- Beat cream cheese in a large bowl using an electric hand mixer until light and airy. Mix Cheddar cheese, horseradish, and mustard into cream cheese until fully incorporated. Refrigerate until chilled, at least 30 minutes.

HORSERADISH CHEESE SPREAD
This is an easy recipe for family gatherings or parties! Not too many kids care for the horseradish flavor and spice... but it is a big hit with grown-ups! The basic ingredients made a great cheese spread with or without horseradish, sometimes I add other ingredients to change it up a bit.

Steps:
- 1. Melt cheese in the top of a double boiler or microwave.
- 2. Using electric mixer, cream together the cream cheese, mayonnaise and horseradish. Add in the melted cheese until well blended.
- 3. Pour into a small covered container.
- 4. Refrigerate at least 2 hours.
- 5. Serve with crackers and pretzels. (Good on bagels and pita).
- 6. *** You can adjust the flavor of horseradish according to your taste by adding more or less. *** Sometimes I add minced pimento or red bell pepper.

- 1. Place all ingredients into the Vitamix container in the order listed and secure lid.
- 2. Select Variable 1.
- 3. Turn machine on and quickly increase speed to Variable 10, then to High.
- 4. Blend for 1 minute, using the tamper to press the ingredients into the blades.
- 5. Stop machine after 30 seconds of blending to scrape down sides if necessary.
