HANDMADE ORECCHIETTE

Steps:
- Mound the flour on a clean work surface. Sprinkle with the salt and toss with your fingers, then make a well in the center of the flour and pour in the beaten egg. Quickly combine with your fingers and as the dough starts to come together, add 1 tablespoon of water at a time, up to 3 tablespoons total. Keep kneading until you get a solid but soft ball of dough, about 5 minutes. Place it in a bowl and cover with a damp towel for 30 minutes to 1 hour.
- Divide the dough into 4 equal pieces. Roll them each out on a floured surface to make a skinny log about 10-inches-long. Pinch off a small piece of dough, just enough to cover your fingertip, and roll the dough against the floured work surface with your thumb, creating a "little ear". Transfer the orecchiette to a large piece of parchment paper. Keep pinching and making the orecchiette with your thumbs until no dough is left.
- In the meantime, bring a pot of salted water to a boil. Pick up the sides of the parchment paper to slide the fresh pasta into the water. Boil until the pasta floats to the top, 2 to 3 minutes.
- Reserve about half a cup of pasta water, and drain the rest.
- Combine the pasta with the oil and 2 tablespoons pasta water in a large bowl (add more pasta water if it seems dry!). Season with a pinch of salt and pepper and divide between 2 dinner bowls, or among 4 smaller bowls. (Our kids eat only a tiny bit, so we could still call this 2 servings.)
- Garnish with freshly grated Parmesan and fresh basil leaves!
BAKED ORECCHIETTE WITH PORK SUGO
In Italian cuisine, a sugo is a gravy or sauce. Here, Ethan Stowell prepares a pork sugo by braising pork shoulder until it almost falls apart, shredding it in a food processor and mixing it with a red-wine-and-tomato sauce; then he bakes it with orecchiette under a topping of Parmigiano cheese until crispy. The dish is an excellent alternative to the usual baked pasta, because it's not as heavy and cheesy but still delicious and satisfying. - Season the pork with salt and pepper.
- In a large enameled cast-iron casserole, heat the olive oil until shimmering.
- Add the pork in a single layer and cook over moderately high heat until the pieces are golden brown all over, about 12 minutes.
- Add the carrots, celery, onion and garlic and cook until softened and browned in spots, about 8 minutes.
- Add the tomatoes and their juices and bring to a simmer.
- Add the red wine and thyme sprigs and cook over high heat until the wine is reduced by half, about 5 minutes.
- Add the stock and bring to a boil.
- Cover and simmer over low heat until the pork is very tender, about 2 hours.
- Using a slotted spoon, transfer the pork and vegetables to a food processor; discard the thyme sprigs.
- Pulse just until the pork is shredded.
- Scrape the shredded pork and vegetables back into the casserole.
- Stir in the chopped parsley, oregano and crushed red pepper and season with salt and pepper.
- Preheat the oven to 375°F.
- In a large pot of boiling salted water, cook the orecchiette until it is still firm to the bite, about 5 minutes; drain well.
- Add the orecchiette to the casserole and toss with the pork sauce.
- Scrape the pasta into a very large baking dish and sprinkle all over with the Parmigiano-Reggiano.
- Bake the casserole in the upper third of the oven for about 35 minutes, until golden brown on top and bubbling.
- Let the baked pasta stand for 10 minutes before serving.
- *The pork sugo can be refrigerated for up to 2 days; reheat before tossing with the orecchiette.
- **Serve with a Green salad and Rich, black-fruited Amarone Classico: 2004 Masi Costasera.

- In a large pot of boiling salted water, cook pasta until al dente. Reserve 1/2 cup pasta water; drain pasta and return to pot.
- While pasta is cooking, heat oil in a large skillet over medium. Add garlic and red-pepper flakes; cook, stirring occasionally, until garlic is golden, 1 to 2 minutes. Add broccoli and 1/2 cup water; season with salt and pepper. Cover and cook until broccoli begins to soften, about 8 minutes. Uncover and continue to cook until water has evaporated and broccoli is crisp-tender, 1 to 2 minutes more.
- To pasta in pot, add broccoli mixture, Parmesan (reserving some for later), and enough pasta water to create a thin sauce that coats pasta. Serve sprinkled with remaining Parmesan.

BAKED RICOTTA & TOMATO ORECCHIETTE WITH BROCCOLI, FRESH OREGANO & CHILLI
Creamy ricotta, crunchy broccoli and pops of roasted tomatoes tossed through orecchiette pasta - this is a true Mediterranean dish that you'll absolutely love. As well as being low in saturated fat compared to most other cheeses, ricotta is also high in calcium, a nutrient that many of us don't get enough of but is vital in keeping our teeth and bones strong. Roasting it together with the tomatoes in a garlic, oregano and chilli dressing will bring incredible flavour to the finished dish - I love it.

