A great family favorite cake recipe, using ripe bananas, pineapple, cherries, nuts and chocolate chips to give you a lovely soft bread, perfect for breakfast or a snack

Steps:
- In a large bowl, cream butter and sugar until light and fluffy.
- Slowly add the eggs.
- In a separate bowl, combine the flour, baking powder, baking soda and salt then add to the creamed mix, alternating with the pineapples and bananas until everything is combined.
- Gently fold in the chocolate chips, cherries and walnuts.
- Pour into two greased 9-inch x 5-inch loaf pans. Bake at 350° for 60-65 minutes.
- Allow to cool for 5 - 10 minutes before turning out of pans.

- In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with bananas and pineapple. Fold in the chocolate chips, cherries and walnuts. , Pour into two greased 9x5-in. loaf pans. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

BANANA SPLIT BREAD
A yummy twist on banana bread... I also use this recipe to make muffins, just bake for the amount of time suggested on the banana bread mix box. If I make bread, I rarely make the glaze because it doesn't really need it and the bread is very moist. If making muffins, those tend to be less moist, so I will drizzle the glaze on.

Steps:
- Heat oven to 375.
- Grease and flour bottom of pan.
- Add water to reserved pineapple juice to make 3/4 cup.
- In large bowl, combine all bread ingredients and stir till moist.
- Pour batter into pan and bake at 375 for 55-60 minutes or until toothpick comes out clean.
- Cool loaf in pan for 15 minutes.
- Remove from pan, cool for 45 minutes.
- Glaze: In small bowl, combine all glaze ingredients and stir until well blended. Drizzle over cooled loaf.
- HIGH ALTITUDE: Add 1 tbsp flour to mix. Bake at 375 for 50-60 minutes.

- Add the first ten ingredients (through baking soda) to a 1 1/2- to 2-lb. bread machine according to the manufacturer's directions. Select the quick bread or cake cycle* for 1 1/2 lb. loaf and light crust.
- Once the bread machine beeps, about 10 minutes into the dough mixing, add the chocolate chips and cherries to the dough. Bread machine will continue the cycle as programmed.
- Once bread machine has completed the cycle, let pan remain in machine an additional 15 minutes before removing. Let bread cool in pan 10 minutes. Remove from pan and let cool completely on wire rack. Wrap in plastic wrap and refrigerate overnight before slicing.

THE ULTIMATE BANANA SPLIT
Steps:
- Preheat your oil in a heavy-based pot for deep frying to 365 degrees F.
- In a large mixing bowl combine flour, cornstarch, baking powder, sugar, salt, and cinnamon. Make a well in the center and add the yolks and club soda. Using a whisk, stir from the inside working your way out, slowly incorporating the dry ingredients without forming any lumps. Peel the bananas and dip in the batter and coat well. Fry in hot oil for 4-5 minutes until batter is puffy and golden brown. Drain on paper towels when done.
- While bananas are cooking, prepare caramel sauce. Combine the sugar and water in a large heavy saucepan over medium heat. Cook, swirling the pot around, until the mixture is a deep caramel color and looks like syrup, about 8 minutes. Add the butter then carefully pour in the cream (it will bubble up) and continue to cook for another minute. Add a pinch of salt then cool before serving.
- To serve the banana split, cut the bananas lengthwise and top with a large scoop of vanilla bean ice cream. Pour warm caramel sauce over the top and finish with a sprinkle of banana chips and toasted pecans.

- Line a baking sheet with parchment. Put the chocolate in a small microwave-safe bowl, and microwave in 30-second increments, stirring after each, until smooth. Transfer the melted chocolate to a mug.
- Put the walnuts in another small bowl. Peel the bananas, trim the ends and cut each into six 2-inch pieces. Dip each piece halfway into the chocolate, and let any excess drip off. Roll the chocolate-dipped ends in walnuts, then set them on the prepared baking sheet. Refrigerate to set the chocolate. (The bananas can be refrigerated up to 2 hours.)
- Whip the cream in a small bowl until soft peaks form. Add the preserves, and stir to incorporate. Transfer the mixture to a pastry bag fitted with a large star tip. Pipe a star-shaped dollop on top of each banana. Garnish with a piece of cherry and sprinkles.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Whisk together flour, baking powder, and baking soda in a medium bowl. Combine bananas and cream in another bowl.
- Cream sugar and butter in a third bowl with an electric mixer until light and fluffy. Beat in egg. Add flour mixture in 2 batches, alternating with the banana mixture, beating batter briefly after each addition. Fold in chocolate chips and pecans. Pour batter into the prepared pan.
