2 tablespoons unsalted butter
One 15.25-ounce can whole kernel sweet corn, drained
One 14.75-ounce can cream-style sweet corn
1 1/2 cups half-and-half
3 tablespoons all-purpose flour
2 tablespoons maple syrup
1/8 teaspoon red chile flakes
2 cloves garlic, grated on a rasp or finely minced
2 scallions, white and green parts, finely chopped
Kosher salt and freshly ground black pepper
1 1/2 cups shredded Cheddar
1 1/2 cups shredded mozzarella
3 large eggs, beaten

Steps:

  • Preheat the oven to 350 degrees F. Grease the bottom and sides of an 8-by-8-inch baking dish with the butter.
  • In a large bowl, whisk together the sweet corn, cream-style corn, half-and-half, flour, maple syrup, chile flakes, garlic and scallions. Season with a nice pinch of salt and a few grinds of pepper. Taste and season more if needed. Whisk in the Cheddar, mozzarella and eggs. Pour into the prepared baking dish.
  • Bake until set in the center and golden brown around the edges, 50 to 60 minutes. Allow to rest for 10 to 15 minutes before serving.

1 eggplant, sliced into 1/2-inch-thick rounds
3 tomatoes, sliced
1 tablespoon extra virgin olive oil
1 teaspoon oregano
⅓ cup grated Parmesan cheese
salt and ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare a baking dish with non-stick play.
  • Arrange eggplant and tomato slices into the bottom of the prepared baking dish. Drizzle olive oil over the vegetables; season with oregano, salt, and pepper. Sprinkle Parmesan cheese over the entire mixture.
  • Bake in preheated oven until the cheese is beginning to brown, about 30 minutes. Switch oven broiler to high; continue baking until completely browned, about 5 minutes.

2 eggplants
2 teaspoons salt
1 ounce butter
1 onion, chopped
1 garlic clove, crushed
2/3 cup vegetable stock
3 tomatoes, skinned and chopped
1 tablespoon chives, chopped
2 tablespoons sweetcorn
salt and pepper
1 ounce breadcrumbs
1 ounce edam cheese or 1 ounce cheddar cheese, grated

Steps:

  • Cut eggplants in half lengthways, slash the flesh and sprinkle with the salt.
  • Place, cut side down, on a plate and let sit for 1 hour.
  • Rinse and drain, then remove and chop the flesh, reserving the skins.
  • Preheat oven to 375°F
  • Heat the butter in a pan, add the onion and fry until soft.
  • Add the eggplant flesh, garlic, 2 Tbs. stock, tomatoes, chives, sweet corn, salt and pepper to taste; cook until soft.
  • Stuff into the eggplant cases.
  • Place eggplants in a shallow ovenproof dish.
  • Mix the breadcrumbs and cheese and sprinkle over the eggplants.
  • Add remaining stock to the dish, then cover with foil.
  • Bake at 375°F for 30 minutes.
  • Serve immediately.

1 medium ear sweet corn, husk removed
1 small onion, finely chopped
1 small tomato, chopped
1 garlic clove, minced
4-1/2 teaspoons canola oil
2 tablespoons minced fresh parsley

1/4 teaspoon minced fresh oregano
1/4 teaspoon pepper
1/2 cup water
1/3 cup shredded cheddar cheese
