1 package Dry Italian Dressing Packet
1 teaspoon garlic powder
1/2 cup grated parmesan cheese (You can also use fresh shredded which I used)

Steps:

  • Preheat oven to 400 degrees.
  • Mix together the Italian Dressing Mix, Parmesan Cheese, and garlic powder.
  • Wash chicken and while still damp, coat them with the cheese mixture.
  • Bake chicken breasts in shallow dish for 20-25 minutes or until no longer pink.

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.

½ cup Mayonnaise
½ cup shredded Parmesan cheese
4 boneless skinless chicken breast cutlets.
4-5 teaspoons Italian seasoned dry bread crumbs
½ teaspoon garlic powder
pinch of salt
½ teaspoon lemon pepper

Steps:

  • Preheat oven to 400 degrees F.
  • In a small bowl combine mayo, garlic powder, and parmesan cheese.
  • Moisten chicken breasts with water and lay on baking sheet (I line my baking sheet with parchment paper to make clean up easy)
  • Divide the mayonnaise mixture evenly among the chicken, just spreading it across the top of each piece, and sprinkle with salt and pepper to taste.
  • Bake for 15-20 minutes, remove from oven and sprinkle bread crumbs on each piece of chicken.
  • Return to oven and bake for additional 20 minutes or until chicken is cooked thoroughly and juices run clear.
  • Tops will be browned and chicken will be incredibly juicy.
  • You can also finish them off under the broiler for a minute or two to get them extra browned on top.
  • Serve with a veggie like these delicious fresh broccoli that I steamed.
  • Season with a dash of fresh parsley, if desired.

8 chicken thighs (bone in, skin removed)
olive oil (for browning)
2 tablespoons dry sherry
1 cup chicken stock (see note)
1 teaspoon fresh thyme
4 roasted garlic, cloves
1 cup milk
8 ounces cream cheese, softened
1/2 cup parmesan cheese, grated
salt (optional)
fresh ground black pepper
1 tablespoon fresh parsley, chopped
1 lb egg noodles, cooked according to package directions

Steps:

  • Preheat oven to 350°F.
  • Squeeze roasted garlic from the papery peels and mash well.
  • Heat olive oil in a large, heavy skillet then brown chicken thighs thoroughly over medium-high heat. Work in batches removing each batch to a 13X9 pan in the oven as they finish.
  • Reduce heat to medium. Deglaze pan with sherry.
  • Add chicken stock (see note), thyme, and the roasted garlic. Simmer 2 minutes.
  • Add milk. Add cream cheese in small blobs.
  • Bring to simmer, whisking in the cream cheese until smooth.
  • Add salt (if using), pepper, and parsley. Whisk in Parmesan until melted.
  • Pour sauce over chicken pieces and return to oven for about 1/2 hour or until chicken thighs are thoroughly cooked.
  • Remove chicken to a serving platter. Toss sauce with noodles.
  • Serve with a green vegetable (I recommend broccoli or an Italian vegetable mix), or a salad.
  • Note: If you don't have homemade chicken stock please use a quality soup base (I like Tones), rather than bullion, which is apt to be too salty when combined with the Parmesan.
  • Note: If you want a thicker sauce reduce the chicken stock to 1/2 cup.

1 chicken breast
½ zucchini, sliced
1 clove garlic, minced
2 tablespoons butter
2 tablespoons Parmesan
salt, to taste

Steps:

  • Preheat oven to 400°F (200°C).
  • Fold the parchment paper in half, then open up.
  • Slice the zucchini into rounds and lay them on one half of the parchment paper.
  • Mix the minced garlic and butter in a small bowl and spoon half of the garlic butter on top of the zucchini. Sprinkle with salt and pepper.
  • Lay the chicken on the zucchini, season with salt and pepper and spoon on the rest of the garlic butter. Top with parmesan.
