I have tried many potato casseroles and this one always gets rave reviews and recipe requests. It's the easiest to make too!

Number Of Ingredients 5

1 pound processed cheese
2 cups mayonnaise
1 (2 pound) package frozen hash brown potatoes, thawed
1 white onion, chopped
1 (3 ounce) jar real bacon bits

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In the microwave, melt cheese in a large microwave-safe bowl. Stir in mayonnaise, potatoes and onions. Spread in a 9x13 inch baking dish and top with bacon bits.
  • Bake in preheated oven for 1 hour, or until hot and bubbly.

Baked potato with cheesy mince image

A satifying supper and healthy favourite

Number Of Ingredients 12

2 tbsp olive oil
1 finely chopped onion
1 crushed garlic clove
1 carrot , finely diced
1 celery stick
450g minced lamb
2 tbsp sun-dried tomato paste
1 tbsp Worcestershire sauce
300ml beef stock
2 tsp cornflour
2 tsp water
baked potato with grated cheddar, to serve

Steps:

  • Heat the olive oil in a large pan and fry the onion, garlic, diced carrot and celery stick for 6-8 minutes. Stir in the minced lamb and cook for 3-4 minutes until browned, then add the sun-dried tomato paste and Worcestershire sauce. Stir in the beef stock and cover and simmer for 35-40 minutes until very tender. Season well. Mix the cornflour with cold water to a paste, stir in and cook for 1 minute. Serve over baked potatoes and top with grated cheddar.

These are great potatoes to serve with many different types of meals, and kids love them!

5 potatoes
4 ounces American cheese, sliced into strips
1 tablespoon butter
¾ cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake potatoes for 1 hour or until soft.
  • In a microwave safe bowl, combine the cheese and butter. Cook in microwave for 1 1/2 minutes or until melted. Add sour cream and mix together.
  • Cut potatoes in half, scoop out insides while being careful not to tear the skins. Add to cheese mixture and mix together until smooth.
  • Stuff potato mixture back into potato shells and bake at 350 degrees F (175 degrees C) for 10 minutes.
