This dish is baked boneless chicken breasts or chicken tenders covered with cream of chicken soup. Chicken, creamy chicken, everywhere! If desired, serve over egg noodles.

4 skinless, boneless chicken breast halves
1 pinch poultry seasoning
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken in a 9x13 inch baking dish and season to taste.
  • Mix soup with soup can of milk/half-and-half/water (if desired, use 2 cans to make sauce thicker). Pour soup mixture evenly over chicken and bake in the preheated oven for about 1 1/2 hours or until chicken is no longer pink and is tender.

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted

Pepper to taste
1/2 cup sour cream
English muffins, split and toasted
Cayenne pepper or paprika

Steps:

  • In a large skillet, saute the chicken in oil until no longer pink. Stir in the soup, water, salt and pepper. Bring to a boil. Remove from the heat and stir in sour cream. Serve over toasted English muffins. Sprinkle with cayenne or paprika.

This chicken dish is good enough to serve to guests! To save time you can brown the chicken in the morning then refrigerate until ready to add on the sauce and bake. I ususally double the complete sauce recipe and make 9-10 breasts, I bake it in a large shallow roasting pan. You can make this using skin-on chicken pieces in place of the chicken breasts.

seasoning salt (or use white salt)
1 tablespoon butter
2 tablespoons oil
1 (10 3/4 ounce) can cream of chicken soup, undiluted
1 cup sour cream
4 ounces cream cheese (very soft)
1 -2 tablespoon fresh minced garlic (or to taste)
1 small onion, finely chopped
2 large green onions, chopped
1/4 cup parmesan cheese
1 cup grated cheddar cheese
1/2 teaspoon black pepper (or to taste)

Steps:

  • Set oven to 350 degrees.
  • Lightly grease a 13 x 9-inch baking dish.
  • Heat oil in a skillet and brown the chicken on both sides (seasoning with season salt and pepper while browning) place the chicken into the baking dish.
  • In a large bowl mix together cream of chicken soup, sour cream, soft cream cheese, garlic, onion, green onions, Parmesan cheese, cheddar cheese and black pepper until well combined.
  • Season with salt if desired.
  • Pour over the chicken in the baking dish and turn the chicken to coat with the sauce.
  • Sprinkle with more grated Parmesan cheese if desired.
  • Bake for about 40-45 minutes, or until the chicken is cooked.
  • Serve over cooked rice.

This is really easy to make and with cream cheese and butter it's really rich. I have served after a funeral with tons of requests for the recipe. Because of the richness I have never made this for a dinner but always at a gathering. You could reduce the butter to 1 1/2 sticks with success, but why do it? It's really good this way. I have seen a couple other chicken casseroles using crackers, but none with all of these ingredients which really make this special. It looks really creamy, but it turns out great.

¾ cup shredded cheddar cheese (divided)
5 slices thick cut bacon (cooked and crumbled, divided)
1 ounce dry ranch dressing mix (1 package)
4 green onions (thinly sliced)

Steps:

  • Preheat oven to 400 degrees.
  • Spray bottom of 9x13" baking pan with non-stick cooking spray.
  • Pound chicken breasts until they about about 1/4" thick (you want them to all be the same thickness so that they finish cooking at the same time).
  • Place chicken in a single layer in the baking pan and season with salt and pepper (sometimes I also season the chicken with a little bit of onion powder and garlic powder as well).
  • In a medium bowl, mix together the cream cheese, half of the shredded cheddar cheese, half of the bacon crumbles, and the dry Ranch dressing mix.
  • Spread the cream cheese mixture evenly over all the chicken breasts in the pan.
  • Top the chicken with the remaining shredded cheddar cheese.

  • Remove chicken from oven and top with remaining bacon crumbles and green onion.

3/4 cup butter, melted

Steps:

  • Arrange chicken in lightly greased 13 x 9 inch baking dish. Put sliced swiss cheese on each chicken breast.
