender. Drain in a colander *reserving* 1/2 cup of the pot liquor. Discard tops.
  • In the same saucepan, melt the butter; stir in flour, salt and pepper and blend well. Add, stirring, the milk and reserved pot liquor; cook until thickened. Remove from heat.
  • Stir in celery and half of the toasted almonds. Pour into a 1-quart baking dish. Casserole may be made ahead to this pooint; cover with plastic wrap and refrigerate.
  • To finish the casserole: Top with remaining almonds. Combine bread crumbs and melted butter; sprinkle over top of casserole. Bake 20-25 minutes, or until hot and bubbly. Add ten or more minutes to the baking time if the casserole has been refrigerated.
