OVEN BAKED RICE AND VEGETABLES
Steps:
- Preheat oven to 200C/390F (standard) / 180C/350F (fan / convection).
- Mix Spice Mix in a small bowl.
- Place Rice ingredients in a baking dish (including the carrots), about 23 x 30 cm / 9 x 13". Add 1 1/2 tsp Spice Mix. Stir, cover with foil, bake for 20 minutes.
- Meanwhile, place Roasting Vegetable ingredients in a large bowl, drizzle with 1/4 cup olive oil. Sprinkle over remaining Spice Mix. Mix well - hands are best for this.
- Remove rice from oven.
- Turn oven UP to 220C/430F (standard) / 200C/390F (fan / convection).
- Take off foil. Spread the Roasting Vegetables on top of the rice. Make sure there's a bit of each type of vegetable on the surface. Push corn mostly under.
- Drizzle with more oil (optional), sprinkle with more pepper.
- Bake for 30 minutes. Remove from oven, rest for 5 - 10 minutes.
- Sprinkle with parsley if desired. Push vegetables aside, fluff rice and toss it through the vegetables a bit (rice gets more flavour). Serve!

BAKED CHINESE RICE WITH PEAS AND GINGER
Steps:
- Preheat an oven to 350 degrees F. In a large flame and ovenproof casserole dish, heat the oil over medium-high heat. Add the cabbage and ginger, and stirring frequently, cook until the cabbage is just wilted, about 1 to 2 minutes. Season the cabbage mixture with the sea salt, add the rice wine, and stir to combine. Add the rice and toss to coat it in the oil. Pour in the water and bring everything to a boil, then cover the dish and slide it into the oven for 20 minutes.
- When the rice is tender, remove the dish from the oven and fold in the peas. Cover the dish again, and set the rice aside to steam for another 10 minutes.
- To serve: fluff the rice with a fork or chopsticks, and sprinkle with the cilantro.
CHINESE BLACK RICE VINEGAR AND GINGER
Steps:
- Julienne the ginger and place in a small dipping bowl filled with Chinese black vinegar. Best if left for an hour for the flavors to infuse.

- Place rice in strainer. Rinse under cold water until water runs clear. Drain well. Transfer rice to heavy medium saucepan. Add 3 cups cold water. Stir in ginger. Bring water to boil over high heat. Reduce heat to low, cover, and cook until rice is tender, about 12 minutes. Remove from heat. Sprinkle peas over rice (do not stir into rice). Cover and let stand 5 minutes. Gently stir peas into rice. Season rice lightly with salt. Transfer to bowl and serve.
