SOUTHERN GRITS AND EGGS

3/4 cup quick-cooking grits
1/2 cup shredded Cheddar cheese (about 2 ounces)
Kosher salt and freshly ground black pepper
8 large eggs
2 tablespoons vegetable oil
8 ounces frozen cut okra, thawed
1 bunch scallions, chopped (white and green parts separated)
1 green bell pepper, thinly sliced
Large pinch cayenne pepper

Steps:

  • Bring 3 cups water to a boil in a medium saucepan. Add the grits, reduce the heat to medium and cook, stirring occasionally, until thickened, about 5 minutes. Remove from the heat. Stir in the cheese and season with salt and black pepper; cover to keep warm.
  • Crack the eggs into a large bowl. Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the okra, scallion whites, bell pepper, cayenne, 1/4 teaspoon salt, and black pepper to taste; cook, stirring, until the vegetables start to soften, 2 to 4 minutes.
  • Carefully slide the eggs on top of the okra mixture, keeping the yolks intact. Reduce the heat to medium; cover and cook, rotating the skillet occasionally, until the eggs are just set, about 6 minutes.
  • Serve the grits with the vegetables and eggs. Top with the scallion greens.

Our sausage and grits casserole is chock full of southern charm and flavor. Make with or without eggs and substitute different cheeses to tailor to your own tastes.

1 lb ground pork sausage
5 cups water
2 teaspoons salt
1 cup uncooked quick-cooking grits
1 cup shredded sharp Cheddar cheese (4 oz)
4 oz cream cheese, cut into small cubes
1/4 teaspoon black pepper
6 eggs
Salt and pepper
2 tablespoons chopped fresh chives

Steps:

  • Heat oven to 350°F. Lightly spray 13x9-inch (3-quart) baking dish with cooking spray.
  • In 10-inch skillet, cook sausage over medium heat until cooked through and no longer pink. Drain well.
  • In 3-quart saucepan, heat water to boiling over medium-high heat. Stir in salt. Stir in grits with whisk, stirring to ensure lumps have been removed. Reduce heat to simmer. Cover; cook 6 to 8 minutes, stirring occasionally. Add Cheddar cheese, cream cheese and pepper to grits. Stir until cheeses have melted. Stir in crumbled drained sausage; mix well. Pour into baking dish.
  • Bake 15 minutes. Remove from oven, and carefully make 6 indentions in grits using back of large ladle or spoon. Crack 1 egg into each indention. Sprinkle eggs with salt and pepper.
  • Bake 12 to 15 minutes or until whites and yolks are firmly set. Garnish with chives.

6 thick-sliced bacon strips, chopped
3 cups water
3 cups chicken stock
1 teaspoon garlic powder
1/2 teaspoon pepper
2 cups quick-cooking grits
12 ounces Velveeta, cubed (about 2-1/3 cups)
1/2 cup butter, cubed
1/2 cup 2% milk
4 large eggs, room temperature, lightly beaten
2 cups shredded white cheddar cheese

Steps:

  • Preheat oven to 350°. In a large saucepan, cook bacon over medium heat until crisp, stirring occasionally. Remove pan from heat. Remove bacon with a slotted spoon; drain on paper towels., Add water, stock, garlic powder and pepper to bacon drippings; bring to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, 5-7 minutes or until thickened, stirring occasionally. Remove from heat., Add Velveeta and butter; stir until melted. Stir in milk. Slowly stir in eggs until blended. Transfer to a greased 13x9-in. baking dish. Sprinkle with bacon and shredded cheese. Bake, uncovered, 40-45 minutes or until edges are golden brown and cheese is melted. Let stand 10 minutes before serving. Freeze option: Cool unbaked casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove casserole from refrigerator 30 minutes before baking. Bake grits as directed, increasing time to 50-60 minutes or until heated through and a thermometer inserted in center reads 165°.

If it comes out clean you are ready to serve. This is a great brunch recipe served with biscuits, sweet rolls, and fresh fruit.

