No bake peanut butter, oat, and nut cookies.

Steps:
- Cover baking sheets with wax paper and set aside.
- Combine sugar and cocoa in a large saucepan. Stir in milk, butter and peanut butter. Cook and stir over medium heat until butter melts and mixture is combined, about 5-20 minutes. Remove from heat.
- Stir in the vanilla, oats and nuts, and mix thoroughly. Take a teaspoon and scoop out a spoonful of the mixture; drop the spoonful onto the waxed paper-covered baking sheet. Repeat with the rest of the mixture. Place in the refrigerator until the cookies are cooled and set. Store the cookies in an airtight container.

NO-BAKE "COW PILE" COOKIES

- In a medium saucepan, combine the sugar, butter, cocoa, milk, and vanilla. Bring to a slow boil and simmer until the sugar is completely dissolved. Remove from the heat.
- Stir in the peanut butter and 2 1/2 cups oats. The mixture should be thick; stir in additional 1/2 cup oats if too runny. Let the mixture stand for about 10 minutes to cool.
- Line a baking sheet with wax paper or parchment paper. Drop the mixture by heaping tablespoonful onto the lined sheet. Let the cookies stand at room temperature for 1 hour to firm up. Store in an airtight container.

- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper and line a plate with wax paper.
- For the nuts: Melt the butter in a skillet and add the brown sugar and a pinch salt. Cook until the butter starts to bubble, about 3 minutes, then add the almonds and peanuts and stir to coat the nuts completely. Sprinkle over the cinnamon and stir until incorporated. Transfer to the lined plate and set aside to cool.
- For the dough: Cream together the granulated sugar and butter in a stand mixer fitted with the paddle attachment, scraping the sides once, until fluffy. Add the eggs one at a time, mixing after each addition. Mix in the vanilla.
- Sift together the flour, cocoa powder, baking soda and salt, then add in batches to the mixer, mixing until just combined after each addition. Gently stir in the chocolate chips, dried cranberries and reserved cooled nuts.
- Using a 1/3-cup scoop, add portions of the dough to the lined baking sheets, spacing them about 3 inches apart.
- Bake until the middles of the cookies are set, about 20 minutes. They will be fragile at this stage, so let them cool for 10 minutes, then move them to a cooling rack to cool completely.
COWGIRL COOKIES
These cookies are reminiscent of a white chunk macadamia nut cookie but better. Using slivered almonds instead of macadamia nuts is a more economical alternative. Follow baking directions. The cookies can be a little tricky to get right on the first pan. Unless the oven is preheated, they might not turn out. Note that these cookies don't bake well on airbake pans.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease two cookie sheets.
- Cream the margarine together with the white sugar and brown sugar in a mixing bowl until light and fluffy. Beat in the eggs, one at a time until thoroughly blended. Mix in the vanilla and almond extracts.
- Stir the flour, baking soda, salt, and rolled oats together in a mixing bowl until well blended. Stir the flour mixture into the sugar mixture. Mix in the coconut, white chocolate, and macadamia nuts until evenly blended. Drop by tablespoonfuls 1 inch apart on prepared cookie sheets.
- Bake in preheated oven until centers are set and edges are golden brown, about 15 minutes. Cool 3 minutes on baking sheets before removing to cool on a rack.

- 1. Mix first 5 ingredients in 3 qt sauce pan. Stir until well blended. On Medium heat, heat to a rolling boil. Boil for 3 minutes.
- 2. Remove from heat and add oatmeal, peanut butter and vanilla. Stir until peanut butter is melted and all ingredients are well blended.

- 1. Mix flour, cocoa, baking soda, and salt; set aside
- 2. Cream butter well. Gradually beat in sugar until mixture is light and fluffy. Beat in egg and vanilla until well blended.
- 3. Stir in chocolate and nuts, gradually stir in flour mixture until well-blended, chill dough for 30 minutes or until firm enough to handle.
- 4. Shape into 18 balls using about ¼ cup dough for each. Place 4 inches apart on lightly greased cookie sheet; flatten to 3 & ½ inch diameter. Bake on middle rack in preheated 350º oven15 minutes or until medium firm to touch. Cool on sheet until firm; Remove to racks to cool completely.
- 5. To decorate, place a lacy doily on cookie; dust with confectioners sugar stirred through a strainer; remove doily. Store cookies lightly covered with waxed paper between layers. Makes 18. it is a very stiff dough
