RICH AND CHEESY SHRIMP-STUFFED BAKED POTATOES
Steps:
- Gather the ingredients.
- Preheat the oven to 400 F. Rinse the potatoes and prick several times with a fork.
- Place potatoes in the microwave and cook on high for about 10 minutes or until potatoes are fully cooked (or you can also cook them in an oven all the way through).
- Cut each potato in half lengthwise.
- Scoop out the potato flesh into a medium mixing bowl. Set potato skin shells on a baking sheet.
- Sauté the shrimp scampi in a large skillet over medium heat for 6 to 7 minutes (follow package directions). The shrimp should be almost fully cooked.
- Remove the shrimp from the skillet with a slotted spoon and set aside.
- Pour the scampi sauce from the pan into a mixing bowl with the innards of the potatoes. Mash the scampi sauce with the potato.
- Add the cheese, sour cream, and shrimp. Stir to incorporate. Add black pepper to taste.
- Scoop potato and shrimp mixture into the four potato skin shells. Place them on the baking sheet, and bake stuffed potatoes for 10 to 15 minutes until thoroughly heated.
- Plate and garnish with fresh dill, serve hot.

- Preheat the broiler. Toss the shrimp, snap peas, garlic, thyme and olive oil in a large bowl; set aside.
- Put the potatoes in a pot and cover with water by 1 inch; bring to a boil. Reduce to a simmer and cook until fork-tender, about 10 minutes. Reserve 1/4 cup cooking water, then drain the potatoes and return to the pot. Add the buttermilk, 2 tablespoons butter, 1/2 teaspoon salt and a few grinds of pepper. Mash, gradually adding the reserved cooking water as needed. Stir in 1 tablespoon chives.
- While the potatoes are cooking, spread the shrimp and snap peas on a baking sheet. Broil until just cooked through and charred in spots, 6 to 8 minutes.
- Dot the shrimp and snap peas with the remaining 2 tablespoons butter and sprinkle with the lemon zest. Toss until the butter melts and the mixture is well coated; season with salt and pepper. Divide the potatoes, shrimp, snap peas and any juices from the baking sheet among plates. Sprinkle with the remaining 1 tablespoon chives.

BAKED NEW POTATOES WITH PRAWNS
Although this dish takes a little while to cook in the oven, it is so quick and easy to prepare that it makes an ideal dinner recipe idea!

- Wash and prick the potatoes. Place in a roasting tin with 15ml (1tbsp) oil and sprinkle with sea salt. Cook at 200°C (180°C fan) mark 6 for 45min-1hr or until soft.
- Meanwhile, finely chop the shallots. Peel, de-seed and roughly chop the tomatoes.
- Heat the remaining oil in a saucepan, add the shallots and cook until soft. Crush the garlic and add to the pan with the paprika; cook for 30sec. Add the tomato paste and cook for 1min. Add the tomatoes, season and bubble for 15-20min or until the mixture is thick and pulpy.
- Crumble the goat's cheese, mix with the crème fraîche and chopped chives and season with pepper. Cut the potatoes with a cross, about three-quarters of the way through, then squeeze to open further. Mix the prawns into the tomato mixture, then put a spoonful into each potato.
- Place the filled potatoes in an ovenproof dish, spoon goat's cheese mixture over the top, then cook at 220°C (200°C fan) mark 7 for 15-20min or until hot to the centre. SWEET JACKET POTATO WITH PIRI-PIRI PRAWNS

- Heat oven to 200C/180C fan/gas 6. Put the sweet potato on a baking tray, rub all over with a little of the oil and season with salt. Bake for 45 mins until really soft.
- Meanwhile, heat the remaining oil in a frying pan. Add the garlic and pepper and cook for 2 mins, making sure the garlic doesn't burn. Add the chilli flakes, half the paprika, the vinegar, ketchup, 1 tbsp water and prawns to the pan, then bubble for 2 mins until the prawns are cooked through. Stir through the parsley, saving a little to sprinkle over at the end.
- Mix the remaining paprika into the mayonnaise. Once the potato is cooked, split it down the centre, pile in the prawn mixture and dollop the paprika mayo on top. Scatter over the remaining parsley and serve.

- Preheat the oven to 400 degrees F (200 degrees C). Scrub potatoes and dry.
- Place potatoes directly on the center oven rack and bake for 1 hour. During the last 20 minutes of baking time, make the sauce.
- Combine 2 cups milk and heavy cream in a microwave-safe container and microwave on high power for 45 seconds; set aside.
- Melt butter in a large nonstick skillet over medium heat until bubbly. Stir in garlic, salt, pepper, and nutmeg and cook, stirring, about 1 minute. Stir in flour and cook, stirring continually, until the flour mixture is bubbly. Stir in hot milk and cream, and cook, stirring continually, until mixture comes to a boil, 3 to 5 minutes.
- Remove from heat and stir in Gruyere and Parmesan cheeses until melted, about 1 minute. If the sauce is too thick, stir in more milk, in 2 tablespoon increments, until sauce reaches the desired consistency.
- To assemble, cut open each potato and gently flake the flesh of each potato with a fork. Place 1/4 of cooked shrimp on top of each potato and cover with sauce. Sprinkle with chopped parsley and serve.