1 cup half-and-half
1 teaspoon salt
1 cup stone-ground grits
8 ounces shredded sharp Cheddar cheese
½ cup butter
1 pound bulk pork sausage
3 eggs
½ cup milk
1 orange bell pepper, chopped small
1 red bell pepper, chopped small

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Bring water, half-and-half, and salt to a boil in a saucepan; slowly whisk in grits. Reduce heat to low and simmer, stirring occasionally, until thick, about 20 minutes. Stir in Cheddar cheese and butter until melted. Cool.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.

1/2 cup quick-cooking grits
1 1/4 cups shredded sharp cheddar cheese
3/4 cup coarsely chopped country-style ham (3 oz., thickly sliced)
salt
black pepper
1/8 teaspoon garlic powder
4 large eggs
1 -2 tablespoon sliced scallion

Steps:

  • Preheat the oven to 350°.
  • Lightly grease an 8-inch square baking pan with butter, oil, or cooking spray.
  • In a medium saucepan, cook the grits according to package directions.
  • Once the grits are cooked, stir in 3/4 cup of Cheddar cheese, the ham, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and the garlic powder and continue stirring until the cheese melts.
  • Scrape the grits mixture into the prepared pan.
  • Using a spoon, make four egg-size indents in the grits mixture.
  • Crack 1 egg into each nest.
  • Season the eggs lightly with salt and pepper.
  • Top with the remaining 1/2 cup Cheddar.
  • Bake until the whites are set but the yolks are still runny and the cheese is melted, 15-20 minutes.

3 cups cooked grits
2 tablespoons melted butter
2 eggs, beaten
1 1/2 cups evaporated milk
1 3/4 cups grated Cheddar
Paprika, to taste
Cayenne pepper, to taste (usually no more than 1 or 2 dashes)

Steps:

  • Preheat oven to 400 degrees F.
  • Mash grits until smooth, if they are leftovers. Add melted butter, eggs, and evaporated milk. Then add 1 1/2 cups grated cheese, reserving 1/4 cup for the topping. Combine thoroughly. Add paprika and cayenne. Pour mixture into a buttered casserole. Bake for 25 to 30 minutes or until brown. Sprinkle with remaining grated cheese and more paprika. Return to oven and cook a few minutes more, until topping has melted.

1/4 cup grated cheddar (2 ounces), divided

Steps:

  • Preheat oven to 400 degrees. Brush four 8-ounce ramekins or other small ovenproof dishes with oil. Prepare grits according to package instructions. Stir in arugula and 2 tablespoons cheddar, and cook until cheddar melts, about 30 seconds. Season with salt and pepper.
  • Divide grits among dishes. Make a well in each, then crack an egg into each well; season. Bake on a rimmed baking sheet, until whites are set but yolks are still runny, about 20 minutes, rotating sheet halfway through. 1 medium onion, chopped
1 small jalapeno peppers, seeded and finely chopped or 2 -4 dashes liquid
red pepper seasoning
2 garlic cloves, finely chopped
1 3/4 teaspoons chili powder
2 cups chicken broth
1 cup old-fashioned grits (not quick-cooking)
2 eggs
4 ounces cheddar cheese, shredded (1 cup)

Steps:

  • Preheat oven to 375. Lightly butter 1-quart baking casserole.
  • Melt butter in medium saucepan over medium-low heat until hot. Add onion; saute for about 5 minutes or until almost tender. Add jalapeno and garlic; saute for about 2 minutes. Stir in chili powder.
  • Increase heat to medium. Add chicken broth. Bring to boiling. Reduce heat to low; gradually whisk in grits. Cook, stirring constantly, for 1 to 2 minutes or until grits thicken. Remove from heat.
  • Beat eggs slightly in a small bowl. Quickly beat small amount of hot grits into eggs. Return to saucepan with remaining grits, stirring constantly. Stir in cheese; pour into prepared casserole.

1 1/2 cups quick-cooking grits
1/2 cup (1 stick) unsalted butter, cut into small pieces

1/2 pound (1 3/4 cups) shredded cheddar cheese, plus 1/2 cup coarsely grated cheddar cheese

Steps:
