Tender, juicy Garlic Butter Baked Chicken Breast, that's packed with flavour from the garlic butter sauce. It's totally a win win!

3 boneless skinless chicken breasts
kosher salt and freshly ground black pepper
1 teaspoon paprika
4 tbsp butter (melted)
1 teaspoon Italian seasoning
1 tablespoon fresh parsley (chopped)
2 cloves of garlic (minced)
1 tbsp. olive oil (extra virgin)

Steps:

  • Preheat oven to 400°F. Season chicken breast with salt, pepper, paprika and set aside.
  • In a small bowl mix together the butter, Italian seasoning, parsley, and garlic. Set aside.
  • In a cast iron skillet, heat olive oil over medium heat. When the skillet is really hot add chicken breast. Sear until golden. It's about 1-2 minutes each side.
  • Pour garlic butter mixture over the chicken breast. Place skillet in the oven and cook until cooked through. It's about 20-30 minutes or until chicken breasts gets to an internal temperature of 165F.
  • Remove from the oven. Using a spoon, pour some of the butter sauce left in the skillet onto the chicken breast before serving.

4 (16-ounces) boneless skinless chicken breasts
salt and fresh ground pepper (, to taste)
1 stick ((1/2-cup) butter*)
6 cloves garlic (, minced)
1 tablespoon fresh rosemary leaves
1/2 cup Shredded Reduced Fat 4-Cheese Italian

Steps:

  • Preheat oven to 375F.
  • Lightly grease a baking dish with a pat of butter.
  • Season chicken breasts with salt and pepper; arrange chicken in a single layer in prepared baking dish and set aside.
  • Add butter to a skillet and melt over medium heat.
  • Stir in garlic and cook over medium heat for 4 to 5 minutes, or until lightly browned, stirring very frequently. DO NOT burn the garlic.
  • Stir in the rosemary and remove from heat.
  • Pour the prepared garlic butter over the chicken breasts.
  • Bake for 30 to 32 minutes, or until chicken's internal temperature is 165F.
  • Sprinkle with cheese and cook for an additional 3 minutes, or until cheese is melted.
  • Remove from oven and let stand a couple minutes.
  • Transfer chicken to serving plates; spoon a little bit of the garlic butter sauce over the chicken and serve.

1 tablespoon olive oil
¼ cup unsalted butter
4 large cloves garlic, grated

¼ cup white wine
¼ cup low-sodium chicken broth
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Preheat oven to 400°F. Sprinkle chicken with salt and pepper. Heat oil in a large ovenproof skillet over medium-high heat. Add the chicken, in a single layer; cook until golden brown on the bottom, about 4 minutes. Transfer to a plate.
  • Meanwhile, combine butter, garlic, Italian seasoning and crushed red pepper in a small microwaveable bowl. Microwave on High until the butter is melted and the garlic is sizzling, about 45 seconds.
  • Cook wine in the skillet over medium-high heat until reduced by half, about 1 minute. Add broth; bring to a simmer. Return the chicken to the pan; spoon the garlic butter mixture over the chicken. 1 (3 pound) whole chicken
1 cup unsalted butter, softened
1 lemon
3 tablespoons minced garlic
5 cloves garlic
¼ cup chopped fresh rosemary
5 sprigs fresh rosemary
salt to taste
ground black pepper to taste
1 teaspoon paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Rinse the chicken and pat dry. Zest the lemon. Slice remaining lemon into quarters and place to the side. With hand mixer combine butter, lemon zest, minced garlic and 1/4 cup chopped rosemary.
  • Take your hand and slide it between the skin and the meat on the breast, as well as loosening the 'pockets' between the leg and wing joints. Scoop some of the rosemary butter mixture onto your fingers and begin to stuff into the 'pockets' on the breast, leg, wings, etc. (Save approximately 1/4 of the rosemary butter mixture and rub on the inside of the chicken.)
  • Season the cavity of the chicken with the salt, pepper and paprika. Add the quartered lemon, rosemary sprigs and sliced garlic to the chicken cavity. Bind the legs with culinary twine and tuck the wings into the leg joints to secure.
  • Place the chicken breast up onto the roasting rack and into the oven. Roast for approximately 50 minutes, or until the juices run clear. Remove the 'stuffing', carve and serve.
