1/4 cup refined coconut oil (can also use ghee or butter if you're ok with dairy!)
1 teaspoon chili powder
zest from 2 limes
pinch of salt
4 6-oz wild caught Mahi Mahi fillets, thawed (any other wild caught fish will do!)
1 tablespoon coconut oil
salt and pepper

Steps:

  • In a small bowl, combine the refined coconut oil, chili powder and lime zest.
  • Stir to combine. Set aside.
  • Heat a cast iron skillet over medium heat for 5 minutes.
  • Season the fish fillets with salt and pepper.
  • Melt the coconut oil in the hot pan, then add the fish fillets.
  • Cook about 6 minutes per side, until golden brown and the fish is cooked through with an internal temperature of 145ºF.
  • Transfer the cooked fish to a plate and top with 1 tablespoon of the chili lime butter. Serve warm with wedges of lime. I love this with cauliflower rice and roasted asparagus!

1 lb Mahi Mahi (frozen or fresh, see notes)
Chili Powder
1/4 cup lime juice
1 tsp salt
1 Tbsp extra virgin olive oil

Steps:

  • Add the Mahi fillets and the lime juice to a ziploc bag and refrigerate for 20 minutes or more to marinate.
  • Heat the olive oil in a frying pan to a medium heat. Sprinkle the mahi with chili powder and salt on both sides.
  • Add the fillets to the heated pan and saute on both sides until the fish is white and flaky throughout (about 4 minutes per side).

3 cloves garlic, chopped
1/3 cup lime juice
2 tablespoons chopped fresh cilantro leaves, plus whole leaves, for serving

Four 5- to 6-ounce mahi-mahi fillets
Lime wedges and cooked white rice, for serving

Steps:

  • Prepare an outdoor grill for medium-high heat.
  • Heat the oil and garlic in a small skillet over medium heat and cook, swirling the pan occasionally, until the garlic is soft, about 2 minutes. Remove from the heat and pour into a medium heatproof bowl. Add the lime juice, cilantro and 1/2 teaspoon salt, whisk to combine and set aside.
  • Sprinkle the mahi-mahi generously with salt and pepper. Lightly oil the grill grates. Place the fish on the grill, rounded-side down, and cook until it releases from the grill and has grill marks, about 5 minutes. Carefully flip the fish and continue to cook until firm to the touch, about 5 minutes more.
  • Divide the fish among 4 plates and spoon some of the garlic-lime oil over top. Serve with lime wedges and cooked white rice and the remaining sauce on the side. Sprinkle with cilantro leaves.

Steps:

  • Start preheating the oven to 375F and lining a baking sheet with non-stick cooking spray.
  • In a bowl, combine the, lime juice, lime zest, garlic powder, paprika, chili powder, oregano and soy sauce.
  • Add fish fillets to bowl and marinate for 30 minutes or longer if desired.
  • In a separate bowl, drizzle avocado oil, salt and pepper on the trimmed asparagus.
  • Add both the marinated fish and asparagus to the prepared baking sheet.
  • Layer lime slices along the fish.
  • Bake for 18-20 minutes. Serve with rice and garnish with fresh parsley and extra lime slices. Serve warm.

4 ounces skinless mahi-mahi fillet, about ¼" thick
1/4 teaspoon chili powder
Juice of 1/2 lime plus 2 teaspoons freshly squeezed lime juice
1/4 cup chopped mango
2 tablespoons cubed avocado
1 tablespoon minced red onion
1 tablespoon diced red bell pepper
1 teaspoon finely chopped cilantro
1 teaspoon finely chopped jalapeño chile pepper (optional)
to taste sea salt

Steps:

  • Preheat the oven to 350 F. Coat a glass baking dish with cooking spray. Rub the fish on all sides with the chili powder. Place in the prepared baking dish, sprinkle with lime juice, and season with salt and freshly ground black pepper. Cover with plastic wrap and refrigerate 15 minutes.