- Preheat the oven to 180ºC/350ºF/gas 4, and bring a medium pan of salted water to the boil over a high heat.
- Peel and finely slice the garlic and place in a small bowl. Pick in the oregano leaves, then add the chilli, a pinch of sea salt and black pepper and 2 tablespoons of oil. Mix together.
- Halve the lemon, and roughly chop the tomatoes. Transfer the lemon halves and tomatoes to a medium roasting tray, placing the ricotta in the centre.
- Spoon the chilli mixture over the ricotta and tomatoes, then roast for 30 minutes, or until the ricotta is golden.
- Add the pasta to the boiling water and cook for 10 to 12 minutes, or until al dente, which means that it should be soft enough to eat, but still have a bit of bite and firmness to it.
- Trim and chop the broccoli into small florets, then add to the pasta for the last 3 minutes.
- Scoop out a mug of cooking water, then drain the pasta and broccoli.
- When the time's up, remove the tray from the oven and, using tongs, carefully squeeze a little lemon juice into the tray, then set aside the lemon halves.
- Tip in the pasta and broccoli, finely grate in half the Italian hard cheese and mix everything together, breaking up the ricotta as you go, and adding a little pasta water to loosen, if needed. Season to taste, adding a bit more black pepper or lemon juice, if needed.
- Divide between your plates and finely grate over the remaining cheese.

- Preheat the oven to 350 degrees F (175 degrees C).
- Combine cherry tomatoes, zucchini, bell pepper, onion, sun-dried tomatoes, oregano, and garlic in a large, 3-quart baking dish. Drizzle generously with 2 tablespoons olive oil and season with pepper flakes, sea salt, and black pepper. Stir to coat everything. Make a well in the center of the dish and drop in the ricotta cheese. Drizzle the ricotta with remaining olive oil and give it a generous pinch more of pepper flakes, salt, and black pepper.
- Bake in the preheated oven for 40 minutes. Switch the oven to broil at 500 degrees F (260 degrees C) and continue to cook until desired blistering and browning occurs, 2 to 4 minutes more.
- Meanwhile, bring a large pot of lightly salted water to a boil. Cook orecchiette in the boiling water, stirring occasionally until tender yet firm to the bite, 10 to 12 minutes. Drain, reserving 1/2 cup pasta water.
- Remove the baked ricotta dish from the oven and place onto a wire cooling rack.
- Add thyme leaves, then stir the ricotta to break it up. Stir in fresh basil, parsley, and lemon juice. Add the reserved pasta water to loosen things up if needed. Taste and adjust salt if desired. Add the orecchiette and stir until everything is coated. Serve.

- Preheat the oven to 200°C
- Heat the olive oil in a large pot over a medium heat. Once hot, add the onion and chopped tomatoes, and stir for 5 minutes or until the onion begins to soften. Add the garlic and cook for a further 2 minutes
- Add the crushed tomatoes and balsamic, and then simmer for 5 - 10 minutes or until the sauce slightly thickens. Season with salt and pepper to taste
- Meanwhile, cook the orecchiette according to packet instructions and drain
- Add the pasta to the sauce and stir to coat the pasta evenly. Transfer the pasta into an ovenproof dish, and then add spoonfuls of ricotta into the mixture, along with the parmesan and basil. Gently stir the ingredients through the pasta
- Sprinkle the Perfect Bakes grated cheese over the pasta, and then transfer into the oven for 20 minutes or until the cheese is bubbling and golden

Knead on a flour-dusted surface, switching between fast and slow kneading, for 10 minutes, or until smooth and firm. Cut the dough into four so you can work with it a quarter at a time. Cover the rest with a clean damp tea towel while you work, to stop it drying out. Roll your first quarter into a long sausage shape about 1cm in diameter, then cut it into 1cm nuggets. Keep your surface well dusted with flour.
- Now, method number one: starting at the edge furthest away from you, drag a blunt eating knife towards you over a nugget of dough, so it curls round and over the knife. Method number two requires you to stick your thumb into the centre of a nugget (roll it into a ball first if you want to be more precise), rotate your thumb around to create a round disc, then pick the disc up and hold it between your thumb and forefinger, pulling it gently over your forefinger to make a similarly effective little ear. Transfer to a floured tray as you go.
- Whichever method you choose, repeat with the remaining pasta, shaping and perfecting as you go until all your little ears are done.

You can use a scraper to help keep the flour and water together. (I like to start in a bowl and once I have a dough like mixture, I turn it out onto a board and start kneading)
- Work the dough until no dry flour remains. Then knead until smooth and elastic. About 5-10 minutes. Roll the dough into a ball and cover with plastic wrap or a tea towel. Let it rest for about 15-30 minutes. (Some people don’t do this with flour and water dough but I like to)
- When you are ready to make the orecchiette, cut off about 1/3-1/4 of the dough and roll it out into a sausage about 10in/25cm in length. Cut the sausage into 1-2 cm (0.4-0.8in) pieces.
- Take one piece of dough and a normal dinner knife and hold the knife at a 45-degree angle to your work surface, then press and roll the piece of dough toward you. When you reach the end of the piece of dough, stop and unfurl the dough over your thumb in the opposite direction to form a concave shape. Put the ready orecchiette on a baking sheet or tea towel, lightly sprinkled with semolina flour. Repeat with the remaining dough.
