Like a ray of tropical sunshine in the morning, combining the taste of banana, coconut, and pineapple with just a hint of nutmeg.

Steps:
- In a saucepan, bring water to a boil. stir in oats, and cook 1 minute. Cover, and remove from heat; allow to cool.
- Preheat oven to 375 degrees F (190 degrees C). Grease and flour a muffin pan, or use paper liners.
- In a large bowl, combine flour, bran, sugar, baking powder, and nutmeg. Make a well in the center, and add mashed banana, cooked and cooled oatmeal, egg, pineapple, coconut milk, and coconut extract. Mix until smooth. Scoop into 12 muffin cups.
- Bake in preheated oven for 25 to 30 minutes, or until golden brown, and tops spring back when lightly tapped.

CALYPSO CUPS

- In a large bowl, beat butter and cream cheese until smooth. Gradually beat in flour. Refrigerate, covered, 1 hour or until firm enough to shape., Preheat oven to 350°. Shape dough into 1-in. balls; place in greased mini-muffin cups. Press evenly onto bottoms and up the sides of cups., In a small bowl, mix filling ingredients; spoon into cups. Bake 15-20 minutes or until edges are light brown. Cool completely in pans on wire racks., For frosting, beat confectioners' sugar, shortening, vanilla and enough milk to reach desired consistency. Remove cups from pans. Top with frosting. If desired, sprinkle with walnuts and additional coconut.

Steps:
- In a medium saucepan, bring broth and pineapple juice to a boil over high heat.
- Add remaining ingredients except parsley.
- Reduce heat to low and cook, covered, for 20 minutes.
- Remove from heat and let stand, covered for 5 minutes or until all liquid is absorbed.
- Fluff rice with a fork and serve with fresh parsley prinkled on top, if desired.

- Preheat oven to 350 degrees F (175 degrees C). Grease an 8x10-inch baking pan.
- Cook and stir dates, chocolate, water, white sugar, and 1/4 cup butter in a heavy saucepan over medium-low heat until melted and thickened, 5 to 10 minutes. Remove from heat; stir in vanilla extract. Set aside to cool.
- Beat brown sugar and 3/4 cup butter together in a bowl until creamy. Add oats, flour, walnuts, baking soda, and salt; stir until texture is crumbly.
- Press half the oat mixture into bottom of the prepared pan. Evenly spread chocolate-date mixture over oat mixture layer; crumble remaining oat mixture over chocolate-date layer.
- Bake in the preheated oven until topping is lightly browned, about 30 minutes. Cut into 30 small squares.

CALYPSO COFFEE CAKE WITH BUTTER RUM GLAZE
Enjoy the flavors of the Caribbean in this Plantain-Coconut Streusel Cake with Butter Rum Glaze. This recipe was created for RSC#8, and I know you will enjoy it! To lower the fat content, you can substitute non-fat plain yogurt for the sour cream. Another popular substitution is bananas for the plantains, but if you do that you will definitely have a sweeter cake with a stronger banana flavor.

Steps:
- Grease and flour a bundt pan; preheat oven to 350°F.
- Peel the plantain(s) and slice (about 1/2 inch slices should be fine). Bring a pot of water to a boil, drop the plantain slices into the boiling water and boil for about 20 minutes until tender. Drain plantains and mash with a fork.
- While plantains are cooking, mix the streusel ingredients together in a small bowl and set aside.
- In a large mixing bowl, cream the butter, brown sugar and white sugar together.
- Add eggs, one at a time; then mix in sour cream and mashed plantains.
- In a separate bowl, mix together the flour, baking soda, baking powder, salt and ginger.
- Slowly add the dry ingredients to the wet ingredients, mixing until combined.
- Pour about 1/2 the batter in to the prepared bundt pan. Sprinkle the streusel over the cake; finally, pour remaining batter over the struesel.
- Bake at 350°F for 55 minutes or until cake tests done with toothpick test.
- Let cake cool in pan for 30 minutes.
- While cake is cooling, prepare glaze by mixing butter, brown sugar, and lime juice in a small sauce pan and bring to a boil.
- Reduce heat and simmer for 3-5 minutes.
- Allow to cool slightly before adding rum.
- Carefully invert cake onto plate.
- While cake is still warm, slowly drizzle the glaze over the cake, allowing it to soak in to the cake.
- When cake is completely cool, dust with confectioners sugar.
