1 pound lean ground beef
3 cloves garlic (minced)
salt and pepper
1/2 head cabbage (chopped)
1 can diced tomatoes (28 ounce)
2 stalks celery (chopped)
2 carrots (chopped)
1 can kidney beans, drained (16 ounce)
3 1/2 cups Kitchen Basics Beef Stock
1 Tablespoon McCormick Italian Seasoning

Steps:

  • In a large pot or dutch oven, add the ground beef and brown. Add the garlic, and salt and pepper to taste. Add chopped cabbage, diced tomatoes, celery, carrots, kidney beans, broth, and Italian seasoning.
  • Bring to a boil, reduce heat, and let simmer for an hour. Garnish with parsley if desired.

This is an incredibly easy and quick soup that is awesome. It will really warm you up on a cold day. My family loves it. Try substituting ground turkey for the beef, too! I serve it with Mexican-style cornbread.

1 (15 ounce) can pinto beans
1 (15 ounce) can kidney beans
1 (10 ounce) can diced tomatoes with green chile peppers
1 (14.5 ounce) can Italian-style diced tomatoes
1 (15 ounce) can whole kernel corn, drained
1 (11.5 ounce) can tomato juice
1 ½ cups water
1 (16 ounce) package coleslaw mix
1 teaspoon Greek-style seasoning

Steps:

  • In a large pot over medium heat, cook beef until brown; drain.
  • Return meat to pot with pinto beans, kidney beans, diced tomatoes with green chiles, Italian-style diced tomatoes, tomato juice, water, coleslaw mix and Greek seasoning. Simmer over low heat 1 hour.

I agree that this is a very good recipe. My 93-year-old mother-in-law has recently told me that this is the best meal I have ever brought her, and there have been many. All the veggie prep can be done while the onions and bay leaves are simmering. I do add more broth when the veggies go in. The cabbage will add a significant amount of water but the beef flavor is key. It will freeze great in resealable bags for a quick meal so I normally double the recipe when going to this effort, which in my opinion is well worth it. The 2 hour simmering step for the beef can be done the day before.

1 cube beef bouillon
2 cups beef broth
1 large onion, chopped

1 1/4 ounces Lipton Onion Soup Mix (1 packet)

Steps:

  • Preheat oven to 275 degrees.

1 teaspoon paprika
½ teaspoon cumin
2 teaspoons dried mint
4 cups hot water
½ cup rice
1 tablespoon lemon juice

Steps:

  • Heat olive oil in a pan over medium heat.
  • Add in onions and cook until translucent.
  • Add in ground beef. Cook it by pressing on the large blocks of meat with a spatula until no blocks are left. Continue cooking it covered for 5 minutes.
  • Add in garlic, tomato paste and pureed tomato. Keep cooking it covered for 5-10 minutes.

1/2 cup olive oil
1 1/2 pounds green cabbage (chopped)
1/2 cup leeks (halved and sliced)
1/2 Tablespoon kosher salt
2 teaspoons sugar (optional)
vegetable oil
1-1 1/2 pounds flanken
2 carrots (peeled)
2 celery stalks
1 head of garlic (unpeeled, halved crosswise)
1 onion (unpeeled)
1/4 cup fresh herbs of your choosing
10 cups water
2 1/2 teaspoons salt
2 1/2 cups golden beets (peeled and diced)
2 carrots (peeled and sliced)
salt and pepper (to taste)
fresh herbs (to taste (optional))

Steps:

  • Start by making the cabbage: Set a deep, large pan over medium-high heat. Add the olive oil.
  • Add the cabbage, leeks, salt and sugar. Immediately turn the heat down to low. Stir every 8-10 minutes (be careful not to interrupt the browning process by moving the cabbage around a lot) until the mix turns a deep brown, about 40 minutes. If at any point the pan looks too dry, gradually add a little more olive oil.
  • Once cooked, set the cabbage aside in a bowl lined with a paper towel. Pat down with more paper towel to remove any excess oil.
  • To make the broth, heat a large pot over high heat. Brown the flanken in batches, returning the meat to the pot when the last batch is done.
  • Add the vegetables, herbs, salt and water. Bring to a boil, cover with a lid and turn down to a simmer. For the first 15 minutes, check on the broth to remove any scum that rises to the top. I like to skim off some of the fat as the flanken simmers, but you may find it easier to do this once the soup cools down and the fat solidifies.
  • After 1 1/2 hours, discard the vegetables and herbs, and add the beets, carrots and caramelized cabbage. Continue to cook for another 30 minutes, or until tender. Add salt and pepper to taste, and fresh herbs, if you'd like.
